For a truly vegetarian soup, substitute vegetable bouillon for the chicken soup base. This recipe almost overflowed my 4-quart crockpot, you might want to halve the ingredients. I cooked it on high for the entire 8 hours because it was so full, but if you halve it, cooking it on low for the same amount of time will work fine.

- Dump it all in the crock pot.
- Cook on high for 8 hours or until beans are soft.
- If you like it creamy, puree some or all of it with an immersion (hand held stick) blender.
- If you don't have Italian seasoning, any combination of oregano, basil, sage, rosemary, thyme and marjoram will work.
- Serve with crispy French or Italian bread.

- 1. Combine all ingredients in a large crock pot. Season with garlic powder, salt, and pepper to taste.
- 2. Cover and cook on low heat setting for 12 hours. An hour before soup is done, remove ham shanks or ham hocks to a chopping board. Discard bones, skin and fat. Shred meat and return to the crock pot.
- 3. Before serving, mash any remaining potato chunks with a potato masher. Stir and adjust seasonings, to taste.

- In a 5- to 6-quart slow cooker, combine split peas, pork hocks, ham, celery, onion, carrot, curry powder, marjoram, bay leaves, and pepper. Stir in the water.

- Discard bay leaves.
- Remove pork hocks.
- When pork hocks are cool enough to handle, remove meat from bones; discard bones.

- In a saute pan over medium heat, add 1 tablespoon olive oil, onion, and celery. Cook, stirring, until soft, about 5 minutes. Add the garlic and cook one more minute. Add to 4.5-quart or larger Crock Pot along with cauliflower, split peas, vegetable broth, cumin, sage, thyme, 1/2 teaspoon salt, and bay leaf.
- Cook on low for 8 hours, or until split peas are completely soft.
- Taste and add additional salt and pepper if needed.
- If adding ham, remove about 1 1/2 cups per serving to a saucepan and stir in 1/4 cup diced ham. Heat together for about 10 minutes.
- Serve with a drizzle of olive oil and a sprinkle of smoked paprika. Top carnivorous servings with additional chopped ham if desired.

- 1. If you want to go through the process of sauteing The veggies and garlic in a little olive oil have at it! I have found that it doesnt add that much extra to this soup, dirties more dishes and takes up my limited time.
- 2. Turn your crock pot on high and add the ham bone and chicken stock.
- 3. Add the veggies as you cut them up then give the pot a stir.
- 4. Add seasonings to the pot and stir again.
- 5. If the liquid isnt up over the vegetables you will need to add water or more stock. I usually cook my stock down so its pretty concentrated so I just add water to cover.
- 6. Cook on high for three and a half hours or on low for seven. You can remove the bone and scrape the meat off or just give the soup a vigorous stir so the meat falls off the bones. I dont bother taking the bones out until I store the soup for the night.
- 7. Serve with a drizzle of bacon infused olive oil...YUM!

- Heat fry pan and add oil, then onion, garlic, celery, and carrots.
- Saute vegetables until soft.
- Add sauteed vegetables to 6-quart crock pot.
- Then add split peas and enough water to half full capacity.

SPLIT PEA AND PARSNIP SOUP - CROCK-POT
The parsnips add a creamy sweetness that complements the flavor of the split peas. If parsnips are unavailable, use carrots instead. Because the peas have a tendency to settle on the bottom of the pot, a quick stir midway through the cooking process is helpful. The Liquid Smoke adds a "bacony" flavor to the soup and is available in most supermarkets. While this is intended to be vegetarian, from Fresh From the Vegetarian Slow Cooker, I also made this with a ham bone instead of the liquid smoke and was delicious.

- Heat the oil in a large skillet over medium heat, add the onion and parsnips, cover and cook until softened, about five minutes.
- Transfer the vegetables to a 4-6 quart slow cooker and add the peas, thyme, bay leaf and stock. Cover and cook on low for eight hours, stirring once if possible. When it's done, the peas will disappear! (The time may vary, depending on your crock pot - I did three hours on high and one on low.).

SPLIT PEA SOUP (CROCK POT) - DAIRY FREE
Very little prep, just layer in crock pot/slow cooker, leave it for the day and a filling, delicious soup will be ready for dinner. This recipe is a very versatile base split pea soup. For a Vegan option, omit the meat. I have made this recipe using ham, ham hock, and bacon. I have used veggie broth, chicken broth and water... each tasting different but yummy! I have reduced the salt but have not adjusted the recipe as written. This soup is even better the next day, it freezes well. This tends to be a thicker soup (especially once it has cooled) so adjust liquid after cooking to desired thickness.

- Place split peas in crock pot. Pour enough stock or water to crock pot to fill 2/3 full.
- In small skillet fry the bacon until crisp. Set aside to drain on paper towel.
- Pour off most of the bacon fat and lightly saute the onion, potato, leek, garlic and celery until softened, about 3 minutes.
- Add to crock pot.
- Add the remaining ingredients to the crock pot. (If using dried herbs, add them now. If using fresh herbs, they are to be stirred in 5 minutes before serving the soup.) Stir in the crumbled bacon.
- Cook on low 4-5 hours or until split peas and potatoes are tender. Mash lightly with potato masher to puree the soup. Or use a hand held immersion blender to puree the soup.
- Cool soup then transfer to container and refrigerate.
- Heat soup up the next day until warm, being careful not to burn. The soup will be thick; add more stock or water to thin if desired. If using fresh herbs, don't forget to stir them in now.
- Adjust seasonings if necessary and season to taste with salt and black pepper.
- Sit. Relax. Lick the bowl clean.

CROCK POT INTERNATIONAL SPLIT PEA SOUP
In Canada, it is a traditional Quebec dish, made with split yellow peas and flavoured with salt pork. Citizens of the Middle East are likely to enjoy a vegetarian version, seasoned with cumin and lemon. This recipe borrows a bit from each of these cuisines. I like to serve this soup steaming hot with plenty of fresh, dark bread, coleslaw and sliced Cheddar cheese. It makes a great winter meal.

- In slow cooker stoneware, combine all ingredients except lemon juice and parsley.

- TIPS: Traditionally, yellow split peas are not soaked before cooking, but I have found that they can be tough unless they are pre-soaked.

- Boil rapidly for 1 minute, then let sit while you prepare the rest of the ingredients.
- Drain and rinse before adding to the recipe.
- Smoked ham hocks are available from butchers and can often be found in the meat section of well-stocked supermarkets.
- They are wonderful flavour enhancers, particularly for legumes.
- VARIATION: South-western-Style Split Pea Soup: In a heatproof bowl, soak 2 New Mexico chillies in 2 cups boiling water for 30 minutes.
- Drain and discard liquid and stems.
- Chop finely.
- Add to soup along with onions and other ingredients.
- For a spicier version, add 1 finely chopped jalapeno pepper along with the reconstituted chillies.
- To serve, top with sour cream and garnish with finely chopped cilantro instead of parsley.
