CUCUMBER CREAM CHEESE SPREAD



Cucumber Cream Cheese Spread image

A creamy, yet light and refreshing spread that is perfect to use on crackers, baguettes, bagels or on top of vegetable slices.

Number Of Ingredients 5

1/2 medium size cucumber, peeled and cut into chunks
3 green onions
1 8 oz. block cream cheese, softened
1 teaspoon Worcestershire Sauce
1/8 teaspoon salt

Steps:

  • Add cucumber to food processor bowl.
  • Cut the roots off green onions and place in food processor.
  • Cover and process until coarsely chopped - be sure to not over process. You want chunks not puree/liquid.
  • Add cream cheese, Worcestershire sauce and salt to the bowl and cover and process until smooth. Transfer mixture to a serving bowl.
  • Cover and refrigerate overnight to allow the flavors to meld.

2 packages (8 ounces each) cream cheese, softened
2 teaspoons lemon juice
2 teaspoons finely chopped onion
1/2 teaspoon dill weed
1/4 teaspoon prepared horseradish
Dash hot pepper sauce
3/4 cup finely diced seeded cucumber
Assorted crackers or assorted fresh vegetables

Steps:

  • In a large bowl, beat cream cheese until smooth. Add the lemon juice, onion, dill, horseradish and pepper sauce. Fold in cucumber. Cover and chill for at least 1 hour. Serve with crackers or fresh vegetables.

1/2 cucumber

Steps:

  • 1. To make in the food processor: Trim away roots from base of green onions, place in a food processor. Add cucumber. Cover and process until coarsely chopped. Add cream cheese, worchesershire sauce and salt. Cover and process until smooth.
  • 2. Transfer to a bowl. Cover and refrigerate overnight for flavors to blend together.
  • 3. Serve on a toasted bagel or crackers.
