POTATO AND BACON CRUSTLESS QUICHE

This is a wonderfully flavorful, light, and creamy quiche which is very hearty and stick-to-your-ribs thanks to the addition of the diced potato! I like to bake up a couple extra potatoes any time I'm baking some and keep them in the refrigerator, for recipes just like this one! You can change up the cheese to any flavor you'd prefer.

nonstick cooking spray
8 large eggs
1 ¼ cups heavy cream
1 cup milk
1 teaspoon garlic powder
1 teaspoon ground black pepper
¾ teaspoon salt
2 medium cold baked potatoes
1 cup shredded Cheddar cheese
5 slices bacon, cooked crisp and chopped

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a deep dish pie pan with nonstick cooking spray and set aside.
  • Combine eggs, cream, milk, garlic powder, pepper, and salt in a large bowl. Whisk together until well blended. Dice baked potatoes. Stir potatoes and Cheddar cheese into egg mixture. Pour the mixture into the prepared pie pan.
  • Bake in the preheated oven for 45 minutes. Remove and sprinkled the cooked, chopped bacon over the top. Return to the oven to continue to bake until the middle is cooked through and no longer very jiggly (a little bit of wiggle is ok - but eggs should be cooked through), 15 to 30 minutes. Allow to cool and set for at least 15 minutes before slicing and serving.

5 eggs, beaten
3 cups frozen hash brown potatoes, thawed
1 cup shredded cheddar cheese
1 green onion, chopped
1/4 teaspoon salt
1/8 teaspoon pepper
1 dash hot pepper sauce
1 dash paprika
6 slices bacon, cooked and crumbled

Steps:

  • Heat oven to 350°F.
  • Grease a 9-inch pie plate.
  • In a large bowl combine all ingredients except paprika and bacon; mix well.
  • Pour into greased pie dish.
  • Sprinkle with paprika.
  • Bake for 30 to 40 minutes or until set.
  • Sprinkle with bacon.
  • Bake additional 5 minutes.
  • Let stand 5 minutes before serving.

3 cups frozen hash browns
10 eggs
1/2 cup cottage cheese
1/2 teaspoon oregano
1/4 teaspoon garlic powder
4 green onions, chopped
1/3 cup green pepper, diced
1/2 cup sliced mushrooms
12 slices cooked bacon, crumbled
1 cup mozzarella cheese, shredded
1/2 cup cheddar cheese, shredded
1/2 tomatoes, diced

Steps:

  • Preheat oven to 350^. Spray 11x7 glass baking dish w/cooking spray. In baking dish, layer potatoes.
  • In medium bowl, beat eggs, cottage cheese, oregano, and garlic powder w/wire whisk until well blended. Add green peppers, mushrooms, cooked bacon, and onions (withhold a few tablespoons of the green chives to sprinkle on top after baking).
  • Pour egg mixture over the top of the hashbrowns. Top with shredded cheese. Bake for 30 minutes, or until knife inserted in center comes out clean. Top with the remaining chives and tomatoes, if desired. Let stand 5-10 minutes before cutting.

2 teaspoons olive oil
1 red onion, cut into thin wedges
1 garlic clove, chopped
600 g sweet potatoes, peeled and cut into 1 . 5 cm cubes (kumera)
2 1/2 cups baby spinach leaves, I used 150grams (measure firmly packed)
1 cup milk
6 eggs
200 g feta cheese, crumbled, can use low-fat fetta if desired
1/2 teaspoon nutmeg
fresh ground black pepper
1/4 cup grated parmesan cheese
2 tablespoons pine nuts (optional)

Steps:

  • Grease a large flan dish, approximately 25-27cm in diamater.
  • Heat the olive oil in a large non-stick frying pan, add onion and garlic and cook 1 minute.
  • Add sweet potato and cook over moderate heat, stirring occasionally until golden brown, this should take about 10 minutes.
  • Add spinach and cook, stirring 1 minute until spinach is wilted. Cool.
  • Add feta cheese, stir to combine and place into prepared flan dish.
  • Beat the 6 eggs in a large jug with milk, nutmeg and pepper and pour over vegetables in flan dish.
  • Sprinkle with parmesan cheese and pinenuts and bake in a moderate oven 180°C 35-40 minutes until puffed and golden.
  • Allow to stand for 5-10 minutes before slicing.
  • Serve cut into wedges with a salad on the side, veges, chips or crusty bread rolls.

A crustless potato quiche that resembles scalloped potatoes, but can be served in a thin wedge as a brunch side dish with a dollop of sour cream on the side. **Salt and pepper per your taste; just remember to salt every layer.

4 medium potatoes (enough for 3 layers)
1 medium-large tomato, sliced very thin, seeds removed (approx. 7-8 slices)
2 Tbsp minced chives (or can use minced green onions (green part only) plus more for topping
1 Tbsp parsley for topping
1 1/2 c whipping cream
1/4 tsp cinnamon
1/8 tsp allspice
2 eggs, lightly beaten
3 thin slices butter cut into quarters for dotting top of quiche
salt & pepper for each layer
sour cream to serve on the side

Steps:

  • 1. Using a mandolin, slice potatoes thin (you will need enough slices for three layers). You will need a quiche dish with high sides. Butter sides and bottom of dish and begin potato layers in a circular fashion (overlapping one another) until bottom is covered. Salt and pepper to taste.
  • 2. Apply next layer of potatoes, completely covering the first layer. Add salt and pepper. Next place tomato slices (seeds removed) on top of second potato layer -- you will need approx. 7-8 slices. Add salt and pepper to taste. Sprinkle with minced chives or green onions (green part only).
  • 3. Layer one additional layer of the potato slices and cover tomatoes completely. Add salt and pepper to taste.
  • 4. In a 2 cup measuring cup, measure 1 1/2 cups whipping cream. Add 1/4 tsp. cinnamon and 1/8 tsp. allspice. Lightly beat 2 large eggs and then add to cream mixture. Mix thoroughly.
  • 5. Pour cream mixture evenly over quiche and allow the cream to permeate the layers. Dot top of quiche with thin slices of butter that have been quartered (6-8 small pieces). Garnish with additional green onions and parsley.
  • 6. Bake at 350 degrees for approximately 35-45 minutes or until firm. Cut into thin slices and serve as a brunch side dish with a dollop of sour cream on the side.

This Tex-Mex-inspired Crustless Potato Jalapeño Quiche is filled with potatoes, onions, jalapeños, and cheddar cheese.

1 teaspoon olive oil
½ onion (diced small)
1 medium Yukon Gold potato (about 8 ounces, diced small)
1 jalapeño (halved)
1 teaspoon chili powder
½ teaspoon smoked paprika
1 cup grated Pepper Jack or Colby Jack cheese
5 large eggs
⅔ cup 2% milk
¼ cup half-and-half
1 teaspoon kosher salt
Your favorite toppings (like salsa, chopped cilantro, and sliced avocado)

Steps:

  • Preheat the oven to 350 degrees. Spray a pie dish with oil and set it aside.
  • Slice half of the jalapeno in thin slices, dice the remaining removing the seeds.
  • In a small skillet over medium heat, add the olive oil.
  • Saute the onion and potato for about 5 minutes, until they're starting to soften.
  • Add the minced jalapeño, chili powder, smoked paprika to the pan and sauté for another 30 seconds to 1 minute, until fragrant.
  • Spread the cooked vegetables in an even layer in the pie plate.
  • In a mixing bowl, whisk the eggs to break them up, then add the milk, half and half and salt.
  • Pour the custard into the pie dish, and sprinkle the cheese all over.
  • Top with jalapeno slices and bake for 35 to 40 minutes, just until the center is set.
  • Cut the quiche into 6 slices and serve.
