EASY SEAFOOD POT PIE image

THIS IS RICH, DECADENT AND SO SIMPLE TO MAKE FOR EITHER ENTERTAINING OR A WEEKNIGHT MEAL!!! (THESE CAN BE FROZEN AND MADE THE DAY OF SERVING AS WELL)

Number Of Ingredients 9

2 can(s) cream of shrimp soup
1/2 c heavy cream
1 shallot diced fine
2 Tbsp butter
3 Tbsp sherry, or dry white wine
1 lb lobster meat
1 can(s) jumbo lump crabmeat (picked through for shells)
1/2 lb shrimp-cooked & diced
1 pkg frozen puff pastry

Steps:

  • 1. Preheat oven to 375 Allign ramekins or small tart pans on a cookie sheet.
  • 2. Saute shallots in butter until clear and fragrant. Add sherry or white wine and reduce by half. Add soups and simmer 5 minutes. Remove from heat and stir in heavy cream and seafood.
  • 3. Ladle seafood mixture into remekins and top with squares or circles of puff pastry. Bake until golden and bubbly..
