MASHED RED-CURRY SWEET POTATOES
Coconut milk and curry paste update sweet potatoes.

Steps:
- Preheat oven to 375 degrees. Prick sweet potatoes all over with a fork. Bake on a baking sheet until soft, about 1 hour. Let cool slightly. Peel potatoes, transfer to a bowl, and mash with a potato masher.
- Bring coconut milk and curry paste to a simmer in a saucepan. Cook for 5 minutes. Add potatoes along with 3 tablespoons maple syrup, 2 tablespoons butter, and the salt, and stir.
- Preheat broiler. Butter six 1-cup gratin dishes or one 6-cup baking dish. Spoon mixture into dishes, and smooth tops. Drizzle with remaining maple syrup. Dot with remaining butter, cut into small pieces. Broil until tops are sizzling and browned, 3 to 4 minutes.

If you like curry, you've got to try this. It's perfect with a simple roast chicken, beef or pork. It's hot and spicy, tart and tangy, creamy and comforting, as only mashed potatoes can be!

Steps:
- Peel the potatoes and cut them into 1-inch chunks, dropping them into a large pot of cold water as they are cut.
- Add a big pinch of salt, cover, and bring to a boil over high heat.
- Boil until tender when pierced with a fork, 15 to 20 minutes.
- Drain and return to the hot pan.
- Meanwhile, melt 2 tablespoons of the butter in a large heavy skillet over moderate heat.
- Add the onion and saute until softened, about 5 minutes.
- Add the ginger and garlic and cook for 3 minutes.
- Add 2 tablespoons water and stir constantly over high heat until the onion browns, about 3 minutes.
- Stir in the curry powder and cook for 3 minutes.
- Stir in 2 tablespoons water and remove from the heat.
- Add the spice mixture to the potatoes along with the remaining 1 tablespoon butter, the sour cream, yogurt, salt and pepper.
- Beat with a small electric mixer or mash with a potato masher until fluffy.
- Serve hot.

Steps:
- Place potatoes into a pot and cover with salted water. Bring to a boil at medium-high heat and cook until tender, about 10 minutes.
- Remove potatoes from heat and drain. Place potatoes back in the hot pot. Add milk, butter, curry powder, salt, turmeric, garlic powder, onion powder, coriander, and cayenne pepper.
- Using a potato masher, mash potatoes until smooth and seasoning is evenly distributed.

- Preheat oven to 375 degrees F.
- Prick sweet potatoes all over with a fork.
- Roast on a baking sheet for about an hour, until soft.
- Cool slightly, peel and scoop out flesh.
- ALTERNATIVE METHOD: Peel and dice sweet potatoes and roast till soft. This produces more roasted flavor/texture.
- Mash with a potato masher.
- In a saucepan, combine coconut milk and curry paste; bring to a bare simmer. Do not allow to boil as the coconut milk will curdle.
- Cook for five minutes, stirring the curry into the coconut milk.
- Add sweet potatoes, 2 tbs. butter and salt; mix to combine.
- Add maple syrup to taste.
- Butter small gratin dishes or a large casserole.
- Spoon mixture into dishes and dot with remaining butter.
- Broil for 3-4 minutes.

MASHED RED CURRY SWEET POTATOES

- Place potatoes in a large pot of salted water. Bring to a boil, reduce heat, and cook until potatoes are tender, 12 to 15 minutes. Drain and return to pan. Dry over low heat 2 minutes. Meanwhile, combine 3 tablespoons coconut milk and curry paste in a medium saucepan; cook over medium-high heat 2 minutes. Add remaining 1/2 cup coconut milk, 2 tablespoons maple syrup and apple cider. Bring to a boil, and simmer, stirring occasionally, 3 to 4 minutes more. While sauce is simmering, mash potatoes with a fork or potato masher. Stir in hot coconut milk mixture, butter, salt and cinnamon. Add remaining 1 tablespoon maple syrup if desired. (If you want a bit less heat, reduce the amount of red curry paste to 2 teaspoons)

- Boil the potatoes until they are really soft.
- Lower heat and drain.
- Mash the potatoes.
- Put the potatoes back in the pot along with 2 cups of water on low heat.
- Add the curry roux and mix really, really well.
GREEN CURRY MASHED POTATOES RECIPE

- Make mashed potatoes with coconut milk and green curry instead of onions and milk. Or you can use both. And Garlic! Lots! Make a coconut milk and green curry gravy (heat up coconut milk and curry to taste which means a lot of curry and also garlic and black pepper) Pour gravy on top of potatoes. Serve with lightly fried chicken with same gravy poured on top.
