butter for ramekins
sea salt
2 c broccoli florets, 1 inch pieces
6 large eggs
½ c half-and-half
ground pepper
1/8 tsp ground nutmeg
3/4 c shredded cheddar cheese

Steps:

  • 1. Butter four 8-ounce ramekins (or a 9-inch pie dish); set aside. Bring a medium pot of salted water to a boil. Add broccoli; cook 1 minute. Drain well. Transfer to a cutting board and blot dry with paper towels. Chop coarsely.
  • 2. In a large bowl, whisk together eggs, half-and-half, 1/2 teaspoon salt, 1/4 teaspoon pepper, and nutmeg. Stir in broccoli and cheese.
  • 3. Place ramekins on a rimmed baking sheet. Ladle broccoli mixture into ramekins, dividing evenly. Bake in a preheated 350º oven until golden brown, about 35 to 40 minutes.

6 eggs
½ cup heavy cream
½ teaspoon sea salt
¼ teaspoon ground black pepper
¼ teaspoon ground nutmeg
1 (8 ounce) package broccoli florets, chopped
1 yellow onion, chopped
1 cup shredded Cheddar cheese
1 ½ cups water

Steps:

  • Grease a 1 1/2-quart souffle dish with butter.
  • Whisk eggs, cream, salt, pepper, and nutmeg in a bowl. Stir in broccoli, onion, and Cheddar cheese. Pour egg mixture into the prepared souffle dish.
  • Turn on a multi-functional pressure cooker (such as Instant Pot®). Pour water into the pot and insert the trivet. Place the prepared dish on the trivet with an aluminum foil sling, folding its ends on top. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 25 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, about 10 minutes. Complete releasing pressure using the quick-release method, about 5 minutes. Open and remove the lid. Lift quiche by grabbing the ends of the foil sling. Let cool for 5 minutes.

10 ounces frozen chopped broccoli, thawed, drained
2 cups cholesterol-free fat-free liquid egg product
1/2 cup breakstone's low fat cottage cheese
1/2 cup shredded kraft reduced fat 2% cheddar cheese
1/8 teaspoon black pepper

Steps:

  • Preheat oven to 350. Heat oil in small nonstick skillet on medium-high heat. Add onions; cook 5 minutes or until onions are tender, stirring occasionally. Add broccoli; mix well. Spoon into 9-inch pie plate sprayed with cooking spray.
  • Mix remaining ingredients until well blended; over broccoli layer.
  • Bake 45-50 minutes or until center is set and top is golden brown.
