2 eggs
1 cup sugar
1/2 cup butter (softened) or 1/2 cup margarine (softened)
1/2 cup flour
3 tablespoons baking cocoa
1 teaspoon vanilla
1/4 teaspoon salt
1/2 cup chopped walnuts (optional) or 1/2 cup pecans (optional)

Steps:

  • Dump all ingredients (yep, just dump!) except nuts, into one bowl.
  • Beat with a mixer (or by hand) for 4 minutes.
  • Add nuts and pour into an 8" sprayed pie pan.
  • Bake 30 minutes at 350°F.
  • The pie will settle in the middle as it cools. It's supposed to do this!
  • Cut into wedges and serve with whipped topping or a la mode with a scoop of ice cream.

I'm not sure where I came across this recipe but it is easy and my whole family loves it. It is great severed warm with ice cream. You can use up to a half cup of cocoa depending on how chocolatey you would like it.

1 c sugar
1/2 c flour
1/4 c cocoa powder
1/2 c margarine or butter
1 tsp vanilla extract
pinch of salt
2 eggs
1/2 c walnuts or pecan chopped

Steps:

  • 1. per heat oven to 325 and spray a 9inch pie pan with cooking spray ( I use butter flavored)
  • 2. At medium speed mix the sugar and butter adding eggs one at a time.Then add the flour, salt and cocoa. Add vanilla and the nuts last.
  • 3. Pour into 9 inch pie pan and bake 35 to 40 minutes till toothpick comes out clean.

I made this for my Mom's birthday, instead of a regular cake. I also garnish it with Nestle's Nesquick chocolate syrup, but there are many toppings that you can use. I got this recipe from Healthy Meals in Minutes.

2/3 cup unsweetened cocoa powder
1/2 cup all-purpose flour
1/2 teaspoon baking powder
1/2 cup firmly packed light brown sugar
1/2 cup granulated sugar
1/4 cup vegetable oil
4 egg whites
2 teaspoons vanilla extract
2 tablespoons chopped walnuts (opitional)
fresh strawberries, and
low-fat vanilla frozen yogurt, to top

Steps:

  • Preheat oven to 325f Spray an 8" pie plate with cegetable cooking spray.
  • In a large bowl mix together cocoa, flour and baking powder.
  • In another bowl wisk together brown sugar, granulated sugar,oil,egg whites and vanilla until blended.
  • Add the sugar mixture to the dry mixture and stir until blended.
  • Pour into prepared pan and sprinkle walnuts.
  • Bake until just set and toothpick inserted in center comes out clean.
  • (about 25-30 mins).
  • Cool on wire rack.
  • Cut into wedges and garnish with Strawberries and yogurt.

Adapted from "Take Big Bites" by Linda Ellerbee. This is a crustless pie- something like a brownie. Top it with a scoop of ice-cream and some berries- sinful.

2 ounces unsweetened chocolate (or 2 ounces of high-cocoa-content bittersweet chocolate)
1/2 cup butter
1 cup sugar
1/4 cup flour
2 eggs
1 teaspoon vanilla
1/4 teaspoon salt

Steps:

  • Preheat oven to 375 degrees. Place chocolate and butter in a 4 cup Pyrex measure or microwave-safe bowl. Place in microwave and heat on high, for 1 minute, stir, and heat for 30 seconds more. Let sit for a minute or so and stir until chocolate dissolves completely.
  • Add sugar, flour, eggs, vanilla, and salt. Stir until well combined.
  • Pour into lightly oiled 9 inch pie pan.
  • Bake for 25 minutes. Let cool for as long as you can wait. If you can't wait, vanilla ice cream helps cool a slice of pie on your plate.
