I work 12 hour shifts, so I'm always looking for recipes that are quick, easy, and low maintenance. I threw this together the other day with stuff I found in the fridge, and it turned out great! I like really spicy stuff, so I tend to use a lot of cayenne. Play with the ingredients to find your taste!! :)

3 chicken breasts
16 ounces of any pasta sauce (I like the fire roasted tomato and garlic)
2 tablespoons garlic powder
1 tablespoon ground cayenne pepper
2 teaspoons salt
1 red bell pepper, chopped
1 green bell pepper, chopped
1 medium onion, chopped
parmesan cheese (top when serving) or mozzarella cheese (top when serving)

Steps:

  • place chicken breasts on bottom of pot.
  • Add pasta sauce, spices, and vegetables to crock pot.
  • Cook 8-10 hours in crock pot until chicken is fully cooked.
  • Serve with parmesean or mozzarella cheese on top.
  • This dish can also be frozen for a great tasting "TV Dinner". How easy is that? :).

Lots of vegetables gives this sauce a meat sauce look but isn't. I had friends come over while it was cooking and taste it a thought it was a meat sauce. I great way to get a variety of vegetables into your family without the I don't like that veggie! This freezes well so you can divide into freezer bags for future use (if it lasts). Use on pasta, in stew, bean dishes, top a pizza, or in soups. This can make this on your stove top as well.

3 -4 tablespoons olive oil
1 onion, diced
1 carrot, diced
6 garlic cloves, minced
1 stalk celery, diced
1 pepper, diced
1 large eggplant, peeled and diced
1 large portabella mushroom, gills removed and diced
3 (28 ounce) cans crushed tomatoes
2 tablespoons dried Italian herb seasoning
1 tablespoon sugar
1 teaspoon salt
1 teaspoon pepper
4 fresh basil leaves, roughly torn
1 tablespoon fresh parsley, roughly torn

Steps:

  • Heat oil in a large deep heavy bottom pot over medium high heat.
  • Add next 7 ingredients and saute till almost tender about 10 minutes stirring frequently.
  • Transfer to a large crock pot add tomatoes, dried seasoning, sugar, salt, and pepper.
  • Cook for 5-6 hours on high stirring ever so often.
  • If it starts to stick to bottom turn to low or finish by adding the fresh herbs.
  • If you`re not around to stir cook on low till desired thickness.

2 lbs ripe tomatoes, peeled and cored
2 tablespoons unsalted butter
1 medium chopped onion
1 garlic clove, minced
1 teaspoon salt (to taste)
1 tablespoon chopped basil (fresh is best)
oregano
rosemary
1 pinch sugar

Steps:

  • Peel and coarsely chop tomatoes. Do this by hand and not food processor. Transfer tomatoes to a slow cooker.
  • Melt butter over medium heat in a medium skillet. Add the onion and garlic, and saute until softened but not browned. Scrape into slow cooker.
  • Cover and cook on low for 2 to 3 hours.
  • At the end of the cooking time, stir in herbs. Cover and cook an additional 10 minutes. Taste for salt and add the sugar, if desired. Serve on top of your favorite pasta, you will have enough sauce for 1 lb of pasta.
  • I also add olives to the sauce, during the last phase of cooking. Whatever is left over, I freeze.
  • Another great tip -- when peeling the tomatoes use a vegetable peeler (one suited for softer skin) and it will make life so much easier!

3 lbs rump roast, rinsed and patted dry
salt and pepper
1 1/2 cups garlic and herb spaghetti sauce (i.e. Ragu, Prego)
3/4 cup madeira wine
1 teaspoon minced garlic
1 1/2 cups frozen pearl onions
1 cup frozen carrots, slices cut in chunks or 1 cup fresh carrot, cut in chunks

Steps:

  • Heat the olive oil in a large frying pan on medium-high heat.
  • Season the roast with salt and pepper.
  • Brown the roast on all sides, remove to a plate, and set aside.
  • NOTE: If you are running low on time, skip browning the roast.
  • In a medium bowl, combine the tomato sauce, Madeira, and garlic. Set aside.
  • To a slow cooker add the onions and carrots.
  • Add the browned roast and any accumulated juices.
  • Pour the sauce mixture over the top of roast.

Very easy, I think it tastes best when cooked slow and I found with my slow cooker I had to cook for an hour or two longer than the recipe says. My hubby loves this recipe! If you have used up all the reserved fluid and need extra fluid while cooking, in particular when on high, use up to 1/2 cup of tomato juice. Prep time does not include the bean soak.

1 lb dried navy beans
5 cups water
5 -6 pieces bacon
1 cup tomato juice
1/2 cup onion, chopped
1/4 cup ketchup
1/4 cup molasses
1/4 cup brown sugar
1/2 teaspoon dry mustard
1/4 teaspoon seasoning salt
1 1/2 teaspoons pepper, ground mixture
1 teaspoon chili powder

Steps:

  • Soak beans overnight in large bowl.
  • Drain, put in large pot and cover with 5 cups of water. Simmer over medium low heat until tender, about 1 hour.
  • Drain beans reserving 2 cups of liquid.
  • Add beans to slow cooker.
  • In a skillet over medium high heat fry bacon until browned, chop and stir into beans.
  • Combine juice, chopped onion, ketchup, molasses, brown sugar, dry mustard, salt, pepper and chili, add to beans and stir well.
  • Cover and cook on low for 7 to 9 hours. Until beans are tender and flavourful.
  • Check and add a little of the reserved liquid as necessary.

1 garlic clove, crushed

So easy and so good! Note: I made a very quick tomato sauce for this. You can use jar sauce if you'd like but since this sauce only takes 20 minutes to cook, I think it's worth the effort because it really does make a difference. I served this with a side salad and garlic bread.

1 (28 ounce) can crushed tomatoes (I used tuttorosso brand no salt added)
1 medium whole onion, skin removed
4 garlic cloves, smashed
2 teaspoons sea salt
1/4 teaspoon crushed red pepper flakes
1/4 cup unsalted butter
2 (10 ounce) boxes frozen spinach, thawed and squeezed dry of all liquid
1 (15 ounce) jar ricotta cheese (I use sorrento brand)
1/4 teaspoon fresh ground black pepper
1/4 cup grated parmesan cheese
2 tablespoons olive oil
cooking spray, for greasing crock pot
1 egg
1 (16 ounce) box ziti pasta, rinsed with cold water in collander

Steps:

  • For the sauce:.
  • Heat a medium sauce pan over medium heat. Add olive oil and garlic. Brown garlic about 2 minutes then discard the garlic but reserve the oil. To the garlic flavored oil, add the crushed tomatoes, whole onion, butter, 1 teaspoons sea salt, and crushed red pepper flakes. Bring to a boil, then reduce to simmer partially covered for 20 minutes. Remove onion and discard when done.
  • In a large bowl, combine ricotta cheese, egg, spinach, 2 tablespoons parmesan cheese, 1 teaspoons salt and fresh ground black pepper. Mix well to combine. Add ziti, toss to combine.
  • Spray the crock pot with cooking spray. Add about 1/2 cup of sauce, then add 1/4 of the pasta mixture. Repeat 3 more layers (4 layers in total) ending with sauce. Sprinkle 2 tablespoons of parmesan cheese over the top.
  • Cover and cook on low for 4 to 5 hours depending on your slow cooker.
  • If you have any sauce left over. Save it in case you want to add more to the finished dish.

This inspiration for this recipe was from my Italian relative. This is a very simple, delicious and authentic Italian tomato sauce, but instead of cooking it on the stove you prepare it in a crock pot. It makes alot so I like to freeze it in smaller batches, it freezes beautifully.

1 (8 ounce) carton vegetable stock
1/2 cup water
1 medium onion, finely diced
2 teaspoons rosemary

This recipe was created as part of the ZWT 8 Crock Pot challenge where you had to convert a recipe into a recipe cooked in a crock pot. The original recipe was posted by Magpie Diner - recipe #483372. The orignal recipe called for 1/3 cup of olive oil which I reduced to 1 tbsp as well as fresh thyme and marjoram, which I switched to chives and parsley. I used roma tomatoes and blended the sauce for a consistent texture

1 tablespoon olive oil
1 cup onion, finely chopped
2 garlic cloves, minced
2 bay leaves
11 roma tomatoes, chopped (should yield about 6 cups)
salt (to taste)
pepper (to taste)
2 tablespoons fresh parsley
2 tablespoons fresh chives
2 tablespoons tomato paste

Steps:

  • Heat olive oil in pan and saute onions until translucent, about 7 minutes.
  • Add garlic and saute for another 2 minutes.
  • Add the onion/garlic mixture into crock pot along with bay leaves, tomatoes, salt and peper to taste.
  • Cook in crock pot on high for 90 min and reduce to low for 30 minute.
  • Remove bay leaves.
  • Blend tomatoes with hand blender - this step is optional, if you like a chunky sauce
  • Add fresh herbs of your liking and stir in tomato paste.

Steps:

  • Throw everything in the crock pot and cook on high for at least 3 hours. If the sauce seems thin , you can thicken it with a tablespoon of arrowroot. You can also uncover and let it reduce while cooking.
