ALMOND-PECAN DATE TRUFFLES
My daughter and I came across a date candy recipe when she was learning about ancient Egypt. We changed some of the spices and nuts to suit our taste. My dad was a beekeeper and Mom always made a coconut date ball for Christmas. Steps:
- In a microwave, warm apple juice. Stir in dates; let stand 5 minutes to soften, stirring occasionally. Remove dates from apple juice; discard liquid. Transfer dates to the bowl of a food processor fitted with the blade attachment; process until smooth. Add pecans and spices; pulse just until combined (mixture will be thick). , Shape mixture into 1-in. balls; place on a waxed paper-lined baking sheet. Refrigerate, covered, 30-60 minutes., Roll date balls in almonds.

- In a small bowl, combine the almond butter, honey, cinnamon and vanilla. Stir in cereal and coconut., With wet hands, shape mixture into 1-in. balls. Roll in sunflower kernels. Place on a waxed paper-lined baking sheet. Refrigerate for at least 2 hours or until firm. Store in the refrigerator.

ALMOND BUTTER ENERGY BITES WITH DATE & COCONUT RECIPE BY TASTY
Here's what you need: medjool date, roasted almond, almond butter, unsweetened shredded coconut, salt

Steps:
- Combine dates, almonds, almond butter, salt, and half of the coconut in a food processor and blend until a sticky dough forms. (If dough is not coming together, add one tablespoon of water and continue blending.)
- Wet your hands and form dough into 2 tablespoon-sized ball. Roll in remaining shredded coconut.
- Let dry at room temperature for 2 hours before serving. Store in an airtight container.
- Enjoy!
