CUCUMBERS WITH WASABI AND RICE VINEGAR

Steps:
- Very thinly slice cucumbers crosswise with slicer; toss with 1 teaspoon salt and drain in a colander 15 minutes. Rinse cucumbers under cold water, then squeeze handfuls to remove excess water; pat dry.
- Stir together wasabi powder and water in a bowl and let stand 5 minutes. Add vinegar, sugar, and soy sauce, whisking until sugar has dissolved. Add cucumbers and toss well.

Steps:
- 1. Wash the cucumbers and score with a fork or remove part of the skin.
- 2. Place the cucumbers, onions and radishes, if using, in a medium bowl.
- 3. In a separate bowl, mix the vinegar, water and sugar. Stir until sugar is dissolved.
- 4. Pour vinegar mixture over the cucumbers. Cover and chill for at least 2 hours before serving.
VINEGAR CUCUMBERS AND ONIONS
These are so good , I like the vinegar and salt mix. In the summer I like to keep a bowl of these in the refrigerator just to snack on.
