SPICY CHILI

Bold and flavorful Spicy Chili made with ground beef, diced veggies, spices, and a definite kick of heat.

3 lbs ground beef
1 green pepper (, diced)
1 red bell pepper (, diced)
1 medium onion (, diced)
3 small jalapeno peppers (, diced (seeds and veins removed for less spice))
salt and pepper
2 teaspoons garlic powder
1/3 cup chili powder
1 1/2 Tablespoons cumin
1 1/2 cups ketchup
3 Tablespoons lime juice
2 Tablespoons brown sugar
1 Tablespoon Worcestershire sauce
2 teaspoons vinegar
1 1/2 teaspoons mustard
3 cups spicy hot V8 (, or regular)
16 oz can kidney beans
1 14.5 oz can fire roasted tomatoes
salt and pepper

Steps:

  • In a large saucepan, brown the ground beef and ground sausage, using a wooden spoon to break it into small pieces as it cooks. Drain most of the grease and remove meat to a plate.
  • Add onion, bell peppers, and jalapeño peppers to the pot and sauté on medium high heat for 2-3 minutes.
  • Add spices, ketchup, lime juice, brown sugar, Worcestershire, vinegar, mustard, and V8. Stir well. Add beans, tomatoes, and salt and pepper.
  • Return the ground meat to the pot and bring the mixture to a low boil. Turn to a low simmer, cover, and cook for 1-2 hours.

Quick Spicy Chili image

Add a little beef and a little beer and a little chipotle, and you've got chili in no time.

2 tablespoons extra-virgin olive oil
1 onion, chopped
5 cloves garlic, chopped
2 teaspoons chili powder
1 teaspoon dried oregano
Kosher salt and freshly ground black pepper
1 tablespoon tomato paste
1 to 2 chipotle chiles in adobo, coarsely chopped, plus 1 tablespoon sauce
1 pound ground beef
One 12-ounce bottle beer, such as lager
One 14.5-ounce can diced tomatoes
One 15.5-ounce can black beans, rinsed and drained
Diced avocado, shredded cheese, cilantro leaves, sliced scallions and sour cream, for serving, optional

Steps:

  • Heat the olive oil in a large heavy skillet over medium-high heat. Add the onions, garlic, chili powder, oregano, 1 teaspoon salt and a few grinds of pepper. Cook, stirring occasionally, until the onion is soft, 3 to 5 minutes. Stir in the tomato paste, the chipotle chiles and sauce, and cook for 1 minute. Add the beef and cook, breaking it up with a wooden spoon, until no longer pink, about 3 minutes.
  • Add the beer and simmer until reduced by about half, about 8 minutes. Add the tomatoes and beans and bring to a boil. Cook, uncovered, stirring occasionally, until thick, about 10 minutes. Adjust the seasoning with salt and pepper and serve with desired assorted toppings.

1-1/2 pounds ground beef
1-1/2 pounds bulk Italian sausage
3 cans (14-1/2 ounces each) stewed tomatoes
2 cans (16 ounces each) kidney beans, rinsed and drained
1 cup chopped onion
1 large green pepper, chopped
1 can (6 ounces) tomato paste
2 jalapeno peppers, finely chopped
2 tablespoons chili powder
2 tablespoons white vinegar
1 tablespoon spicy brown mustard
1 tablespoon dried oregano
2 garlic cloves, minced
1-1/2 teaspoons ground cumin
1-1/2 teaspoons hot pepper sauce
1 teaspoon salt
1 teaspoon paprika
Sour cream, optional

Steps:

  • In a Dutch oven, cook beef and sausage over medium heat until no longer pink, 5-7 minutes, breaking into crumbles; drain. Add the remaining ingredients; bring to a boil. Reduce heat; simmer, uncovered, for 30 minutes, stirring frequently. If desired, serve with additional jalapeno and sour cream.

This is my own creation. I went through the cupboards one night and see what I had available for chili. This is what I came up with. I think it is very good.

Number Of Ingredients 14

2 -3 lbs ground beef or 2 -3 lbs stewing beef
2 tablespoons olive oil
1 large onion
2 tablespoons garlic, minced
2 teaspoons salt
1 teaspoon black pepper
serrano pepper
2 (15 ounce) cans black beans or 2 (15 ounce) cans dark red kidney beans
1 (12 ounce) can tomato paste
1 (15 ounce) can tomatoes, diced
2 cups water
1/4-1/2 cup cumin
1/4-1/2 cup chili powder
1/2 cup cilantro, cousely chopped

Steps:

  • Remember my recipes are just guidelines, not rules. If you do not like something in it, remove it or substitute something else.
  • If you are going to use peppers, it is best to toast them in the broiler or over an open flame to burn the skins. Optional: Split them open and remove the veins and seeds (lower heat, fruitier flavor).
  • Coarsely chop the onion.
  • Add the onion, garlic, and olive oil to a hot skillet; sauté until the onions are translucent.
  • Add ground beef or stewing beef to the onions and garlic.
  • When the beef is browned, go ahead and drain grease if there is any.
  • Now add the 2 cups of water, tomato paste and diced tomatoes to the beef mixture.
  • Start adding your spices as the mixture comes to a low boil.
  • Lower your burner to simmer and add your beans.
  • Let simmer for 1 to 2 hours until desired thickness.
  • Optional: You can also transfer your chili to a slow cooker at this point and cook for an even longer period of time.
  • More Fire: Add some of your favorite hot sauce. I use something called Vicious Viper.
  • Extra Veggies: I like to add a can of whole kernel corn, but any other veggie will work.
