This cocktail takes the classic Gimlet and adds the refreshing flavor of cucumber to create a more delicate version of the sour sipper.

3 cucumber wheels, thickly sliced
1/2 ounce simple syrup
2 ounces gin (such as Hendrick's)
3/4 ounce lime juice, freshly squeezed
Garnish: cucumber wheel, sliced thinly

Steps:

  • Add the cucumber wheels and simple syrup into a shaker and muddle.
  • Add the gin, the lime juice and ice and shake until well-chilled.
  • Strain into a coupe glass.
  • Garnish with a cucumber wheel.

4 slices cucumber, cut 1/8″ thick, plus more for garnish
2 ounces gin or cucumber vodka (homemade or purchased)
1/2 ounce lime juice, plus a lime wedge for garnish
1/2 ounce simple syrup
Splash of soda water, optional

Steps:

  • Add the cucumber slices to a cocktail shaker and muddle them (gently mash) to release the juices.
  • Add the gin or cucumber vodka, lime juice, and simple syrup to a cocktail shaker. Fill it with ice and shake until cold.
  • Strain the drink into glass. If desired, add a splash of soda water. Garnish with a lime wedge or cucumber slice and serve.

A light, summery cocktail, Russian by background. A recipe from Bar Lubitsch in West Hollywood California (found in Maxim magazine). NOTE: I really liked this one. . .very faint cucumber taste but great fresh cucumber smell. I used 1.5 packets of stevia instead of sugar with great results. I also served mine over ice as it was a bit too potent for me as written!!!

3 ounces potato vodka
4 slices seedless cucumber
1/2 ounce fresh lime juice
1 teaspoon sugar

Steps:

  • Muddle the cucumber with the sugar in the bottom of a cocktail shaker. Add in the rest of the ingredients and 1/2 cup of ice.
  • Shake vigorously for 10 seconds and strain into a birdbath champagne glass or martini glass.
  • Garnish with a slice (or ribbon) of cucumber or a lime wedge.
