2 (1 pound) sweet potatoes, peeled and cut into 1/2-inch thick wedges
1 tablespoon extra-virgin olive oil
½ teaspoon sea salt
½ teaspoon paprika
1 tablespoon extra-virgin olive oil
2 green onions, chopped
1 teaspoon mild curry powder
1 cup ketchup

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Toss sweet potato wedges with 1 tablespoon olive oil in a large bowl; season with sea salt and paprika and toss again. Spread sweet potatoes in a single layer onto a baking sheet.
  • Bake sweet potatoes in the preheated oven until soft, about 20 minutes.
  • Heat 1 tablespoon olive oil in a small skillet over medium-high heat. Cook and stir green onions with curry powder in the hot oil until softened and fragrant, about 1 minute. Stir ketchup into the mixture and transfer to a bowl. Serve sweet potatoes with curry ketchup for dipping.

1 chicken breast
1 teaspoon curry powder
1 tablespoon oil
¼ teaspoon pepper
¼ teaspoon salt
2 tablespoons oil
1 cup onion, diced
1 tablespoon grated ginger
2 cloves garlic, minced
1 cup tomato, diced
1 tablespoon curry powder
¼ teaspoon cayenne pepper
1 cup chicken stock
½ cup greek yogurt
3 cups french fries
fresh cilantro, for garnish
½ cup chicken stock
1 tablespoon cornstarch

Steps:

  • Slice chicken breast into strips.
  • Add the curry powder, oil, pepper, and salt to the prepared chicken. Rub in the dry ingredients and make sure the chicken is evenly coated.
  • Heat oil in a skillet over medium heat.
  • Add the chicken and cook until partially done. Remove from skillet and place in a clean bowl.
  • Add onions, ginger, and garlic to skillet. Cook until the onions are translucent.
  • Add the diced tomato, curry powder, cayenne pepper, and chicken stock.
  • Return the partially cooked chicken. Stir and cook until chicken is done.
  • Stir in the chicken stock cornstarch slurry. Cook until the curry has thickened.
  • Turn off the heat and stir in the Greek yogurt.
  • Preheat oven to 450°F (230°C), place french fries on baking sheet, bake for 18 minutes (either from scratch or frozen).
  • Pour chicken curry over french fries, garnish with cilantro, as desired.

1 teaspoon kosher (coarse) salt
1/2 teaspoon cornstarch
1/2 teaspoon pepper

Curry simmer sauce (not curry paste)

Steps:

  • Heat oven to 400°F. Line cookie sheet with nonstick foil or parchment paper.
  • Cut potatoes into 1/2-inch-thick strips; place in large resealable food-storage plastic bag. Sprinkle potatoes with salt, cornstarch and pepper. Seal bag; shake vigorously until potatoes are well coated. Place on cookie sheet, arranging in single layer. Spray potatoes with cooking spray.

Tasty fried curried potato cubes make a wonderful accompaniment to many Indian curry dishes. I don't know that this recipe is authentic in any way, I came up with it making use of what I had around. It turned out great and I got sent to the kitchen to make more. Serve with tamarind chutney for dipping.

1 cup vegetable oil for frying, or as needed
2 cloves garlic, pressed
1 teaspoon cumin seeds
½ teaspoon salt
¼ teaspoon ground turmeric
¼ teaspoon ground black pepper
5 russet potatoes, peeled and cubed
2 tablespoons chopped fresh cilantro
1 teaspoon mild curry paste (such as Patak's®)

Steps:

  • Pour enough oil into a frying pan to cover the bottom 1/3-inch deep; add garlic, cumin, salt, turmeric, and black pepper. Heat oil mixture over medium heat.

My mom love love love these. She has food allergies and has always been afraid to try Indian food until I made this recipe for her. It's Indian inspired without the coriander (she's allergic). It was a huge win with her.

6 large potatoes (i use yukon or white)
2 c cooking oil
1 sautee pan or deep fryer
2 Tbsp yellow curry powder
2 Tbsp tumeric
2 Tbsp sea salt
1 Tbsp black pepper
1 1/2 Tbsp garlic powder
1 Tbsp paprika
2 tsp chili powder

Steps:

  • 1. Peel your potatoes and place them in a bowl of cool water. Add your oil to the pan and heat with a med-high temperature (350 degrees for a fryer).
  • 2. Cut your potatoes to steak size fries. rinse and drain.
  • 3. In a bowl add the fries and all of the dry ingredients. Toss until everything is evenly covered.
  • 4. When the oil is hot add the fries and fry until tender (you may have more than one batch). Drain and sprinkle with a little sea salt (optional). Serve.

3 strips bacon, diced (about 3 tablespoons)
3 tablespoons mayonnaise
2 teaspoons yellow Indian curry powder
Juice of 1/2 lime
Oil, for frying
1 cup French fries
Large pinch of blackening spice
Kosher salt and freshly ground black pepper
1/2 ounce feta, crumbled

Steps:

  • Preheat the oven to 350 degrees F. Spread the bacon on a rimmed baking sheet and bake until crispy, 10 to 15 minutes.
  • Mix the mayonnaise, curry powder and lime juice in a bowl and transfer to a squeeze bottle.

2 large Sweet Potatoes (Garnet Yams), cleaned and cut into 1/2 inch strips. I leave the skin on.
2 tablespoons Arrowroot Powder or Cornstarch
2 tablespoons melted Ghee or Butter (use unrefined Coconut Oil for vegan option)
1/2 teaspoon Curry Powder
1/8 teaspoon Cardamom
1/8 teaspoon Garam Masala
dash of ground Cinnamon
Garlic Salt
Cracked Black Pepper
Curry Aioli
1/4 cup low fat Mayonnaise or Homemade Mayo (Veganaise for vegan option)
a dash of Garlic Salt, Cracked Black Pepper, Cardamom, Cinnamon and Garam Masala - adjust to taste
5-10 Stevia Drops - adjust to taste

Steps:

  • Sweet Potato Fries: Pre heat oven to 425˚F with the racks in the middle. Prepare 2 half sheet pans (cookie sheets) with parchment or Silpat liners. Combine ghee (butter) with curry powder, cardamom, garam masala and cinnamon. Put sliced sweet potatoes on cookie sheet and toss with arrowroot powder. Drizzle butter mixture over the top of the potatoes and combine well with your hands. Sprinkle with some garlic salt and pepper. Toss again. Lay sweet potatoes out in a single layer with a small amount of space in between the potatoes. They need to have some breathing room so they do not steam. Bake for 15 minutes. Flip each fry with a pari of tongs and cook for another 10-15 minutes. Curry Aioli Dip: Combine all ingredients in a food processor or blender and combine well. Adjust spices and seasonings to taste.
