I found this recipe and it sounded so good, but it served 100! I tweaked to serve 4 and use ingredients we like, and the results were great! I've got permission to make again, and I know I will. I love to use bone-in chicken thighs, but boneless breasts or thighs would work very well also.

¼ cup butter
1 onion, chopped
3 stalks celery, chopped
1 (4 ounce) can sliced mushrooms, drained
1 (6 ounce) package long grain and wild rice mix
1 ½ cups water
1 (10.75 ounce) can condensed golden mushroom soup
1 cup sour cream
1 tablespoon curry powder
4 bone-in chicken thighs, skin removed
salt and ground black pepper to taste
¼ cup grated Parmesan cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x9-inch baking dish.
  • Melt butter in a large saucepan over medium heat, and cook the onion and celery until the onion is slightly tender, about 3 minutes; stir in mushrooms, and cook 1 more minute, stirring often. Mix in the package of rice mix and water; bring to a boil, cover, and simmer until the rice is tender, about 15 minutes.
  • Mix the golden mushroom soup, sour cream, and curry powder together in a bowl. Stir about 1 1/2 cup of the soup mixture into the rice, reserving 1/2 cup of soup mixture for later. Spread the rice mixture into the bottom of the prepared baking dish. Sprinkle the chicken thighs with salt and black pepper, and arrange over the rice. Cover the chicken thighs with the reserved 1/2 cup of soup mixture. Sprinkle the casserole with Parmesan cheese.
  • Bake in the preheated oven until the chicken thighs are no longer pink at the bone and the juices run clear, 50 to 60 minutes. An instant-read thermometer inserted into the thickest part of a thigh, not touching bone, should read 165 degrees F (74 degrees C).

This healthy, from-scratch baked chicken casserole is packed with Indian curry flavor, and is very easy to make! Marinating the chicken in yogurt makes it fall-off-the-bone tender, but it can be skipped if you are really pressed for time.

1 ½ cups Greek yogurt, divided
2 tablespoons curry powder, divided
2 cloves garlic, crushed, divided
1 teaspoon ground paprika
1 teaspoon salt, divided
½ teaspoon cayenne pepper, divided
1 pound bone-in chicken breast halves
1 cup low-sodium chicken broth
1 cup basmati rice
½ cup sliced green onions
1 medium tomato, seeded and diced
1 chile pepper, seeded and diced
1 teaspoon grated fresh ginger
¼ teaspoon ground black pepper
¼ cup chopped fresh cilantro

Steps:

  • Combine 1/2 cup yogurt, 1 tablespoon curry powder, 1 clove crushed garlic, paprika, 1/2 teaspoon salt, 1/4 teaspoon cayenne pepper in a large freezer bag. Add chicken and marinate in the refrigerator for at least 30 minutes, or overnight.
  • Preheat the oven to 375 degrees F (190 degrees C).
  • Combine remaining 1 cup yogurt and chicken broth in a large bowl; mix well until smooth. Add basmati rice, green onions, tomato, chile pepper, 1 clove garlic, 1 tablespoon curry powder, ginger, black pepper, 1/2 teaspoon salt, and 1/4 teaspoon cayenne pepper. Stir to combine.
  • Pour rice mixture into a 9x13-inch baking dish and place marinated chicken on top. Discard excess marinade. Cover the dish with foil.
  • Bake in the preheated oven for 1 hour. Uncover and continue baking until chicken has browned and is no longer pink in the centers and rice is tender, 15 to 20 minutes more. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C). Fluff rice with a fork, garnish with chopped cilantro, and serve.

Loosely based on a recipe I cut from the Daily Herald years ago. I added this, omitted that until it was just right. I use RedGold brand of tomatoes with HOT chili peppers, use whatever level of heat you enjoy. You can swap out for plain tomatoes and leave out the cayenne and it's still yummy. Use a large high sided skillet to contain spatters. I use my non-stick dutch oven. Pre-measuring everything helps.

1 tablespoon butter
1 tablespoon olive oil
3 tablespoons curry powder
1 teaspoon salt
1 teaspoon ground cumin
1/4-1/2 teaspoon cayenne
1 cup onion, chopped
2 garlic cloves, minced
1 tablespoon fresh ginger, peeled and minced
1 1/2 lbs boneless skinless chicken breasts (about 3)
1 (14 1/2 ounce) can diced tomatoes with green chilies, undrained (such as Rotel, or RedGold brand)
1/4 cup fresh cilantro, chopped
2 (14 1/2 ounce) cans small whole potatoes, drained
3/4 cup fat free sour cream, at room temperature
1/4 cup raisins

Steps:

  • Measure spices into a small bowl.
  • Place garlic, ginger and onion in another bowl.
  • Place skillet over medium heat, add oil and butter. Wait for the butter to melt.
  • Add the spices; stir and cook for a minute or two until the spices become fragrant.
  • Add onion, ginger and garlic. Cook, stirring frequently, until softened, about 5 minutes.
  • Cut the chicken in half crosswise, so you have 6 evenly sized pieces.
  • Add the chicken and cook 3 minutes, flipping the chicken occasionally.
  • Add potatoes, tomatoes with it's juice and cilantro.
  • Reduce heat if necessary and simmer 20 - 30 minutes until chicken is cooked through.
  • Remove from heat. Stir sour cream into sauce.
  • Serve immediately with hot rice and garnished with raisins.

4 8-oz. chicken breast halves, skinned and boned
2 tbsp + 1 tsp. fresh lime juice, or as needed
1-3/4 cups water
1/2 tsp. salt, plus more to taste
1 cup basmati rice, rinsed and drained
2 tbsp. unsalted butter
2 tbsp. extra-virgin olive oil
freshly ground black pepper
1 yellow onion, diced
2 - 3 tbsp. curry powder, to taste
1/2 cup chicken stock
1 cup coconut milk or heavy cream
1 tbsp. chopped fresh parsley

Steps:

  • *Remove any excess fat from chicken breasts. Rinse & pat dry with paper towels. Slice crosswise into strips 1 inch wide. Place in a bowl, add the 2 tbsp lime juice, and toss to coat. Set aside for about 15 minutes. *In a saucepan (pref. nonstick), combine the water and the 1/2 teaspoon salt. Bring to a rapid boil and gradually add the rice. Reduce the heat to low, cover and barely simmer just until tender and the water is absorbed, 15 to 20 minutes. Remove from the heat and let stand, covered, for 5 minutes. Uncover, fluff with a fork, and re-cover until serving. *Dry the chicken pieces with paper towels. In a large saute pan or frying pan (pref. nonstick) over medium-high heat, warm 1 tbsp each of the butter and olive oil. When hot, add half the chicken, sprinkle with salt and pepper, and saute until golden, 2 to 3 minutes on each side. Transfer to a warm plate. Add the remaining 1 tbsp each butter and oil to the pan and cook the remaining chicken. Transfer to the plate. *Pour off most of the fat and place the pan over low heat. Add the onion and saute for 1 minute. Stir in the curry powder and saute for 2 minutes longer. Stir in the chicken stock, scraping up any browned bits stuck to the bottom; cover and simmer over low heat for 5 to 6 minutes. Stir in the coconut milk or cream and continue to cook, uncovered, stirring occasionally, until slightly thickened, 1 to 2 minutes. Stir in the remaining 1 teaspoon lime juice and salt and pepper to taste. Return the chicken to the pan, stir to coat well, and heat through. Adjust the seasoning with more lime juice or salt and pepper. *Toss the rice with the parsley. Arrange the rice in a ring around the edge of a warmed platter. Spoon the chicken and sauce into the center and serve.

1 1/4 teaspoons curry powder
1 teaspoon salt
2 cups water

Steps:

  • Heat oil in heavy medium saucepan over medium heat. Add onion and sauté until golden, about 5 minutes. Add garlic and stir 30 seconds. Stir in rice, apple, apricots, cinnamon stick, ginger, curry powder and salt. Add 2 cups water and bring to boil. Reduce heat to low; cover and cook until rice is tender and water is absorbed, about 18 minutes. Remove from heat. Season to taste with pepper and additional salt, if desired. Transfer pilaf to bowl. Sprinkle with almonds and serve.

1 whole chicken (3 1/2 to 4 pounds), cut into 10 pieces
4 teaspoons curry powder
1/2 teaspoon cayenne pepper
Coarse salt
1 tablespoon vegetable oil
5 garlic cloves, minced
3 tablespoons minced peeled fresh ginger (from a 3-inch piece)
1 medium yellow onion, diced small
2 tablespoons tomato paste
2 cups basmati rice
1 can (13.5 ounces) unsweetened light coconut milk
Fresh cilantro leaves, for serving

Steps:

  • Preheat oven to 350 degrees, with rack in lower third. Toss chicken with curry powder, cayenne, and 1/2 teaspoon salt. In a large Dutch oven or other heavy pot, heat 2 teaspoons oil over high. In batches, cook chicken until browned on all sides, about 12 minutes total. Transfer to a large plate.
  • Reduce heat to medium and add 1 teaspoon each salt and oil, garlic, ginger, and onion. Cook, stirring and scraping up browned bits with a wooden spoon, until onion is translucent, 6 minutes. Stir in tomato paste and cook 1 minute. Add rice, coconut milk, and 2 cups water; stir to combine and bring to a boil. Arrange chicken in pot, skin side up, cover, and transfer to oven. Bake until chicken is cooked through and liquid is absorbed, about 20 minutes. Sprinkle with cilantro and serve.
