Little Red Riding Hood Blueberry Muffins image

This is a delicious muffin from the children's story "Little Red Riding Hood", the modern version. In this story, Grandma uses a "secret" recipe. Make a batch to eat while you watch "Hoodwinked"!

Number Of Ingredients 10

2 eggs
1/2 cup melted butter
1 cup sugar
1/2 teaspoon almond extract
1 cup wheat flour
1 cup white flour
1 teaspoon baking powder
1/2 teaspoon salt
2 cups blueberries
1/4 cup sunflower seeds (Granny's secret ingredient)

Steps:

  • Mix eggs, butter, sugar, and almond extract.
  • Combine dry ingredients and add to the egg mixture.
  • Stir until just combined.
  • Gently stir in the blueberries and the secret ingredient.
  • Fill greased muffin tins ¾ full.
  • Bake at 350 for about 20-25 minutes.
