3 oz pkg. lime jello
1/2 tsp salt
1 c boiling water
1 c real mayonnaise
1/2 c dairy sour cream
1 c chopped peeled cucumber
1/4 c chopped pimiento
1 Tbsp finely chopped onion

Steps:

  • 1. Dissolve jello and salt in boiling water; cool. Combine mayonnaise and sour cream; mix well. Gradually add jello mixture to mayonnaise mixture. Chill until partially set; fold in cucumber, pimiento and onion. Pour into a 1-quart mold; chill until firm. Unmold on to serving plate.

1 (8 ounce) can crushed pineapple, undrained
1 (3 ounce) package lime gelatin
1 cup boiling water
cucumber, sliced thin (10 slices)
1 envelope knox gelatin
1/2 cup cold water
1 (8 ounce) package cream cheese, softened
1 cup mayonnaise
3/4 cup drained and shredded cucumber

Steps:

  • Drain pineapple, reserving liquid. Dissolve lime gelatin in boiling water; add 3 Tblsp. reserved pineapple liquid and cold water. Chill until thick,but not set. Pour 1/2 cup gelatin mixture into lightly oiled 6 1/2 cup ring mold; arrange cucumber slices (slightly overlapping) in gelatin. Top with rest of gelatin. Chill until almost set. Mix together unflavored gelatin and 1/2 cup water in pan; stir over low heat until dissolved. Add enough cold water to remaining reserved pineapple liquid to measure 1/3 cup; stir into gelatin. Gradually add gelatin mixture to combined cream cheese and mayonnaise, mixing until well blended. Chill until thickened but not set; fold in cucumber and pineapple. Pour over molded layer and chill until firm. Unmold.

You know it's a party when a fancy-looking sour cream mold is on the table! This one is gloriously green, made with cucumbers, lime JELL-O and dill.

1-1/2 cups boiling water
1 pkg. (8-serving size) JELL-O Lime Flavor Gelatin
1/4 tsp. salt
1-1/2 cups cold water
1 Tbsp. lemon juice
1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream
1/2 cup MIRACLE WHIP Dressing
1 medium cucumber, peeled, seeded and chopped (about 1-1/2 cups)
2 Tbsp. finely chopped onion
1 tsp. dill weed

Steps:

  • Stir boiling water into dry gelatin and salt in large bowl at least 2 minutes until completely dissolved. Add cold water and lemon juice; stir. Refrigerate 1-1/4 hours or until slightly thickened (consistency of unbeaten egg whites).
  • Mix sour cream and dressing until well blended. Stir into thickened gelatin. Refrigerate about 15 minutes or until thickened (spoon drawn through leaves definite impression). Stir in cucumber, onion and dill weed. Pour into 5-cup mold sprayed with cooking spray.
  • Refrigerate 4 hours or until firm. Unmold. Garnish as desired. Store leftover gelatin mold in refrigerator.

As if a cucumber-sour cream mold weren't refreshing enough, this citrusy version is made with lime JELL-O and lemon juice. Makes enough for a crowd!

1-1/2 cups boiling water
2 pkg. (3 oz. each) JELL-O Lime Flavor Gelatin
1-1/2 cups cold water
1/2 tsp. zest and 2 Tbsp. juice from 1 lemon
1 container (8 oz.) BREAKSTONE'S or KNUDSEN Sour Cream
2 green onions, sliced
1 tsp. dill weed
1-1/2 cups chopped seeded peeled cucumbers

Steps:

  • Add boiling water to gelatin mixes in medium bowl; stir 2 min. until completely dissolved. Stir in cold water, lemon zest and juice. Refrigerate until slightly thickened.
  • Mix sour cream, onions and dill weed until blended; whisk into gelatin. Refrigerate until thickened. Stir in cucumbers.
  • Pour into 5-cup mold sprayed with cooking spray. Refrigerate 4 hours or until firm. Unmold.

1 (6-ounce) package lemon jello or lime-
1 cup water boiling
1 cup cottage cheese
3/4 cup mayonnaise commercial or Basic
2 tablespoons cider vinegar
1/2 teaspoon salt
8 ounces cucumbers medium unpeeled seeded and coarsely grated (1 cup)
1/4 cup celery finely chopped
1/4 cup onion minced
Salad greens
1/2 cup sour cream
1/2 cup almonds, toasted slivers

Steps:

  • 1. Dissolve gelatin in boiling water. 2. Place cottage cheese and mayonnaise in a blender container or food processor bowl cover and blend or process until smooth. Add dissolved gelatin, vinegar and salt blend or process until smooth. 3. Pour into a bowl fold in cucumber, celery and onion. Pour into a lightly-oiled 4-cup mold or individual molds. Refrigerate 3 hours or until firm. Unmold on greens top with sour cream and sprinkle with almonds.
