1-1/2 cups soft bread crumbs
2 tablespoons minced fresh parsley
1 tablespoon minced fresh thyme or 1 teaspoon dried thyme
2 garlic cloves, minced
1 teaspoon grated lemon zest
1/2 teaspoon salt
1/4 teaspoon lemon-pepper seasoning
1/4 teaspoon paprika
1 tablespoon butter, melted
4 salmon fillets (6 ounces each)

Steps:

  • Preheat oven to 400°. In a bowl, combine first 8 ingredients. Toss with melted butter., Place salmon in a 15x10x1-in. baking pan coated with cooking spray, skin side down. Top with crumb mixture, patting gently. Bake until golden brown and fish just begins to flake easily with a fork, 12-15 minutes.

4 skinless salmon fillets (1 lb.)
1 Tbsp. lemon juice
1/4 cup KRAFT Real Mayo
2 Tbsp. KRAFT Grated Parmesan Cheese
1/8 tsp. ground red pepper (cayenne)
10 round buttery crackers, crushed (about 1/2 cup)
1 cup thinly sliced cucumbers
1/4 cup thinly sliced red onions
2 Tbsp. KRAFT Zesty Italian Dressing
1/2 tsp. dill weed

Steps:

  • Heat oven to 400°F.
  • Place fish in 13x9-inch baking dish; drizzle with lemon juice. Mix mayo, cheese and red pepper; spread over fish. Sprinkle with cracker crumbs.
  • Bake 12 to 14 min. or until fish flakes easily with fork. Meanwhile, combine remaining ingredients.
  • Serve fish with vegetable mixture.
