1 large onion, chopped (1 cup)
1 can condensed cream of mushroom soup
1 can condensed cream of onion soup
1 (8 ounce) can sliced mushrooms, drained
1/4 teaspoon pepper
1 (8 ounce) container cream cheese, cubed
1 (8 ounce) container sour cream
6 cups hot cooked noodles or 6 cups rice, for serving,if desired

Steps:

  • Mix beef, onion, soups, mushrooms and pepper into slow cooker.
  • Cover and cook on low heat for 8 to 10 hours or until beef is very tender.
  • Stir cream cheese and sour cream into beef mixture until cream cheese is melted.
  • Serve beef mixture over noodles.

This is one of the many recipes that I wrote down while attending my Weight Watchers meetings. Very easy to throw together in the morning and have a wonderful meal when you get home from work. The original recipe calls for 98% fat-free cream of mushroom soup but I prefer the chicken. Either one can be used interchangeably.

1 (10 3/4 ounce) can 98% fat-free cream of chicken soup (feel free to use the cream of mushroom here instead)
1 (16 ounce) container nonfat sour cream
1 (1 1/4 ounce) envelope onion soup mix

Steps:

  • Place the frozen chicken in the bottom of a crockpot.
  • Mix the other ingredients together in a separate bowl and pour it over the chicken.
  • Cover and cook on low for 7 hours.

2 teaspoons salt
1/8 teaspoon pepper
1/2 teaspoon dry mustard
2 medium onions, thinly sliced and separated into rings
2 (4 ounce) cans mushrooms, sliced, drained or 1/2 lb fresh mushrooms, sliced
1 (10 1/2 ounce) can condensed beef broth
1/4 cup dry white wine or 1/4 cup water
1 1/2 cups sour cream
1/4 cup flour

Steps:

  • Trim all excess fat from steak and cut meat into 3" strips about 1/2" wide.
  • Combine 1/2 cup flour, salt, pepper and dry mustard; toss with the steak strips to coat thoroughly.
  • Place coated strips in crock pot; stir in onion rings and mushrooms.
  • Add beef broth and the wine or water; stir well.

1 lb cube steak (with 4 pieces)
1 cup flour
1 teaspoon salt (or to taste)
1 teaspoon pepper (or to taste)
2 tablespoons oil (for browning)
1 (10 1/2 ounce) can condensed cream of mushroom soup
2 -4 tablespoons sour cream

Steps:

  • Rub the cube steak with salt and pepper mixture.
  • Flour the cube steak.
  • Brown the cube steak over Medium heat on both sides.
  • Prepare the soup in a pot according to package direction. Heat through.
  • Add sour cream to the mushroom soup and stir until incorporated.
  • In the crock pot, layer a bit of soup mixture, cube steak, soup, cube steak and top with remaining soup mix. (You may also just dump the soup mixture over the cube steak in the crock pot).
  • Cook on low for up to 6 hours or high for 3 hours. (crock pot only).

If you use sliced mushrooms...they get too mushy. So add them in the last hour if using sliced.

6 skinless chicken thighs
1/4 cup white wine
1 (10 ounce) can cream of mushroom soup
2 (4 ounce) cans sliced mushrooms, rinsed and drained
1 cup creme fraiche (or sub with sour cream)
1/4 cup flour
salt and pepper, to taste
1 lb egg noodles, cooked

Steps:

  • Place chicken, mushrooms, wine and soup in the crock pot and stir. Cover and cook on high for 3-4 hours (or 7-9 hours on low).
  • Half an hour before serving, mix the creme fraiche and flour. Remove the bones now if you did not use boneless thighs.
  • Add the creme fraiche and flour mixture to the chicken and gravy and stir until the chicken falls apart into fork-sized pieces.
  • Add salt and pepper to taste. Continue to cook for 30 minutes on low.

1-2 lbs cube steak, cut into one-inch pieces; or 1-2 lbs stew beef, cut into 1/2 inch pieces
2 cans condensed golden mushroom soup (no substitutes!)
1 cup chopped onion
1 Tb Worcestershire sauce
1 14 oz can beef broth
8 oz button mushrooms, cleaned and quartered (optional)
salt and pepper to taste
4 ounces cream cheese, room temperature
1/2 cup sour cream

Steps:

  • In the crockpot, combine the meat, soup, onion, Worcestershire sauce, beef broth, mushrooms, salt and pepper. Cook on low for 5-6 hours. Stir in cream cheese and sour cream about half an hour before serving, stirring every ten minutes or so to break up cream cheese. Serve over cooked egg noodles or rice. (After the egg noodles have cooked, I like to add them directly into the crockpot for about half an hour for the flavors to mingle and thicken up a bit.) If the sauce is not thick enough for you, add some cornstarch and water. Makes 6 generous servings.
