●Nonstick cooking spray
●3/4 cup granulated sugar
●1 teaspoon ground cinnamon
●1/2 teaspoon salt
●1/2 teaspoon ground ginger

● 1 can (12 fluid ounces) NESTLÉ® CARNATION® Evaporated Milk

Steps:

  • Preheat oven as directed below. Glass baking dishes without crust require a cooler oven, and in most cases, a longer baking time.
  • Spray with nonstick cooking spray or lightly grease bottom of baking pan or glass baking dish.
  • Prepare filling as directed on 15-ounce or 29-ounce can of LIBBY'S® 100% Pure Pumpkin. Pour into pan or dish.
  • Bake as directed below or until knife inserted near center comes out clean.
  • Cool on wire rack for 2 hours. Serve immediately or refrigerate.

Nonstick cooking spray, for the pie dish
One 15-ounce can pure pumpkin puree
1/2 cup packed light brown sugar
1/2 cup granulated sugar
1 teaspoon pumpkin pie spice
1 teaspoon pure vanilla extract
1/2 teaspoon kosher salt
3 large eggs
1 cup half-and-half
Lightly sweetened whipped cream, for serving
Chopped candied pecans, for serving

Steps:

  • Preheat the oven to 325 degrees F. Spray a 9-inch ceramic or glass pie dish with cooking spray.
  • Put the pumpkin puree in a large bowl and add the brown sugar, granulated sugar, pumpkin pie spice, vanilla, salt and eggs; whisk to combine. Add the half-and-half and whisk until thoroughly incorporated.
  • Pour the pumpkin mixture into the prepared pie dish and set the dish on a rimmed baking sheet. Bake the pie on the baking sheet until the center is just barely set, 1 hour and 10 minutes to 1 hour and 20 minutes. Transfer the pie to a rack to cool completely, then serve topped with whipped cream and sprinkled with candied pecans.
  • If not serving right away, lightly cover the cooled pie with plastic wrap and refrigerate for up to 2 days.

¾ cup granular sucralose sweetener (such as Splenda®)
½ cup egg substitute
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
½ teaspoon ground ginger
½ teaspoon ground nutmeg

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a pie dish.
  • Beat pumpkin puree, milk, sweetener, egg substitute, vanilla extract, cinnamon, ginger, and nutmeg in a bowl until smooth; pour into prepared pie dish.
  • Bake in preheated oven until set, about 30 minutes.

1 can (12 ounces) fat-free evaporated milk
1/2 cup egg substitute
2 egg whites
Sugar substitute equivalent to 3/4 cup sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground allspice
1/4 teaspoon ground ginger
1/8 teaspoon salt
1/2 cup reduced-fat graham cracker crumbs (about 3 whole crackers)
Reduced-fat whipped topping and additional cinnamon, optional

Steps:

  • In a large bowl, beat the first nine ingredients until well blended. Stir in cracker crumbs., Pour into a 9-in. pie plate coated with cooking spray. Bake at 325° for 50-55 minutes or until a knife inserted in the center comes out clean. Cool completely on a wire rack. Garnish each serving with whipped topping and cinnamon if desired. I got this recipe from my weight watchers group. I admit I do prefer traditional pumpkin pie but this is pretty good. All the ingredients are core, too, even though baked goods don't qualify as core due to abuse potential.

1 (15 ounce) can pumpkin puree (note not pie filling)
1 (12 ounce) can evaporated skim milk
3/4 cup egg white
3 teaspoons pumpkin pie spice
1 teaspoon vanilla
2/3 cup Splenda granular
Pam cooking spray

Steps:

  • Preheat oven to 400°F.
  • Combine all ingredients.
  • Spray 9" pie plate with Pam.
  • Pour mixture into pie plate.
  • Bake at 400 F for 15 minutes.
  • Reduce heat to 325 F and continue baking for about 45 minutes or until a knife comes out clean.
  • Slice into 8 pieces.

1 cup light soymilk, I use Silk Plain Light
1/2 cup Better 'n Peanut Butter spread
1/2 cup fat free egg substitute
1/2 cup Bisquick reduced-fat baking mix
1/2 cup Splenda granular, sugar substitute
2 teaspoons pumpkin pie spice
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees.
  • Spray a 9-inch pie baking dish with non-stick spray.
  • Combine all ingredients in a blender container. Process until smooth, scraping down sides as needed.
  • Pour into the prepared baking dish.

14 g unflavored gelatin (2 packets)
2 tablespoons water
1 (14 1/2 ounce) can evaporated 2% milk
1 (15 ounce) can pumpkin
1/2 cup brown sugar
1 teaspoon vanilla
1 teaspoon cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon nutmeg
1/8 teaspoon allspice
1/8 teaspoon clove

Steps:

  • In a meduim bown, add gelatin to water, allowing to settle until softened, 5-10 minutes.
  • In a small saucepan, bring 1 c of the milk just to boiling and gradually add to gelatin, stirring constantly.
  • Stir in the remainder of the ingredients.
  • Pour mixture into greased (I recommend using cooking spray) 9" pie plate.
  • Refrigerate 3-4 hours or until firm. Garnish as desired and serve.
