Grandma's Pineapple Cucumber Lime Jello Salad image

Retro jello salad recipe made with pineapple, cucumber, horseradish, and lime jello.

1 (6 ounce) package of Jell-O Lime gelatin
1 teaspoon salt
2 cups hot water
2 cups cold water
1 1/2 cups peeled, diced cucumbers
3 tablespoons horseradish (or more if you want it spicier)
1/2 teaspoon grated onion
2 tablespoons vinegar
1 1/2 cup diced or crushed drained canned pineapple (you cannot use fresh pineapple with gelatins. The bromelaine enzyme in fresh pineapple will keep the gelatin from bonding.)

Steps:

  • In a bowl, dissolve lime jello and salt in 2 cups of hot water (don't use boiling water, just regular hot water). Add 2 cups cold water. Chill until slightly thickened - the consistency of egg whites, about 30 minutes.
  • In a separate bowl mix cucumber, horseradish, grated onion, and vinegar. Fold pineapple and cucumber mixture into jello. Pour into a jello mold and chill for several hours (about 6) until gelatin sets.
  • To remove jello from its mold, fill up a basin half-way with hot water. Lower the jello mold into the hot water, metal side down, until the water comes up almost to the edge of the mold. Keep it there 5 seconds and remove. Place a plate on top of the jello mold and turn upside down. The jello salad should just slide out.

1 (8 ounce) can crushed pineapple, undrained
1 (3 ounce) package lime gelatin
1 cup boiling water
cucumber, sliced thin (10 slices)
1 envelope knox gelatin
1/2 cup cold water
1 (8 ounce) package cream cheese, softened
1 cup mayonnaise
3/4 cup drained and shredded cucumber

Steps:

  • Drain pineapple, reserving liquid. Dissolve lime gelatin in boiling water; add 3 Tblsp. reserved pineapple liquid and cold water. Chill until thick,but not set. Pour 1/2 cup gelatin mixture into lightly oiled 6 1/2 cup ring mold; arrange cucumber slices (slightly overlapping) in gelatin. Top with rest of gelatin. Chill until almost set. Mix together unflavored gelatin and 1/2 cup water in pan; stir over low heat until dissolved. Add enough cold water to remaining reserved pineapple liquid to measure 1/3 cup; stir into gelatin. Gradually add gelatin mixture to combined cream cheese and mayonnaise, mixing until well blended. Chill until thickened but not set; fold in cucumber and pineapple. Pour over molded layer and chill until firm. Unmold.

This is such a delicious summertime salad, with a wonderful blend of flavors, I have served this quite often at my BBQ parties, and everyone just loves it, this can also be made in a glass baking dish, and just scooped out when served. If you are planning to mold this salad, I suggest to serve it on top of a bed of sliced cucumbers, it makes for a nice presention. I hope that you enjoy this as much as we do. Plan ahead this salad needs to chill until set. Prep time includes chilling time.

1 (6 ounce) package lemon gelatin
1 1/2 cups boiling water
1 (8 ounce) package cream cheese, softened
1 (8 ounce) carton sour cream
1/2 cup mayonnaise
1 teaspoon lemon juice
1 teaspoon Worcestershire sauce
1 (15 1/2 ounce) can crushed pineapple, drained
1 cup seeded and grated cucumber (I use the English cucumber, the long thin kind!)
3/4 cup chopped celery
1 (4 ounce) jar diced pimentos, drained
1 tablespoon prepared horseradish
1 tablespoon grated onion
cucumber, sliced (optional)

Steps:

  • Lightly grease a 7-cup mold with vegetable spray.
  • Dissolve the gelatin in the boiling water; cool slightly.
  • In a bowl, beat the cream cheese until smooth.
  • Gradually add the gelatin mixture to the cream cheese; beat well.
  • Add in the sour cream, mayo, lemon juice, Worcestershire sauce; chill until the consistancy of unbeaten egg whites.
  • Remove from the fridge; stir in the next 6 ingredients.
  • Pour into the prepared mold.
  • Chill until firm (about 5 hours).
  • Unmold onto a bed of cucumbers slices, if desired.

1 large cucumber, peeled and shredded
1 (3 ounce) package lime flavored Jell-O® mix
1 ¼ cups boiling water
1 tablespoon white sugar
1 pinch salt
1 tablespoon white vinegar
½ cup mayonnaise

Steps:

  • Place the shredded cucumber in a colander to drain. In a medium bowl, whisk together the gelatin mix and hot water until gelatin has dissolved. Mix in the sugar, salt and vinegar. Set aside to cool until it starts to set, about 1 hour.
  • When the gelatin has thickened, stir in the mayonnaise, and fold in the drained cucumber. Transfer to a mold or serving bowl, and chill for 3 hours, or until set.
