1 tablespoon butter
1 onion, sliced
½ cup halved cherry tomatoes
1 cup sliced mushrooms
2 cups fresh spinach
1 cup heavy cream
3 eggs
½ teaspoon salt
¼ teaspoon ground black pepper
¼ teaspoon ground nutmeg
1 cup shredded Gouda cheese

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a 9-inch pie plate with cooking spray.
  • Melt butter in a medium cast iron skillet over medium heat. Add onion; cook and stir until softened and translucent, about 5 minutes. Stir in cherry tomatoes until slightly softened, about 3 minutes. Add mushrooms and cook until tender, about 3 minutes. Mix in spinach; cook for 1 minute more.
  • Whisk cream, eggs, salt, pepper, and nutmeg together in a bowl.
  • Spread 1/2 of the Gouda cheese in the prepared pie plate and top with spinach mixture. Cover with egg mixture and sprinkle the remaining Gouda cheese on top.
  • Bake in the preheated oven until eggs are set and top is golden, about 25 minutes.

Baked over a layer of toasted breadcrumbs, it has the elegance and appeal of a classic quiche without the effort of making a pastry base.

4 cups grape tomatoes, mixed red and yellow if possible
6 tablespoons extra-virgin olive oil
1/3 cup pitted black olives, such as kalamata, halved lengthwise
1 1/2 cups day-old bread cubes (1-inch), preferably sourdough
1 cup chopped white onion (about 1 medium)
Kosher salt and freshly ground black pepper
1 lemon, zest finely grated
2 cups half-and-half
2 large eggs plus 2 yolks
3 ounces grated Emmentaler cheese (about 3/4 cup)
3 ounces grated fontina cheese (about 3/4 cup)
1 teaspoon minced fresh rosemary

Steps:

  • Preheat the oven to 450 degrees F.
  • Spread the tomatoes out in a single layer on a shallow baking pan and toss with 2 tablespoons olive oil. Roast on the top rack for 15 minutes. Add the olives and continue to roast until the tomato skins are dark brown and black in spots, about 10 minutes more. Remove from the oven and reduce the temperature to 350 degrees F.
  • Meanwhile, pulse the bread into crumbs in a food processor. Heat 2 tablespoons oil in a large skillet over medium heat; add the breadcrumbs and stir until evenly toasted, about 5 minutes. Evenly spread the crumbs in a 9-inch glass or ceramic pie pan. Place the pan on a baking sheet.
  • Wipe out the skillet, add the remaining 2 tablespoons olive oil and the onions and season with 1/2 teaspoon salt. Cook over medium-high heat until translucent and starting to brown, about 4 minutes; add the lemon zest and cook for 1 minute more. Cool slightly.
  • Whisk the half-and-half and whole eggs and yolks in a large glass measuring cup. Season with 1/2 teaspoon salt and a few grinds of pepper. Evenly spread the onions in the prepared pan. Combine the Emmentaler and fontina and scatter over the onions. Top with the roasted tomatoes and olives and sprinkle with the rosemary. Pour the custard over the fillings.
  • Bake until the quiche is just set in the center, 40 to 50 minutes. Cool completely on a rack before serving.

1/2 teaspoon dried oregano

Steps:

  • 1.Preheat oven to 350 degrees fahrenheit. 2.Grease a 9" glass pie pan. 3.Cut out a 9" circle from parchment paper and grease it and place it onto the bottom of the pie pan. 4.Beat eggs and cream together with basil and garlic in a food processor. Add sun dried tomatoes and oregano and pulse several times. 5.Pour the mixture into the prepared pan and sprinkle the Parmesan cheese over the egg mixture. 6.Place mozarella pieces in a circle 3" from the edge of the pie plate. 7.Bake for 25 minutes, or until golden and firm to the touch. 8.Let cool 10 minutes in the refrigerator before serving. Can be prepared 1 day ahead and reheated.

I used leeks and cheddar cheese because I had those on hand and it still tasted wonderful! You could add a baked crust if you want to, but it's not necessary.

1 onion, sliced
2 cups tomatoes, sliced
2 tablespoons flour
2 teaspoons dried basil or 2 tablespoons fresh basil
3/4 cup egg substitute or 3 whole eggs
1/2 cup skim milk
1/2 teaspoon black pepper (or less)
1 cup lowfat swiss cheese, shredded

Steps:

  • Preheat oven to 400°F.
  • Spray 9" pie pan with cooking spray and layer 1/2 cup of cheese on the bottom.
  • Heat olive oil in a large skillet over medium heat and saute onion until soft; layer over cheese in pie pan.
  • Sprinkle tomato slices with flour and basil, then saute 1 minute on each side; layer over onions in pie pan.
  • In a small bowl, whisk together eggs and milk, season with pepper and pour over the onion/tomato layers in the pie pan.
  • Sprinkle top of quiche with remaining 1/2 cup of cheese and bake at 400° F for 10 minutes.
  • Reduce heat to 350° F and bake for 15 to 20 minutes, or until filling is puffed and golden brown. Serve warm.

This recipe is slightly altered from Holly Clegg's "Meals on the Move", so it's meant to be fast and healthy. I only changed the garlic and basil, since I've learned to appreciate fresh ingredients. This is tasty and she says it serves 6. Maybe so, but unless it's an appetizer, I say 4 for a light lunch with some fruit on the side. Looks low carb to me, too.

1 medium onion, chopped
1 -2 clove garlic, minced
1/2 teaspoon dried basil (I use 1 T fresh chopped)
1 (12 ounce) container 2% fat cottage cheese
1 large egg
2 large egg whites
1 (10 ounce) package frozen chopped spinach, thawed and drained very well
1 cup shredded monterey jack cheese
4 roma tomatoes, sliced

Steps:

  • Preheat oven to 350 degrees F.
  • Coat a large skillet with nonstick cooking spray.
  • Over medium-high heat, saute' the onion, stirring occasionally, until tender, about 5 minutes.
  • In a food processor or blender, puree the cottage cheese with the egg and the egg whites.
  • Add to the onion mixture.
  • Mix in the spinach and cheese.
  • Spoon into a lightly oiled 9-inch pie plate.
  • Smooth the top and bake, uncovered, for 25 minutes.
  • Remove from oven and arrange the tomatoes in an overlapping circle on the top of the quiche.

4 c grape tomatoes
5 Tbsp olive oil
1/3 c kalamata olives, pitted, cut lengthwise
1 -1/2 c day old bread crumbs
1 c chopped white onion
1 lemon, zest only, finely grated
2 c half and half
2 large eggs
2 egg yolks
pinch freshly ground black pepper
3/4 c white cheddar cheese, grated
3/4 c fontana or other cheese, grated
kosher salt

Steps:

  • 1. Heat oven to 400 degrees. Put tomatoes on baking pan and toss with 1 T. Olive oil. Roast in oven for 13 minutes. Add olives, toss with olive oil in pan and roast with tomatoes another 10 min, until tomatoes have some black spots. Reduce heat to 350 degrees and remove pan.
  • 2. Meanwhile pulse bread cubes into crumbs in food processor. Heat 2 T. oil in skillet and saute bread crumbs over medium heat about 5 min. until lightly toasted. Evenly spread crumbs in 9 inch Quiche or pie pan. Place pan on a baking sheet.
  • 3. Wipe skillet out, add 2 T. oil and add chopped onion and season with 1/2 tsp. salt. Cook until starting to turn brown. Add lemon zest. Cook 1 minute more.
  • 4. Whisk eggs, yolks and half and half together, Season with salt and pepper to taste.(omit salt if using a salty cheese). Evenly spread onions over crumbs in pan. Combine cheeses and spread over onions. Add tomatoes and olives, Sprinkle with Rosemary and pour egg mixture over.
  • 5. Bake at 350 until center is just set, 40-50 minutes. Cool on rack before serving.
