1 3/4 cups uncooked instant brown rice
2 cups water
1/4 teaspoon salt
2 teaspoons vegetable oil
1 lb turkey breast strips for stir-fry
1 medium red bell pepper, cut into thin strips
2 cups small broccoli flowerets
1 1/4 cups Progresso™ reduced-sodium chicken broth (from 32-oz carton)
4 teaspoons cornstarch
4 teaspoons curry powder
1/2 teaspoon ground ginger
1/4 teaspoon salt

Steps:

  • Cook brown rice as directed on package, using water and 1/4 teaspoon salt.
  • Meanwhile, in 12-inch nonstick skillet, heat oil over medium-high heat. Add turkey; cook 5 to 8 minutes, stirring frequently, until browned. Stir in bell pepper and broccoli. Cook 2 minutes.
  • In small bowl, mix remaining ingredients. Stir into turkey and vegetables. Heat to boiling; reduce heat. Cover and cook 2 to 3 minutes or until vegetables are crisp-tender and turkey is no longer pink in center. Serve over brown rice.

I defrosted turkey cutlets. Next, I found a potential recipe. Then I altered that recipe. This is what I did. This is easily doubled. It received RAVE reviews. If you don't have buttermilk, use whole milk with a splash of lemon juice. It will thicken in a few minutes. Also, feel free to switch up the seasoning. I did. ;)

1 lb turkey cutlets, cut into strips
cooking spray
3/4 cup buttermilk
2 teaspoons whole grain mustard
2/3 cup cornmeal
1/2 cup all-purpose flour
1/2 teaspoon salt
1 teaspoon ground thyme
1 tablespoon dried tarragon
2 tablespoons whole grain mustard
2 tablespoons mayonnaise
1 tablespoon real maple syrup
1 pinch cayenne pepper

Steps:

  • Preheat oven to 450°F.
  • Coat baking sheet with cooking spray.
  • Combine milk & mustard. Add turkey to soak for a few minutes.
  • Combine dry ingredients & mix well.
  • Place prepared baking sheet in oven for 5 minutes.
  • Dredge milk soaked turkey pieces in cornmeal mixture. Spray all sides with cooking spray & place on preheated baking sheet. Bake 10 minutes, turn strips over & bake another 5-8 minutes until cooked.
  • Combine all sauce ingredients well.
  • Serve turkey strips with sauce. Enjoy!

1/4 cup fresh ginger, diced
6 -10 cloves garlic, minced

Steps:

  • slice turkey breast into strips.
  • (large enough pieces so it won't fall through grill rack) put in a container with a tight seal.
  • mix soy sauce, oil, diced ginger and minced garlic.
  • Pour over turkey, seal container and put in refrigerator for 2-24 hours.
  • Turn container several times while marinating Cook on barbque grill or broiler oven until done.

1 cup sliced celery
1/2 cup sliced carrots
1 cup fat-free milk
2 tablespoons cornstarch
3/4 cup reduced-sodium chicken broth
2 cups diced cooked turkey or chicken
2 tablespoons dried minced onion
1/2 teaspoon garlic powder
1 to 4 teaspoons curry powder
Hot cooked rice, optional

Steps:

  • Lightly coat a skillet with cooking spray; saute celery and carrots until tender. In a bowl, mix 1/4 cup milk and cornstarch until smooth. Add broth and remaining milk; mix until smooth. , Pour over vegetables. Bring to a boil; cook and stir for 2 minutes or until thickened. 1-1/2 pounds boneless turkey breast halves, cut into strips
1 tablespoon canola oil
1 small onion, chopped
1 carrot, julienned
1/2 medium green pepper, sliced
2 cups fresh mushrooms, sliced
1 cup chicken broth
3 tablespoons cornstarch
3 tablespoons reduced-sodium soy sauce
1/2 teaspoon ground ginger
2 cups pea pods, trimmed
Cooked rice, optional

2 tablespoons coconut oil
1 yellow onion, diced
One 2-inch piece ginger, peeled and chopped
4 cloves garlic, chopped
1/4 cup chopped fresh cilantro stems (from 1 bunch), plus chopped fresh cilantro, for garnish
Kosher salt
1 tablespoon tomato paste
2 teaspoons curry powder
1 teaspoon ground cumin
1/2 teaspoon ground coriander
1/4 teaspoon cayenne pepper
One 28-ounce can whole tomatoes
1 1/2 cups low-sodium turkey or chicken stock
1/2 pound russet potatoes, peeled and diced into 1/3-inch cubes
3 cups cubed turkey breast
1 cup frozen peas
1/4 cup heavy cream
2 tablespoons lime juice (from 2 limes)
Rice, for serving, optional

Steps:

  • Heat a large Dutch oven or heavy-bottomed pot over medium heat. Add the coconut oil and swirl to melt and coat the base of the pot. Add the onion, ginger, garlic, cilantro stems and 1/2 teaspoon salt. Cook, stirring occasionally, until the vegetables are softened, about 5 minutes.
  • Add the tomato paste and stir to coat the vegetables. Add the curry powder, cumin, coriander and cayenne and stir to combine and toast the spices. Add the tomatoes, stock, and potatoes to the pot. Bring the mixture up to a boil, then turn the heat down to low, cover the pot and let simmer until the potatoes are very tender, about 25 minutes.
  • Add the turkey and peas to the pot and simmer until heated through, another 5 minutes. Turn off the heat and stir in the cream and lime juice.
  • Ladle the curry into bowls and garnish with the chopped cilantro. Serve with rice, if desired.

1 turkey breast
1 cup flour
1 tablespoon curry powder
2 teaspoons turmeric
1/2 teaspoon chili powder
1 teaspoon salt
1/2 teaspoon black pepper
1 egg
olive oil

Steps:

  • Slice turkey breast into strips.
  • In a medium bowl combine all dry ingredients.
  • In a separate bowl beat egg.
  • Using one hand for the wet and the other for the dry, dredge the turkey in the egg followed by the flour mixture.
  • Repeat until all strips are coated.
  • Drizzle about a tablespoon of olive oil in a large skillet over medium heat
  • Place turkey strips in skillet, cook for 3-4 minutes.
  • Flip strips, cook an additional 3-4 minutes until cooked through, taking care to not overcook or the turkey will become incredibly dry.
