Cucumbers in Vinegar or Creamed Cucumbers image

We love our Cucumbers in Vinegar and Creamed. They are both great recipes.

2 to 3 medium sized cucumbers (peeled)
1 medium onion (sliced)
1/4 cup white vinegar (can add more or less)
3 or 4 cups water (enough to cover cucumbers in bowl)
1/2 teaspoon black pepper
1 teaspoon salt
3 or 4 medium cucumbers (peeled and sliced)
1 large onion (peeled and sliced into rings)
1 tablespoon sugar
1/2 cup sour cream
1/2 cup salad dressing or mayonnaise
1/4 teaspoon dill
Salt & Pepper to taste

Steps:

  • Peel and slice cucumbers in a bowl. Slice onions and break into rings. Add remaining ingredients. Refrigerate for several hours before serving. Will keep for several days in the fridge.

5 cucumbers
1 red onion
1 cup apple cider vinegar ((or white vinegar, red wine vinegar, rice vinegar))
1/2 cup sugar ((or more to taste))
1/2 cup water
1 teaspoon salt

Steps:

  • Peel and slice cucumbers into thin slices.
  • Cut onion in half and cut into very thin slices.
  • Combine onions and cucumbers in a large bowl.
  • In a separate, medium-sized bowl, combine remaining ingredients. Stir until sugar dissolves.
  • Pour vinegar mixture over cucumbers and onions. Stir until the cucumbers are evenly coated in the dressing.*
  • Refrigerate at least 20 minutes. Before serving, drain liquid and place in a serving bowl to serve.

3 large cucumbers
1 teaspoon salt
¼ cup white sugar
⅛ cup water
¼ cup distilled white vinegar
½ teaspoon celery seed
¼ cup chopped onion

Steps:

  • Peel the cucumbers and slice wafer thin. Sprinkle with salt. Let stand 30 minutes, then squeeze cucumbers to release moisture.
  • In a medium size bowl mix sugar, water, vinegar, celery seed, and onion. Add cucumbers to mixture. Mix well. Refrigerate 1 hour.

1 cup white vinegar
1 cup water
4 cucumbers, peeled and sliced
1 medium red onion, sliced

Steps:

  • In a large bowl mix first 3 ingredients.
  • Peel and slice cucumbers and onion and add to vinegar/water/sugar mix.
  • Cover and refrigerate for 1 hour before serving.
  • If all the cucumbers and onions are eaten reserve the vinegar/water/sugar mix and add fresh cucumbers and onion.
  • My servings are an estimate, as I can eat the whole bowl myself :) The cooking time is actually the refrigeration time.

  • Slice each cucumber thinly. Then slice them into half-moons.
  • Add sliced cucumbers and red onions to a large bowl.
  • Whisk together the apple cider vinegar, water, sugar, salt, and pepper in a medium mixing bowl to make the vinegar dressing.
  • Pour the vinegar dressing over the cucumber and onion and toss to combine.
  • Top with optional herbs. Store in the fridge until ready to serve.
