2 large cans chicken (or the equivalent of fresh shredded chicken)
2 cups shredded cheddar cheese (Reserve some for the top.)
½ cup - 1 cup Frank's Buffalo Hot Sauce (I use ½ cup because I'm a wimp.)
1 cup sour cream
1 block (8 oz) cream cheese, softened

Steps:

  • Set aside some of the cheddar cheese for the top.
  • Mix all other ingredients in a bowl thoroughly.
  • Smooth the mixture into a greased casserole dish and top with the rest of the cheddar cheese.
  • Bake at 350 degrees for 20-30 minutes until the cheese is melted and the mixture is beginning to bubble.
  • Serve with crackers or chips. Best served warm.

2 (8 ounce) packages cream cheese, softened
1 cup blue cheese dressing
¾ cup Buffalo sauce

2 cups shredded cooked chicken (from about 1/2 rotisserie chicken)
1 1/2 cups cottage cheese
1/2 cup Buffalo-style hot sauce
6 ounces grated pepper jack (about 3 cups)
6 ounces grated mild Cheddar (about 3 cups)
1/4 cup crumbled blue cheese
Rainbow baby carrots, celery sticks and assorted crackers and chips, for serving

Steps:

  • Preheat the oven to 350 degrees F.
  • Combine the chicken, cottage cheese, hot sauce, pepper jack and Cheddar in a large bowl and mix well. Transfer to an 8-inch square baking dish, spreading it into an even layer. Sprinkle all over with the blue cheese and bake until hot and bubbly, about 35 minutes.

This is requested every time we have friends over- we all LOVE it! I serve it with restaurant style tortillas chips and large Fritos corn chips. Use Frank's Red Hot Sauce or Buffalo sauce depending on your tastes. I use the regular as it has less of a vinegar bite.

4 boneless skinless chicken breasts, boiled and shredded
1 (12 ounce) bottle Frank's red hot sauce (or Buffalo)
1 (8 ounce) package cream cheese
2/3 cup ranch dressing
1/2 cup celery, chopped
1 cup monterey jack cheese, shredded (or cheddar or combination of)

Steps:

  • In a 13x9 baking pan, combine the shredded chicken with the entire bottle of hot sauce, spreading to make an even layer.
  • In a saucepan, combine the cream cheese and ranch dressing over medium heat until smooth.
  • Pour the cream cheese/ranch mixture evenly over the chicken. Sprinkle with the celery and then cheese.
  • Bake uncovered at 350* for 30-40 minutes until bubbly, making sure that the top does not brown.
  • Let stand 10 minutes before serving.
  • Serve hot or warmed with tortilla chips, Fritos and celery!
