CROCK POT MACARONI & CORN CASSEROLE

When I moved to WV, I found this recipe in a local church cookbook. It is fantastic, great for potlucks too.

Number Of Ingredients 7

15 oz can whole kernel corn
15 oz can cream style corn
1 c uncooked elbow macaroni
1/2 c butter, cubed
8 oz velvetta, cubed
1/2 tsp salt
1/2 tsp pepper

Steps:

  • 1. Place all the ingredients in a 4 quart crock pot and stir to combine. Turn the crock pot on high and cook for 45 minutes, stir the mixture, cover and cook on high for 30 more minutes. Stir well, then reduce the temp. to low and cook for 1 1/2 hours, or until macaroni is tender.

2 box jiffy (or comparable) corn muffin mix, prepared per package directions
1 pkg hot dogs
1 pkg small bag shredded cheddar cheese

Steps:

  • 1. Mix cornbread muffin mix per package instructions in a large bowl
  • 2. cut hot dogs into small medallions
  • 3. Add cheddar cheese
  • 4. Mix all ingredients into crock pot that's been sprayed with non stick spray.
  • 5. cover top with paper towels, and put lid on crock pot. set on high for one hour. then change out paper towels and recover. Lower heat to low for another 30 mins.

We loved the method of cooking this holiday favorite. Using the Crock Pot opens space in the crowded oven. The corn casserole turns out sweet and creamy with a hint of savory flavor from the seasoning. This easy side dish will quickly become a family favorite.

8 oz light cream cheese
2/3 c egg substitute
1/2 c sugar
8-1/2 oz corn muffin mix
2-1/2 c frozen corn, defrosted
16 oz can creamed corn
1 c evaporated skim milk
2 Tbsp butter, melted
1 tsp Mrs. Dash table blend
1/4 tsp freshly ground nutmeg

Steps:

  • 1. Grease your slow cooker or use a liner.
  • 2. Beat the cream cheese. Stir in the eggs and sugar; blend well.
  • 3. Add the corn muffin mix and remaining ingredients; blend well.
  • 4. Pour into slow cooker and cook on high for 2-4 hours, depending on your Crock Pot. DO NOT double this recipe. The middle will not cook through.

1 pkg (8 1/2 oz) corn bread/muffin mix
1 16oz can creamed corm
2 1/3 c fresh or frozen corn
1 c milk
2 T butter
1 tsp salt
1/4 tsp nutmeg

Steps:

  • lightly grease crock pot In mixing bowl blend cream cheese, eggs, and sugar Add remaining ingredients and mix well. Transfer to crock pot. cover and cook on high for 3-4 hours.
