It is claimed that in 1973, Glamour Magazine posted this recipe based on a scene in the movie "The Godfather": "Heh, come over here, kid, learn something. You never know, you might have to cook for 20 guys someday. You see, you start out with a little bit of oil. Then you fry some garlic. Then you throw in some tomatoes, tomato paste, you fry it; ya make sure it doesn't stick. You get it to a boil; you shove in all your sausage and your meatballs; heh...? And a little bit o' wine. An' a little bit o' sugar, and that's my trick." --- Clemenza in 'The Godfather'

2 tablespoons olive oil
3 garlic cloves, chopped
2 (28 ounce) cans tomatoes (whole, crushed or chopped)
2 (6 ounce) cans tomato paste
3 Italian sausages, grilled and sliced
1 lb meatballs, cooked (use your favorite recipe)
red wine, just a splash
1/4 cup sugar (or to taste)

Steps:

  • Heat the oil over medium heat in a large pot.
  • Add garlic and cook for a few minutes. Do not let the garlic burn.
  • Add tomatoes and tomato paste. Cook for about 5 minutes, stirring continuously so that a relatively smooth consistence is reached.
  • Add sausages and meatballs and stir until the meat is coated.
  • Add a splash of red wine, then the sugar according to taste.
  • Reduce heat to medium-low and let simmer for a minimum of 20 minutes, stirring occasionally to prevent scorching.
  • Serve by ladling over cooked pasta.
  • Tip: It's not in the movie, but a teaspoon each of basil and oregano is suggested.
  • Tip 2: If you're using canned whole tomatoes, draining them and then crushing them by hand will result in a chunky sauce. Canned crushed tomatoes will create a slightly thinner sauce, while canned chopped tomatoes will result in a thicker sauce.

2 pounds ground beef
3/4 pound bulk Italian sausage
4 medium onions, finely chopped
8 garlic cloves, minced
4 cans (14-1/2 ounces each) diced tomatoes, undrained
4 cans (6 ounces each) tomato paste
1/2 cup water
1/4 cup sugar
1/4 cup Worcestershire sauce
1 tablespoon canola oil
1/4 cup minced fresh parsley
2 tablespoons minced fresh basil or 2 teaspoons dried basil
1 tablespoon minced fresh oregano or 1 teaspoon dried oregano
4 bay leaves
1 teaspoon rubbed sage
1/2 teaspoon salt
1/2 teaspoon dried marjoram
1/2 teaspoon pepper
Hot cooked spaghetti

Steps:

  • In a Dutch oven, cook the beef, sausage, onions and garlic over medium heat until meat is no longer pink; drain., Transfer to a 5-qt. slow cooker. Stir in the tomatoes, tomato paste, water, sugar, Worcestershire sauce, oil and seasonings., Cook, covered, on low 8-10 hours. Discard bay leaves. Serve with spaghetti. Freeze option: Cool before placing in a freezer container. Cover and freeze for up to 3 months. Thaw in the refrigerator overnight. Place in a large saucepan; heat through, stirring occasionally. Serve with spaghetti.

I have heard the resort name, 'The Greenbriar', all my life..it is a very elegant, romantic, and Victorian style resort located in White Sulphur Springs, WVA. The Greenbriar has the most delicious homemade Spaghetti...

Number Of Ingredients 11

1 c olive oil or canola oil or any oil used on salads (salad oils)
1 c finely chopped celery
1 c finely chopped green pepper
2 c finely chopped onion
2 Tbsp minced garlic
13 c crushed tomatoes
1 c tomato puree
1 tsp sweet basil, crushed
1 bay leaf
1 Tbsp sugar
salt and pepper to taste

Steps:

  • 1. Saute onions, celery and green pepper in salad oil, stirring frequently. Add garlic, cook 2 minutes longer.
  • 2. Add tomatoes, puree and seasonings.
  • 3. Simmer uncovered about 2 hours.
  • 4. After it has simmered, fill clean sterilized jars to within 1 inch of top of jar. Put on cap, screw the band 'fingertip' tight. Too tight and air bubbles may not be able to escape while boiling or canning.
  • 5. Process for 45 minutes for quart jars, and 35 minutes for pint jars, in a water bath. Process 35 minutes for pints. Process 45 minutes for quarts. Remove from canner. Let cool in draft-free area (cover with towels to be sure) Check lids to be sure they are sealed. (Press center of lid with your finger. If it moves and makes a "click", the jar is not sealed.)
  • 6. Note: Ground beef, mushrooms, etc., can be added at time of use.
  • 7. Note: if you do not wish to can this sauce, it can also be frozen for up to six months inside freezer.

1 1/2 lbs meatballs (precooked) or 1 1/2 lbs ground beef (cooked & drained)
1/2 cup onion, diced
2 garlic cloves, minced
1 tablespoon italian seasoning
1 teaspoon salt
1/2 teaspoon ground black pepper
1/4 cup grated parmesan cheese
1 tablespoon sugar
1 tablespoon extra virgin olive oil (optional)

Steps:

  • Combine all ingredients in crock pot.
  • Cook on high for 3-5 hours or low for 6-8 hours.
  • Serve over spaghetti or pasta of choice.
