CUCUMBER AND LEMONY DILL CREAM CHEESE TEA SANDWICHES



Cucumber and Lemony Dill Cream Cheese Tea Sandwiches image

Number Of Ingredients 6

4 ounces cream cheese, at room temperature
2 tablespoons chopped fresh dill
Zest and juice of 1 lemon
Kosher salt and freshly ground black pepper
6 slices good-quality white bread*
1/3 large English seedless cucumber (about 4 inches), thinly sliced

Steps:

  • In a small bowl, combine the cream cheese, fresh dill, lemon zest, and lemon juice. Season the mixture with salt and pepper.
  • Lay the slices of bread on your work service and distribute the cream cheese evenly among each slice, spreading into a thin layer. Arrange the cucumber slices in rows over 3 slices of the bread. Top with the remaining bread, and cut into quarters so there are 4 pieces from each sandwich. Serve immediately.

2 tablespoons mayonnaise
2 teaspoons Italian salad dressing mix
30 slices cocktail rye or pumpernickel bread
60 thin cucumber slices
Optional: Fresh dill sprigs and slivered red pearl onions

Steps:

  • Beat cream cheese, mayonnaise and dressing mix until blended; let stand 30 minutes. , Spread cream cheese mixture on bread. Top each with 2 cucumber slices and, if desired, dill and red onion slivers. Refrigerate, covered, until serving.

8 slices white sandwich bread
2 tablespoons butter, softened
1/2 English cucumber, peeled and thinly sliced
1/4 cup mayonnaise
1 tablespoon finely chopped chives
1 teaspoon yellow mustard
Kosher salt and freshly ground black pepper

Steps:

  • Spread one side of each slice of bread with a thin layer of butter. Arrange a single layer of cucumber slices on 4 of the bread slices. Stir together the mayonnaise, chives, mustard and some salt and pepper in a small bowl. Spread a thin layer of the mayonnaise mixture over the cucumbers. Top with the remaining slices of buttered bread. Cut off the crusts and cut each sandwich into three fingers.

6 slices sandwich bread
1/4 cup cream cheese
2 scallions
1 teaspoon dill
1 pinch curry powder
1 pinch paprika
salt, pepper to taste
1/4 English cucumber
1 teaspoon cream
1 dash vinegar
butter

Steps:

  • lightly butter all slices of bread.
  • dice scallions very small (including all green parts) and mix with cream cheese and all other spices.
  • spread cream cheese mix generously on 3 bread slices.
  • slice english cucumbers or zucchini with a vegetable peeler and lay on top of the cream cheese spread.
  • top sandwich with the rest of the bread slices.
  • cut the crust off the the sandwiches and cut in quarters.
  • chill for 1/2 hours before serving.

These open-faced sandwiches are perfect for showers, ladies' teas or brunches. My mom used to make these for me as a little girl for our "tea parties". I use the Neufchatel Cheese because its a lighter taste and less fat than cream cheese. They are also good topped with a single, chilled cocktail shrimp. If you can't find cocktail bread, then a regular slice will do - just cut it in half.
