CUCUMBER SANDWICH RECIPE

- Peel the cucumber, and slice it thinly. I used a simple OXO slicer for quick, even slices.
- Spread soft/room temperature cream cheese on two slices of bread.
- Arrange the cucumber slices, overlapping slightly, on one slice of bread and top with the other.
- Slice off the edges with a sharp serrated knife, wiping with a damp paper towel after each cut. Next, cut into fingers (or triangles). Whether you cut them into fingers or triangles, you'll end up with two finger sandwiches.
- If you need to make cucumber sandwiches ahead of time, keep them in a sealed container with a paper towel inside for a few hours, and refrigerate them.

- Place cucumber slices between 2 paper towels set in a colander. Allow liquid to drain, about 10 minutes.
- Mix cream cheese, mayonnaise, garlic powder, onion salt, and Worcestershire sauce in a bowl until smooth.
- Spread cream cheese mixture evenly on one side of each bread slice.
- Divide cucumber slices over half of the bread slices; sprinkle lemon pepper on cucumber.
- Stack the other half of the bread slices with spread sides down over the cucumber slices to make sandwiches.

- In a small mixing bowl, combine the labneh, chopped fresh herbs, and a dash of kosher salt. Add a drizzle of extra virgin olive oil. Mix well.
- Arrange the bread slices on a large cutting board and spread one side of each slice with a generous spoonful of labneh.
- Arrange the cucumber slices on half of the bread slices, overlapping the cucumbers so they will fit well. Top with the other slice of bread (you should have 4 cucumber sandwiches at this point).
- Pressing down gently, cut each cucumber sandwich into quarters (triangles or rectangles will work as well).
- Arrange the sandwiches on a plate and serve with a garnish of dill. (If you have any cucumber slices left, you can arrange them on the plate as well). Enjoy!

- Line 8-inch-square glass baking dish with plastic. Toss warm rice with vinegar and salt in a large bowl. Firmly press half into dish. Spread with 1/4 cup cream cheese. Layer half the cucumber slices on top, overlapping. Repeat. Cover with plastic; top with a weighted baking dish. Refrigerate at least 2 hours or overnight.
- Lift out; transfer to cutting board. Cut into 1-by-2-inch rectangles. Dip 1 short and 1 long side of each sandwich in sesame seeds. Serve within 4 hours.
