SEARED SEA SCALLOPS

2 cups all-purpose flour
1 tablespoon ground cumin
1 teaspoon curry powder
2 tablespoons dried thyme
2 tablespoons paprika
3 tablespoons olive oil
1 pound sea scallops, cleaned
Pesto, recipe follows
Basmati rice, recipe follows
2 cups arugula, stemmed, washed, and dried
2 cups basil leaves, washed and dried
1/2 cup grated Parmesan
4 cloves garlic, chopped
1/4 cup pistachio nuts
1/2 cup olive oil
Salt and pepper
1 cup basmati rice
2 cups water
2 tablespoons butter

Steps:

  • In a mixing bowl, combine flour, cumin, curry, thyme, and paprika. In a medium saute pan, heat the olive oil over medium heat. Dredge the scallops in the flour mixture, shaking off any excess flour, and add to the hot saute pan. Cook scallops for 2 to 3 minutes on each side until golden brown. Transfer the scallops to a plate, drizzle with pesto, and serve with the basmati rice on the side.
  • Add all ingredients to food processor except for the olive oil, salt and pepper. Process until the ingredients form a paste. With the motor running, add the olive oil in a stream until combined. Season with salt and pepper, to taste.
  • In a medium saucepan, add rice, water and butter. Bring to a boil, reduce heat and cover. Cook the rice without stirring for 12 to 15 minutes. Fluff with a fork and serve with scallops.

1 cup finely chopped mustard greens
1 cup fresh parsley, chopped
1 cup fresh mint, chopped
1/2 cup fresh tarragon, chopped
2 tablespoons capers, chopped
4 anchovies in oil, finely chopped
2 cloves garlic, finely chopped
Grated zest of 2 lemons
1 cup extra-virgin olive oil
Kosher salt and freshly ground pepper
1 tablespoon Spanish smoked paprika
1 teaspoon packed light brown sugar
1 teaspoon ground cumin
1/2 teaspoon ground fennel seed
1/2 teaspoon ground coriander
1/2 teaspoon mustard powder
Kosher salt
12 large sea scallops, patted dry (about 1 pound 2 ounces)
Freshly ground pepper
1 tablespoon canola oil
1/4 cup grated Cotija cheese
Thinly sliced Fresno chiles, rocoto or ajì panca chile paste, and microgreens, for garnish

Steps:

  • Make the salsa verde: Combine the mustard greens, parsley, mint, tarragon, capers, anchovies, garlic and lemon zest in a large bowl. Stir in the olive oil and season with salt and pepper. Let sit at room temperature for at least 30 minutes before serving.
  • Make the scallops: Combine the paprika, brown sugar, cumin, ground fennel, coriander, mustard powder and 1 teaspoon salt in a small bowl. Season the scallops on both sides with salt and pepper, then sprinkle all over with the spice mixture. Rub the spices into the scallops.
  • Heat the canola oil in a large nonstick skillet over high heat until the oil begins to shimmer. Add the scallops to the pan in a single layer and cook until the bottoms are golden brown, about 2 minutes. Flip and cook until the other side is golden brown and the scallops are just cooked through, about 2 more minutes.
  • Serve 2 or 3 scallops per plate; top each scallop with a dollop of salsa verde, sprinkle with the Cotija cheese and top with a Fresno chile slice. Serve with chile paste and garnish with microgreens.

3 tablespoons toasted ground cumin
1 teaspoon salt
1 teaspoon fresh ground black pepper
1/4 cup olive oil
1 teaspoon mustard seeds
1 cardamom pod
1 star anise
12 large sea scallops, rinsed and patted dry

Steps:

  • Combine chili, cumin, salt and pepper in a medium shallow bowl.
  • Dredge one side of each scallop in the spice mixture.
  • Heat the oil in a large nonstick saucepan over high heat.
  • Add mustard seeds, cardamom and star anise.
  • Place the scallops in the heated pan, spice side down and cook for 3 minutes (until bottom edge is brown).
  • Reduce the heat to low, turn the scallops for 2 to 3 minutes more.
  • Remove from pan and arrange the scallops around the plate.
  • Drizzle the spice oil drippings from the pan over the scallops and serve.

1 large (1 1/2- to 2-lb) acorn squash
3/4 lb sea scallops, tough muscle removed from sides if necessary
1 1/2 tablespoons vegetable oil
3/4 teaspoon turmeric
1 1/2 tablespoons minced seeded jalapeño chile
1 large garlic clove, minced
2 teaspoons grated peeled fresh ginger
1 tablespoon plus 2 teaspoons fresh lime juice
1/4 cup water
3/4 cup heavy cream
1 1/2 teaspoons garam masala
Garnish: very thin slices of jalapeño chile, chopped fresh cilantro, and ground Aleppo pepper or cayenne
Accompaniment: haricots verts with mustard seeds and toasted coconut

Steps:

  • Prepare squash:
  • Preheat oven to 375°F.
  • Halve squash lengthwise, reserving 1 half for another use. Halve remaining squash piece diagonally crosswise and season with salt. Arrange wedges, cut sides up, in a small roasting pan filled with 1/2 inch water. Cover roasting pan tightly with foil and roast until tender, about 1 hour.
  • Prepare scallops after squash has been roasting 30 minutes:
  • Pat scallops dry and season with salt. Heat 1 tablespoon oil in a 10-inch nonstick skillet over moderately high heat until hot but not smoking, then brown scallops on both sides, 4 to 6 minutes total (scallops will be almost cooked through). Remove from heat. Add turmeric and toss until scallops are yellow, then transfer to a bowl.
  • Cook jalapeño, garlic, ginger, and 1 tablespoon lime juice in remaining 1/2 tablespoon oil in skillet over moderately high heat, stirring, 1 minute. Add water and simmer until water is evaporated and chile mixture is softened, 3 to 4 minutes. Add cream and garam masala and simmer 2 minutes. Remove from heat and cover.
  • When squash is tender, add remaining 2 teaspoons lime juice and scallops with any liquid that has accumulated in bowl to sauce and simmer until scallops are just cooked through and sauce is slightly thickened, about 2 minutes.
  • Put a squash wedge on each of 2 plates and spoon scallops and sauce over squash.
