SPICY SOUTHWEST CHICKEN SANDWICH

6 sun-dried tomatoes packed in oil, chopped
1 chipotle chile, canned
2 tablespoons adobo sauce
2 tablespoons water
1/4 cup olive oil
1 tablespoon balsamic vinegar
2 teaspoons Dijon mustard
1 teaspoon light brown sugar
salt
black pepper, freshly ground
1 avocado, ripe and pitted
1/4 cup fresh cilantro, chopped
1 lime, juice of
2 1/2 cups chicken, thinly sliced
4 slices bacon, thick, cooked until crisp (optional)
1 large tomatoes, ripe, cored and thinly sliced
1/2 red onion, thinly sliced
8 slices focaccia bread or 8 slices sourdough bread, lightly toasted

Steps:

  • 1. In a blender, mini-chop, or food processor, pulse the sun-dried tomatoes, chipotle, adobo sauce, water, oil, vinegar, mustard, and brown sugar together until smooth. Season with salt and pepper to taste and pulse again. Transfer to a small bowl.
  • 2. In another small bowl, mash the avocado with half the cilantro and all of the lime juice. Season generously with salt and pepper to taste.
  • 3. Spread 4 of the slices of bread with the avocado mixture. Spread the remaining 4 pieces of bread with the sun-dried tomato-and-chipotle mixture, then layer on the chicken, bacon, tomato, onion, the remaining cilantro, and the bread. Cut in half and serve immediately.

BBQ sauce and bacon are the secrets to the wonderful flavor of the chicken in this sandwich. Add avocado and cheese, and how can you go wrong? Makes a hearty lunch by itself or serve with salad or french fries for a delicious dinner.

2 skinless, boneless chicken breast halves
2 tablespoons barbeque sauce
4 slices bacon
2 hoagie rolls, split lengthwise
2 tablespoons Ranch dressing
4 slices Swiss cheese
1 small avocado - peeled, pitted and diced

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Coat a baking dish with cooking spray. Brush both sides of each chicken breast with barbeque sauce and place in the baking dish. Top each breast with 2 slices bacon.
  • Bake chicken 25 minutes in the preheated oven, until juices run clear. Drain bacon strips on paper towels, and slice breasts in half lengthwise.
  • Heat the oven broiler. Spread both halves of each hoagie roll with Ranch dressing. Place 2 breast halves on one half of each roll. Place 2 strips of bacon on each remaining roll half. Top each half with 1 slice Swiss cheese.
  • Arrange sandwich halves on the baking sheet, and broil 2 to 5 minutes, until the cheese is melted and bubbly. Layer chicken halves of sandwiches with avocado slices, and top with bacon halves to serve.

I saw Sara Moulton make this sandwich on Food Network. My friend Dan loves it and is always thrilled when I make it for him. It is a great sandwich to serve while watching football on TV. It's pretty spicy, so adjust accordingly.

1 loaf ciabatta
1 cup mayonnaise
2 chipotle chiles in adobo
2 large grilled chicken breasts, sliced
1 Hass avocado, sliced
1 -2 tomatoes, sliced
1 -2 cup monterey jack pepper cheese, grated

Steps:

  • Preheat oven to 350°F.
  • Split loaf in half lengthwise.
  • Blend mayo and chipotle in a food processor until smooth. Spread on both halves of ciabatta.
  • Layer sliced chicken, avocado, tomatoes and jack cheese on bottom half of ciabatta.
  • Cover with top half of loaf and wrap in foil.
  • Bake for 10-15 minutes or until cheese is melted.

I love to watch the Food Network and I saw this sandwich on one of their programs. I did not catch the name of the restaurant, but the story behind this sandwich was interesting. It said that this sandwich was created for "fussy eater" A father used to take his daughter to lunch on Saturdays at this popular restaurant in Havana, Cuba (before Castro) and the daughter was a fussy eater so there were very few things she liked. She loved strawberry jam, so the father asked the waiter to come up with a sandwich for her and so the Elena Ruth sandwich was born. I have not tried it, but when I saw the recipe, I knew it was something that I would like, however, I am not a fussy eater! The amounts of each ingredient are really to your own taste. I have estimated for the sake of the recipe format. I believe the cuban bread would be Midnight sandwich bread or any sweet bread that you like. If you try this, I hope you enjoy it! Addendum: I am adding an explanation of the difference between jam and jelly for our International members. Jam vs. jelly and then there are preserves too! All are made with fruit mixed with sugar and pectin The difference comes from the form the fruit takes. In jelly, the fruit is in the form of fruit juice, so the product is set and is smooth and sometimes slightly opaque. In jam, the fruit is in the form of fruit pulp or crushed fruit. The product is not as stiff as jelly. Preserves are made of chunks of fruit set in a syrup (made of fruit juices) or in a jam. As for the recipe, I believe it is stated to use the jam so the recipe would be true to the original way it was prepared.

1 -2 tablespoon cream cheese, softened

4 boneless chicken breasts
4 whole wheat hamburger buns
1 lb bean sprouts
1 tablespoon butter
1 garlic clove
ranch salad dressing
1 cup guacamole
1 tomatoes
4 slices cheese

Steps:

  • Cut the jalapeno in half.
  • Rub the cut part over the chicken breast.
  • Grill the chicken until done.
  • Melt your favorite cheese over the chicken (I prefer American).
  • In a sauté pan, melt butter.
  • Add garlic minced and then add clean bean sprouts. Sauté until soft.
  • To build a sandwich: I like my wheat buns toasted.
  • Spread guacamole on the top part of the bun and then spread ranch dressing on the bottom.
  • Add your grilled chicken breast and top with bean sprouts and sliced tomatoes.
  • To make this a little lower in calories, use fat free cooking spray instead of butter and fat free ranch dressing.

4 eggs

  • cook bacon or ham in butter in pan to desired preference.

1 cup brown sugar

1 cup Dark Karo syrup
1/4 cup prepared mustard
