DAHI BARFI (SWEET YOGURT BARS)
This is an easy and fast Nepalese desert made with yogurt raisins and cashews. It uses no eggs and very little flour so it looks like it could be made gluten-free. Cooking time doesn't include cooling time. Found online and slightly modified for ZWT6.

- Preheat oven to 200 degrees.
- Mix all ingredients in a large bowl and pour the mixture in a 8x8 pan.
- Bake 20 minutes or until set in the center. Allow to cool and cut in squares.

BLUEBERRY & YOGURT BARS
A quick, healthy, easy snack or dessert. Either fresh or frozen blueberries will work in this recipe.

Steps:
- Preheat oven to 350°F
- Crumble graham crackers and Rice Krispies in a food chopper or food processor and whisk around until you have fine crumbs.
- Mix the graham mix and the remaining bottom layer ingredients together to form soft dough. I do this with a wooden spoon or bare hands. There is no need to get out a mixer for this.
- Firmly press the dough into a 9X13 pan. Completely cover the bottom of the pan in an even layer. Do not use a larger pan. You can use a smaller baking pan for a thicker bar.
- Mix all the top layer ingredients together, except the blueberries, mixing well. A wire whisk works well. Again, don't bother to get a mixer out.
- Gently mix in the blueberries.
- Pour the top layer mixture in the pan over the bottom layer. Make sure the blueberries are spread out evenly.
- Bake for 50-60 minutes.
- Chill completely before cutting and serving. Although it is difficult to wait so long, chilling overnight will give the custard plenty of time to set.

Steps:
- Cream butter and brown sugar until fluffy.
- Add eggs, vanilla and peanut butter if using, to butter and brown sugar.
- Add flour.
- Pour into an un-greased 1/2 sheet baking pan (jelly roll/cookie sheet pan).
- Bake at 350 degrees for 20 minutes. (may take less time be sure to check after 15 minutes.).
- Allow bars to cool. Frost with a thin layer of vanilla frosting.
- Allow first layer of frosting to set up. Frost with layer of chocolate.
- Top with crushed pecans or walnuts.
- Bars freeze really well and can be pulled out for a quick dessert. I usually freeze with wax paper between layers.

- Grease a 6 inch square baking pan.In a large microwave safe bowl mix dry milk, cream and sugar.
- Mix well and heat in microwave on high 4minutes, stopping oven to stir the mixture every 1 min.
- The mixture will reach a fudge-like consistency.

YOGURT CEREAL BARS
I got this from wholesometoddlerfood.com and they got it from Stoneyfield Farms Yogurt. There is lots of room for variation in this recipe. Try adding nuts or flax seed meal or chaniging the type of cereal... I really enjoy making and eating these with my daughter!

- Preheat oven to 350.
- Combine cereal, 3/4 cup flour, sugar and cinnamon in a small bowl.
- Cut in butter until coarse crumbs form.
- Press 1/2 the mixture firmly into the bottom of a greased 8inch square pan.
- Mix yogurt, egg and 2 tablespoons flour in another small bowl. Spread over cereal mixture in pan and then sprinkle the remaining cereal mixture on top.
- Bake for 30 minutes or until golden brown; cut into bars when cooled.
