CUCUMBER-MINT MARTINI
This cucumber-mint martini is beyond refreshing! It pairs perfectly with any shrimp dish you might have as well as any appetizers that contain cilantro. It is crisp to the taste and sure to impress! As you make more and more of these you will find that they're actually quite easy to make.

- Set 2 ice cubes aside. Place remaining ice cubes in a martini glass and fill with water to chill the glass.
- Combine 3 slices cucumber, mint, and melon liqueur in a cocktail shaker. Mash thoroughly with a cocktail muddler. Add lemon-flavored vodka, vermouth, and 2 reserved ice cubes; cover and shake vigorously until the outside of the shaker becomes frosty; this is how you know the liquid is the same temperature as the ice.
- Dump the ice water from the martini glass. Strain martini into the glass and garnish with remaining cucumber slice.

Steps:
- Place the cucumber and mint in a cocktail shaker and add the lime juice and simple syrup. Muddle the cucumber and mint together. (I muddled it for about 3 minutes. I really wanted to squish the cucumber but not obliterate it)
- Add the vodka to the mixture and add enough ice to fill it half way
- Cap the shaker and shake it at least for 15 seconds or stir it, whichever you prefer
- Strain the mixture into a martini glass, take a spoon and fish a few pieces of cucumber out, along with a few mint leaves and place it in the liquid
- Sip
- Smile
- Enjoy

MINT-CUCUMBER MOJITOS
This refreshing version of mint mojitos features a springtime kick of cucumber. We love these at special gatherings and summer barbeques. A pitcher of this can be made a few hours in advance--just add alcohol at serving time.

- Squeeze the lime quarters into a highball glass, and drop the limes into the glass. Add the mint leaves and sugar. Muddle well with the back of a spoon or with a muddler. Place the cucumber slices into the glass, and fill with ice cubes. Pour in the rum, then top off with club soda. Stir gently and serve.

INVIGORATING CUCUMBER MINT COCKTAIL RECIPE BY TASTY

- Make the mint simple syrup: In a small saucepan over medium heat, combine the water, sugar, and roughly chopped mint leaves. Bring to a low boil, then reduce the heat to low and simmer for 5 minutes, until the sugar is fully dissolved and the mint is fragrant. Remove from the heat and let cool for 5-10 minutes. Strain through a fine-mesh sieve. Store remaining mint syrup in the refrigerator for up to 1 month.
- In a cocktail shaker, combine the cucumber rounds, lime juice, whole mint leaves, and 1 tablespoon of the mint simple syrup. Muddle for 1-2 minutes, until the cucumber and mint have released their flavors, but are not mushy.
- Pour in the vodka and fill the shaker halfway with ice. Shake vigorously for 30 seconds.
- Fill a Collins glass with ice and pour in the strained cocktail.
- Garnish with the cucumber ribbons.
