Cucumbers are dolled up with butter and cream, then given a quick turn in the oven and finished with fresh horseradish, lemon zest, and dill in this elegant side dish.

5 Persian or Kirby cucumbers (12 ounces), halved lengthwise
Kosher salt and freshly ground pepper
1 tablespoon unsalted butter, cut into small pieces
1/3 cup heavy cream
1/2-inch piece fresh horseradish, peeled
1 teaspoon finely grated lemon zest (from 1 lemon)
1 tablespoon dill sprigs

Steps:

  • Preheat oven to 450 degrees. Arrange cucumbers in a single layer in an 8-by-12-inch baking dish. Season with salt and pepper and dot with butter. Roast until cucumbers are slightly softened, about 15 minutes. Reduce oven temperature to 350 degrees. Drizzle cucumbers with cream. Roast until cream is slightly thickened, about 10 minutes more.
  • Grate about 1 tablespoon horseradish directly over cucumbers. Sprinkle with lemon zest and dill. Serve immediately.

2 standard cucumbers
3/4 pound medium shrimp, thawed, deveined and shells on
1 tablespoon prepared horseradish
1 teaspoon lemon juice
Kosher salt
Freshly ground black pepper
1 (15-ounce) can chopped tomatoes, drained
2 tablespoons chopped parsley, divided

Steps:

  • Peel the length of each cucumber to form alternating stripes of unpeeled and peeled. Cut the cucumbers into 12 (3/4-inch) pieces. Scoop out the center using a teaspoon or a melon baller, leaving the bottom and sides intact to form a cup. (Reserve the centers for the Round 2 Recipe Chicken Tacos with Cucumber Salsa.) Turn them upside down onto a towel and let them drain while you make the filling.
  • Bring a medium pot of salted water to a boil over medium heat. Add the shrimp and cook until bright pink, about 3 to 4 minutes. Strain and rinse in cold water. Remove the shells and discard. (Reserve 12 shrimp for the Round 2 Recipe Shrimp and Potato Salad with Sour Cream and Bacon Dressing.)
  • Chop the shrimp into small pieces and put them into a bowl. Add the horseradish, lemon juice, salt and pepper to taste, half the can of tomatoes (reserve the remaining half for the Round 2 Recipe Chicken Tacos with Cucumber Salsa) and 1 tablespoon of parsley. Evenly divide the shrimp mixture between the cucumber cups. Arrange them on a serving platter and garnish with remaining parsley.

2 ounces reduced-fat cream cheese, at room temperature (Neufchatel)
2 tablespoons light mayonnaise
1 tablespoon drained prepared horseradish
1 (12 ounce) peeled cucumbers, preferably seedless
18 sprigs fresh parsley or 18 sprigs fresh dill

Steps:

  • Combine the cream cheese, mayonnaise, and horseradish; chill at least 30 minutes.
  • Score the cucumber lengthwise with the tines of a fork.
  • Cut the cucumber crosswise into 1/2-inch slices, making 18.
  • Using a melon baller or 1/2 teaspoon measuring spoon, scoop out a small hollow on the straight side.
  • Do not cut all the way through.
  • Transfer the cream cheese mixture to a pastry bag fitted with a fluted tip. Pipe the cheese mixture into the cucumber cups.
  • (Use a small spoon if a pastry bag is not available.)
  • Garnish the tops of the cups with parsley or dill sprigs.

1 small red onion, finely chopped
1 red bell pepper, finely chopped
1 vine ripe tomatoes, seeded and, finely chopped
1/4 cup black olives, pitted and chopped
1/2 tablespoon dried oregano
1/4 cup fresh feta, crumbled
1/2 cup parsley, chopped
salt
ground black pepper
1 lemon, juice of, plus
1/2 tablespoon lemon zest
2 tablespoons extra virgin olive oil
2 English cucumbers, seedless

Steps:

  • In a large mixing bowl, mix together the onion, pepper, tomatoes, olives, oregano, feta, parsley, lemon juice and zest, and olive oil.
  • Season with salt and pepper, and reserve.
  • Peel the cucumbers partially, so it has 4 stripes of skin going down the entire length of the cucumber.
  • Trim the ends of the cucumbers and cut each cucumber into slices 3/4 of an inch thick -- you should have about 20 pieces.
  • Scoop out the center of each slice with a melon baler, leaving a shell of flesh.

2 teaspoons white wine vinegar
kosher salt

1 tablespoon fresh tarragon, chopped
1/2 bunch fresh dill
1 shallot, halved
10 black peppercorns
1 bay leaf
1 lemon, halved
1 lb small shrimp, thawed if frozen and cut into 1/2-inch pieces
1/2 seedless cucumber, cutin into 1/4-inch pieces

Steps:

  • Make the horseradish mayonnaise by whisking together the mayonnaise, horseradish, vinegar, some salt, pepper, and more horseradish, if desired; fold in tarragon.
  • Line a baking sheet with paper towels to drain the shrimp once it is poached.
  • In a large, wide pot, combine dill, shallot, peppercorns, bay leaf, 3 tablespoons salt, squeeze the juice from both lemon halves, then drop in the lemon halves; add 3 quarts of water and bring to a boil.
  • Reduce heat to medium and let poaching liquid simmer for 10 minutes.
  • Working in batches, place the shrimp in a sieve, lower into the poaching liquid, shaking now and then, until shrimp begins to curl and turn opaque, 15-20 seconds; transfer to paper towels to cool.
  • Combine cucumber, cooled shrimp, and 1/4 cup of the horseradish mayonnaise and fold to coat; season with salt, pepper, and more horseradish, if desired.

3/4 cup sour cream

1 teaspoon white-wine vinegar, or to taste
2 teaspoons minced fresh tarragon leaves, or to taste, plus a tarragon sprig for garnish

Steps:

  • In a bowl whisk together the cucumber, the sour cream, the horseradish, the vinegar, the minced tarragon, and salt and pepper to taste and chill the sauce, covered, for at least 2 hours and up to 1 day. Transfer the sauce to a serving dish and garnish it with the tarragon sprig.

Steps:

  • Cut cucumbers into large chunks. Puree half the cucumber with yogurt, lemon zest, and horseradish in a blender until just smooth. Add remaining cucumber, and pulse until chunky, about 4 times. Season with pepper. Refrigerate until cold, about 1 hour. Stir well, and garnish with grated lemon zest and thinly sliced cucumber, if desired, before serving.
