A very simple but delightfully wonderful and versatile tuna salad. Excellent for hors d'oeuvres, it also makes a great sandwich or snack.

2 (5 ounce) cans water packed tuna, drained and flaked
2 teaspoons mayonnaise
1 teaspoon Dijon mustard
1 tablespoon sweet pickle relish
2 teaspoons lemon juice
1 ½ teaspoons ground cinnamon
1 teaspoon curry powder
1 teaspoon ground black pepper
salt to taste

Steps:

  • In a bowl, mix the tuna, mayonnaise, mustard, relish, lemon juice, cinnamon, curry powder, pepper, and salt. Cover, and refrigerate until ready to serve.

3 (6 ounce) cans albacore tuna in water, drained and flaked
1 (16 ounce) can unpeeled apricot halves in juice, quartered
1 pint strawberry, washed, hulled, and thinly sliced
2 celery ribs, washed, trimmed, and finely diced
1/4 cup fat-free mayonnaise
1/2 cup plain nonfat yogurt
1/2 teaspoon curry powder
2 tablespoons lemon juice
1 head red-leaf lettuce, outer leaves removed, washed and dried

Steps:

  • In a large bowl, combine tuna with apricots, sliced strawberries, and diced celery; mix thoroughly.
  • In a small bowl, blend mayonnaise with the yogurt, curry powder, and lemon juice.
  • Line 4 dinner plates with lettuce leaves, spoon tuna mixture onto plates, and top with dressing.

I adapted this recipe from Better Homes and Gardens, and it's the best I've ever had. Just enough crunch, just enough mayo. It's perfect! I like to serve this in pita pockets with a little lettuce.

2 (7 1/16 ounce) bags chunk white tuna in water, drained of liquid (vacuum-sealed)
1/2 cup celery, chopped (about one stalk)
1 (8 ounce) can water chestnuts, chopped
1/4 cup green onion (about two green onions)
1/2 cup mayonnaise (heaping)
1 tablespoon lemon juice
1/2 teaspoon dried dill (or two tsp snipped fresh dill or 1/2 tsp basil, if using chicken instead of tuna)
1/4 teaspoon salt

Steps:

  • In a medium bowl, combine tuna, celery, green onions, and water chestnuts.
  • In a separate bowl, stir together mayonnaise, lemon juice, dill, and salt. Fold mixture into tuna mixture.
  • Chill for a couple hours, covered.

Two 6 ounce cans white meat tuna packed in water, drained
3 tablespoons minced red onion, soaked in cold water for 5 minutes, drained
1 tablespoon finely chopped fresh coriander (cilantro)
1 tablespoon golden raisins, plumped in 2 tablespoons warm water for 10 minutes, drained
2 teaspoons vegetable oil, like soy, peanut, or corn
2 teaspoons Madras-style curry powder
6 tablespoons mayonnaise
Kosher salt and freshly ground black pepper
1/2 teaspoon freshly squeezed lime juice plus more to taste
Serving suggestions: 2 cups mixed lettuces or 3 to 4 pita breads

Steps:

  • In a mixing bowl break the tuna up with a fork. Toss with the onion, fresh coriander, and raisins.
  • In a small saute pan, heat the oil over medium heat, add the curry powder, and stir until fragrant, about 30 seconds. Remove pan from the heat and set oil aside to cool.
  • Add the curry oil to the mayonnaise, season with salt, and pepper to taste and add the lime juice. Gently mix the tuna with the seasoned mayonnaise. Serve on a bed of lettuce or in a sandwich.
  • Yield: 3 to 4 servings

1 small onion, finely chopped (1/4 cup)
1 can (8 ounces) sliced water chestnuts, drained and cut into slivers
1 can (8 ounces) pineapple tidbits, drained
4 slices whole wheat bread, toasted and cut diagonally in half
2 medium unpeeled eating apples, sliced
2 tablespoons chopped pecans, toasted

Steps:

  • Mix tuna, mayonnaise, sugar and curry powder in medium bowl. Stir in bell pepper, celery, onion, water chestnuts and pineapple.
  • Arrange 2 toast halves on each plate. Arrange apple slices around edge of plate. Place tuna mixture on center of each plate. Sprinkle pecans over tuna mixture.
