EASY OKRA CURRY RECIPE

Made with frozen okra, this is one easy curry to cook up in a hurry. Delightfully flavorful and aromatic, this vegan curry needs only 11 easy-to-find ingredients.

12 oz pkg Frozen okra
1 tbsp olive oil
1 Red onion
3 cloves ginger
1 inch piece of fresh garlic
4 tsp Coriander powder
1 tsp Turmeric powder
1 tsp Chili powder
2 tsp Smoked paprika
2 tbsp Tomato paste
1/2 cup Coconut milk (I used chaokoh)
1/4 cup Water
Salt and pepper to taste
OPTIONAL - cilantro / chili flakes to garnish

Steps:

  • First off, peel the red onion, garlic cloves, and fresh ginger.
  • Then, chop the onion, garlic, and ginger - but keep onion separated from ginger and garlic.
  • Add oil to a large saute pan and add in the onion. Cook onion on medium heat for 10 minutes, stirring often.
  • Then add in the chopped ginger and garlic and saute about 2 minutes.
  • Add in the coriander, turmeric, chili powder, smoked paprika, and saute about a minute - while mixing well so all ingredients incorporate.
  • Then add in the tomato paste, coconut milk, water, and frozen okra. Give this a good stir then cover and let simmer for about 4- 5 minutes over medium heat.
  • When done, uncover and remove from heat.
  • Season with salt and pepper to taste.
  • Serve garnished with cilantro and chili flakes. Enjoy with rice or roti.

Roasted Okra and Chickpeas image

This mixture makes a great snack-just salty and crispy and spicy enough to go along with an ice cold lager. And if you have some plain yogurt on hand, drizzle it on top or serve on the side for dipping.

1 pound okra
1 tablespoon vegetable oil
One 14-ounce can chickpeas, drained
2 teaspoons garam masala or other curry powder
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 425 degrees F. Trim the very top of the stem of the okra pods, as they are often brown. Cut into 1-inch diagonal pieces and add to a baking sheet. Toss with the oil. Dry the chickpeas in a paper towel or a kitchen towel and add to the baking sheet.
  • Combine the garam masala and 1/2 teaspoon each of salt and pepper in a small bowl. Sprinkle the mixture over the okra and chickpeas and toss to coat; everything should look evenly dusted. Spread the ingredients in a single layer and roast until the okra is tender when pierced with a knife and the chickpeas are crispy, 25 to 30 minutes. Season with salt. Toss together and serve while warm.

1 lb young okra pods
2 onions
3 tablespoons olive oil
1/2 teaspoon dried hot red chili pepper
1/4-1/2 teaspoon mild curry powder (depending on personal taste)
1/4 teaspoon ground turmeric
salt and pepper, to taste

Steps:

  • Cut off the ends of the okra pods.
  • Slice the pods into approximately 1/4 to 1/2 inch rounds.
  • Peel and slice the onions.
  • Place the sliced Okra into a glass or stainless steel bowl and sprinkle liberally with salt.
  • Cover with the iced water, making sure that all slices are under water; refrigerate for at least 2 hours.
  • Remove the bowl from the refrigerator and drain off the salt water.
  • Heat the oil in a heavy skillet over medium high heat.
  • Add the Okra and fry until lightly browned. (Approximately 10 minutes).
  • Turning frequently to prevent sticking.
  • Add the remaining ingredients and fry for a further 3 minutes, until the onions are soft.
  • Serve hot.

1 1/2 lbs fresh okra or 2 (10 ounce) packages frozen okra
4 cups tomatoes, peeled, cored, seeded and crushed or 4 cups canned tomatoes, crushed, preferably organic
1/4 cup peanut oil or 1/4 cup canola oil
3/4 cup onion, chopped fine
1 tablespoon garlic, chopped fine
1 tablespoon curry powder
1 teaspoon ground coriander
2 tablespoons hot green chili peppers, chopped (optional)
3 tablespoons coriander leaves, fresh, chopped
3/4 cup chicken broth, preferably homemade and unsalted (or vegetable broth)
salt & fresh ground pepper

Steps:

  • If fresh okra is used, trim off tough stems.
  • If frozen okra is used, defrost and drain.
  • Put the tomatoes in a saucepan and bring to the boil.
  • Cook, stirring often to prevent sticking, until the tomatoes are reduced to about two cups.
  • Heat the oil in a saucepan over medium high heat and add onions and garlic.
  • Cook, stirring, until the mixture is softened.
  • Sprinkle with curry powder and ground coriander and cook briefly.
  • Stir in the tomatoes and cook about five minutes; reduce heat if mixture is sticking.
  • Stir in chilies and fresh coriander.
  • Add the okra, chicken broth and salt and pepper to taste.
  • Bring to a boil, reduce heat and simmer 15 minutes or until the okra is tender.
