Steps:
- Preheat the oven to 375 degrees F.
- Spray 2 mini muffin tins (each with 24 cups) with nonstick spray. Whisk the eggs, milk, pepper, and salt in a large bowl to blend well. Stir in the ham, cheese, and parsley. Fill prepared muffin cups almost to the top with the egg mixture. Bake until the egg mixture puffs and is just set in the center, about 8 to 10 minutes. Using a rubber spatula, loosen the frittatas from the muffin cups and slide the frittatas onto a platter. Serve immediately.

Really, after you have the quiche mix down you can replace the other ingredients with whatever you like. My husband happens to like the sausage and cheese. Weight Watchers: 3 points per muffin when using low fat sausage, cheese and baking mix and fat free milk.

Steps:
- Preheat oven to 350.
- Brown sausage, breaking with a spoon. Drain well.
- Mix egg, milk and baking mix. Season with salt and pepper.
- Divide egg mixture between 12 greased muffin tins.
- Divide sausage between muffin tins and cover with cheese.
- Bake 15-20 minutes or until tooth pick inserted comes out clean.
- Freeze left over muffins in single serving zip top bags. To reheat, place frozen muffins in microwave for approximately 60 seconds.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a 12-cup muffin tin.
- Place green onions and bell peppers into a large mixing bowl. Add eggs, bacon, milk, garlic powder, onion powder, salt, and pepper. Sprinkle Cheddar cheese into the bowl and whisk ingredients together until incorporated.
- Pour mixture equally into the prepared muffin cups.
- Bake in the preheated oven until a toothpick inserted into the center of a muffin comes out clean, about 30 minutes. Let cool slightly before serving.

Steps:
- Preheat oven to 350°F Spray a 12 cup regular muffin pan very well with cooking spray or use paper liners. I like to use a Pampered Chef muffin pan because it releases better, but a non-stick metal one will also work.
- Beat eggs with egg substitute and season with salt and pepper. Divide equally in muffin pan. Add 1 Tablespoon each of ham, cheese and pepper to each muffin cup.
- Bake for about 30 minutes. Test with toothpick.
- Serving is 3 muffins for a Curves Complete Phase 2 Breakfast option. Add a fruit or starch exchange for a complete breakfast. Reheats well in microwave, but use 50% power so egg doesn't get rubbery.
