CUCUMBERS AND CARROTS



Cucumbers and Carrots image

Number Of Ingredients 7

2 large cucumbers, about 1 1/4 pounds
2 carrots, about 1/2 pound
2 tablespoons butter
1 tablespoon finely chopped shallots
Salt to taste if desired
Freshly ground pepper to taste
1/4 teaspoon ground cumin

Steps:

  • Peel cucumbers and cut each lengthwise in half. Scrape away and discard seeds.
  • Cut each cucumber in half crosswise into thin slices. There should be about 4 cups. Set aside.
  • Trim off ends of each carrot. Scrape carrots. Cut each carrot crosswise into 1 1/2-inch pieces. Cut each piece lengthwise into thin julienne strips. There should be about 2 cups.
  • Bring enough water to the boil in a saucepan to cover carrot strips when added. Add carrots and let cook about 4 minutes. Add cucumbers and cook about 1 minute. Drain well.
  • Heat butter in skillet and add shallots. Cook briefly, stirring. Add carrots and cucumbers and sprinkle with salt, pepper and cumin. Cook, stirring occasionally, about 2 minutes.

BIBIMBAP WITH TOFU, CUCUMBERS, SPINACH, SHIITAKES AND CARROTS



Bibimbap With Tofu, Cucumbers, Spinach, Shiitakes and Carrots image

For this dish, instead of using the traditional Korean marinade, I use my favorite marinade for the tofu; it includes mirin, sweet Japanese rice wine.

1 tablespoon Asian sesame oil
1/4 cup soy sauce
2 tablespoons mirin (sweet Japanese rice wine)
1 tablespoon rice wine vinegar
1 tablespoon minced or grated fresh ginger
1 teaspoon sugar
3/4 pound tofu (to taste)
2 tablespoons rice vinegar
1 tablespoon sesame oil
2 large garlic cloves, minced or puréed
2 to 3 scallions, minced
1 tablespoon toasted sesame seeds
Salt to taste
Korean red pepper paste (kochujang) to taste (available at Korean markets) (optional)
2 Persian cucumbers or 1/2 long European cucumber, thinly sliced
6 ounces carrots (1 large), peeled and cut in matchsticks or grated
1 large bunch spinach, stemmed, or 1 6-ounce bag baby spinach
6 fresh shiitake mushrooms, stemmed and sliced
Soy sauce to taste
1 tablespoon canola oil
1 1/2 to 2 cups brown rice, barley, quinoa or another grain of your choice, cooked (keep hot)
4 eggs (optional)
Korean red pepper paste (kochujang) to taste (available at Korean markets)
2 sheets nori seaweed (kimgui), lightly toasted* and cut into thin strips (optional)
1 tablespoon toasted sesame seeds or black sesame seeds
Toast nori sheets (if not toasted already) by quickly passing them over a gas flame (hold with tongs) until crisp.

Steps:

  • Combine all of the tofu marinade ingredients in a 2-quart bowl. Whisk together well.
  • Drain the tofu and pat dry with paper towels. Cut into 1/2-inch-thick dominoes, blot again with paper towels and add to the bowl with the marinade. Gently toss to coat. Cover and refrigerate for 15 minutes to an hour, or for up to a day.
  • Mix together the rice vinegar, sesame oil, garlic, scallions, sesame seeds and salt to taste in a small bowl or measuring cup. Add red pepper paste if desired. Set aside.
  • While the tofu is marinating, toss the cucumber with salt to taste and place in a colander in the sink for 15 to 30 minutes. Rinse and squeeze dry. Place in a bowl and toss with 2 teaspoons of the vinegar and sesame oil mixture. In a separate bowl, toss the carrots with 1 tablespoon of the vinegar and sesame oil mixture. Refrigerate both the cucumbers and carrots while you cook the tofu, spinach and mushrooms.
  • Wash the spinach and wilt in a large frying pan over high heat. Remove from the heat, press out excess water and toss in a bowl with 1 tablespoon of the vinegar and sesame oil mixture.
  • Heat a wok or large, heavy skillet over medium-high heat until a drop of water evaporates immediately on contact and add the canola oil. Stir-fry the tofu for 3 to 5 minutes, until lightly browned, and remove to a plate. Add the shiitakes to the pan, let sit without stirring for 1 minute, then stir-fry for another minute or two, until tender. Remove to a plate.
  • Fry the eggs in the hot pan or in a separate nonstick skillet until the whites are set and the yolks are still runny. Season with salt and pepper.
  • Heat 4 wide soup bowls. Place a mound of hot grains in the middle of each one and surround with the tofu and vegetables, as well as kimchi if desired, each ingredient in its own little pile. Place a fried egg and a small spoonful of chili paste on top of the rice and garnish with the toasted nori and sesame seeds. Serve at once. Diners should break the egg into the rice. Pass the chili paste and add more as desired.

COLD SESAME NOODLES WITH CARROTS AND CUCUMBERS



Cold Sesame Noodles With Carrots and Cucumbers image

Spicy noodles in a peanut sesame sauce, topped with carrot, cucumber and scallions. Based on a recipe from Lee Bailey's The Way I Cook. If fresh egg noodles are not available, dry linguine is a substitute.

2/3 cup peanut butter
2/3 cup dark sesame oil
1/2 cup soy sauce
1/2 cup black tea
3 tablespoons dark brown sugar
1 -2 tablespoon sriracha sauce
2 tablespoons red wine vinegar
4 garlic cloves, minced
2 teaspoons gingerroot, minced
1 lb fresh Chinese egg noodles
1 tablespoon salt
1 tablespoon dark sesame oil
3 green onions, thinly sliced
1 cup shredded carrot
1 cup shredded cucumber

Steps:

  • In the bowl of a food processor, pulse the garlic and ginger root until finely chopped. Add the peanut butter,sesame oil soy sauce, tea, brown sugar, Siracha, red wine vinegar and process until smooth.
  • Bring a stockpot of water to the boil and add the salt and cook noodlesuntil done-follow package directions.
  • Drain the noodles, rinse well with cold water, drain well again and toss with the 1 tablespoon of dark sesame oil.
  • Toss the noodles with the sauce and arrange on a large platter. Top with the carrot, cucumber and scallions.

This is similar in style to the Vietnamese pickled carrots (Carot Chua) that are sweet and tangy with the addition of sliced cucumbers and basil.

1 cucumber
1 cup baby carrots, julienne sliced
1 cup fresh basil
1/4 cup distilled vinegar
8 Splenda quick packs
1/8 teaspoon salt

Steps:

  • Peel cucumber with a peeler, peel the cucumber lengthwise into strips. When you get to the middle, chop remainder into cucumber chips. Chop basil finely.
  • To an airtight container add cucumber, carrots, julienne sliced, basil.
  • Dissolve Splenda and salt in vinegar. Add to veggies. Its ready to eat or store in fridge for later.

1/2 cup fat-free soft cream cheese, softened
3/4 teaspoon chopped fresh or 1/4 teaspoon dried dill weed
2 large cucumbers, or carrots, cut into 1/4-inch slices (24 slices)
dill weed sprigs, if desired

Steps:

  • Mix lox, cream cheese and chopped dill weed. Iced Cucumbers and Carrots image

1 1/2 pounds carrots
3 large seedless cucumbers, scored if desired
2 1/2 cups Minted Yogurt Sauce

Steps:

  • Cut the carrots lengthwise into 1/4-inch slices using the corrugated blade on a mandoline or with a very sharp knife and in a large bowl of ice and cold water let them soak for 1 to 2 hours, or until they are curled. Halve the cucumbers crosswise cut them lengthwise into eighths, and chill them in another large bowl of ice and cold water for 15 minutes. Drain the vegetables, arrange them decoratively in a serving bowl filled with ice, and serve them with the sauce.
