There are so many versions but none easier than this. I usually get it ready the night before and refrigerate overnight. Before going to work, I take it out and plug it in. Dinner is ready when I get home. You might want to adjust the amount of chili and seasonings for personal taste. Serve this with corn or flour tortillas.

1 -1 1/2 lb country-style pork ribs, boneless
1 medium onion, chopped
1 (29 ounce) can white hominy, drained (Posole)
1 (14 1/2 ounce) can diced tomatoes
2 -3 cups chicken stock
2 garlic cloves, minced
1 (4 ounce) can chopped green chili peppers
1 teaspoon salt
1/2 teaspoon thyme
1/4 teaspoon cumin

Steps:

  • Cube ribs and brown pork in lightly oiled skillet. Add onion and saute until limp. Drain fat.
  • Combine pork, onion and remaining ingredients in crock pot.
  • Cook on low heat for 5 hours to 6 hours.

3 vegetable oil
3 lbs boneless pork, cubed
2 medium white onions, chopped
3 garlic cloves, minced
4 cups water
2 (4 ounce) cans diced green chilies, undrained
1 (10 ounce) can red enchilada sauce, mild or 1 (10 ounce) can hot enchilada sauce
1 (16 ounce) can seasoned tomatoes and green chilies
1 (4 ounce) can taco sauce
1 bay leaf
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon oregano

Steps:

  • Heat oil in a 6-quart crock pot, add pork, onion and garlic and cook until pork is browned. Drain excess grease.
  • Add the water, chilies, enchilada sauce, tomatoes, taco sauce, bay leaf, salt, pepper and oregano, and cook over low to medium heat about 2 hours, stirring occasionally. After 2 hours, add more water if needed. Adjust seasonings if desired, and simmer 2 to 3 hours longer.

Posole (hominy) probably originated as an Indian dish, and is very popular in Mexico and parts of the southwest. This one-dish meal is good for lunch, dinner or pot lucks. Posole can be dry and plated or served as a thick stew in a bowl. It is either white (often as a stew with green chilies -- see my recipe for Pueblo White Posole), or red (best made with fresh, powdered mild to hot New Mexican red chili powder). Fresh or frozen posole is best, if you can find it, but drained, canned hominy is very good, too. Serve with salad and warmed flour or corn tortillas.

2 tablespoons cooking oil
1 medium onion, diced
2 -3 tablespoons mild red chili powder
1 lb pork loin or 1 lb pork chop, cooked and sliced into thin, bite sized pieces
2 garlic cloves, mashed
1 teaspoon cumin
3 cups frozen hominy, boiled until it pops (reserve juice) or 3 cups hominy (reserve juice)
salt

Steps:

  • If using fresh or frozen hominy, boil until it pops, then reduce heat and cook until done. Reserve the water it boils inches (If using canned white or yellow hominy, reserve the juice).
  • In a large frying pan, heat the oil over a medium flame.
  • Add onion and cook until translucent.
  • Make a 'well' in the center of the onion mixture and add the chili powder.
  • Stir to dissolve the chili and mix thoroughly with the onions.
  • Add the pork slices.
  • Add the garlic and cumin.
  • At last, add the cooked posole and 3- 4 cups liquid.
  • Mix, and simmer slowly uncovered until liquid is reduced.

This is just a simple but delicious Posole recipe converted for the crockpot, if your crockpot is not a big one just cut down the amounts to fit your needs. I like a big one so I can freeze what we don't eat for a future meal --if there is any left that is. My family loves this and it's a great cold weather meal.

1 tsp ground cumin
1 Tbsp oregano
3 bay leaves
1/2 c ancho chili powder
1 pkg california blend chili powder
2-3 lb boneless pork shoulder cut into small chunks
1 large onion, diced
6 clove garlic, minced
4 c chicken broth
1 Tbsp kosher salt
2 / 25 oz white hominy, including the liquid
1/2 c unsweetened cocoa powder
2/ 15 oz cans of fire roasted diced tomatoes

Steps:

  • 1. Combine all ingredients in the crockpot and cook on high 4-6 hours until meat is tender. Add more salt and chili powder if needed.
  • 2. Garnishes should be on the table and can include: Shredded Cabbage, Cilantro, diced avocado, fresh lime wedges and Queso Fresco or sour cream, as well as warm tortillas, grilled jalapeno's or even sliced radishes.
  • 3. * Sometimes I use Pacillo blend chili powder for the flavor and heat. I get my chili powders in the Mexican food section in the small cello packages...

1 lb pork roast, whole
5 cups rich chicken broth
2 cups dried Posole kernels
1/2 - 2/3 cup new mexico red chile powder
1 teaspoon dried oregano
1/4 cup fresh cilantro, chopped
2 -3 cups warm water or 2 -3 cups additional chicken stock
Salt and pepper to taste

Steps:

  • *Posole tip: Put your dry Posole in a pot of water, add a whole lime's worth of juice and soak for a full day. This way your Posole will "pop" sooner. 1. Rub half of the red chile powder into the roast, then season with salt and pepper. Add chicken broth and spices. 2. Heat on low for 6-8 hours, until posole has popped and is tender. If you have soaked your posole first, you may only need to cook for 4-6 hours. 3. During the last few hours of cooking, it may be necessary to add the warm water or additional chicken stock; the dried posole will absorb the stock as it cooks. 4. In the pot, gently pull the pork roast apart into smaller pieces; it should shred at this point. 5. Salt the stew to taste, garnish with additional cilantro if desired and serve.

1 (14 1/2 ounce) can tomatoes with juice, undrained and cut up
2 (14 1/2 ounce) cans low sodium chicken broth
1 teaspoon dried oregano, crushed
1/2 teaspoon ground cumin
1/4 cup fresh cilantro, chopped
1/2 cup low-fat sour cream

Steps:

  • Place hominy, chili peppers, onion, garlic, chicken, tomatoes, chicken broth, oregano, and cumin in your crock pot.
  • Cover and cook on low setting for 5-6 hours or on high setting for 2 1/2 to 3 hours.
  • Stir in cilantro.
  • Garnish each serving with low-fat sour cream, if desired.
