2 boneless skinless chicken breasts ((cut into 1 inch pieces) )
1 teaspoon minced garlic
1 teaspoon black pepper
1 teaspoon salt
1/2 onion chopped
3 cups chicken broth
1 can cream of chicken soup ((10.5 oz can) )
1 1/2 cup brown rice ((uncooked) )
2 cups cheddar cheese ((shredded) )

Steps:

  • Place the chicken, garlic, salt, pepper, onion, chicken broth, cream of chicken soup and brown rice in the crock pot. Stir to thoroughly combine all the ingredients.
  • Cover and cook on high for 3.5-4 hours until the rice has absorbed all the chicken broth in the crock pot.
  • Stir in the shredded cheese. Cover and allow the heat from the meal to melt the cheese (5-7 minutes).
  • Serve warm and enjoy!

Chicken breasts are seasoned and fried, then served with rice and a creamy gravy. A family original, my family members request this all the time!!

2 cups long-grain white rice
4 cups water
4 boneless, skinless chicken breasts
3 tablespoons butter
1 cup all-purpose flour
½ teaspoon salt
¼ teaspoon ground black pepper
¼ teaspoon ground paprika
¼ teaspoon dried thyme
¾ cup cold water
¼ teaspoon salt

Steps:

  • Place rice in a saucepan with 4 cups of water. Bring to a boil, then reduce heat to low, cover and simmer for 20 minutes or until rice is tender. Prepare chicken while the rice is cooking.
  • In a medium bowl, stir together the flour, 1/2 teaspoon salt, pepper, paprika, and thyme. Use a finger to grind the thyme to a powder in the palm of your hand before adding. Coat the chicken breasts in the flour mixture. Reserve 2 tablespoons of the flour mixture for the gravy.
  • Melt butter in a large skillet over medium heat. Place chicken in the skillet, and cook for about 10 minutes on each side, until the chicken is golden brown, and the juices run clear. Remove chicken from the pan, leaving the drippings and crusty bits in.
  • Whisk together 3/4 cup water, 2 tablespoons of the flour mixture, and 1/4 teaspoon salt. Whisk into the skillet, scraping the browned bits from the bottom of the pan. Cook over medium heat, stirring constantly, until thick and bubbly. Add additional water 1 tablespoon at a time if the gravy is too thick. Serve chicken alongside rice topped with gravy.

This is an easy basic recipe to make on a weekday or weekend, whenever. Easy enough to just throw in the crock pot, which is my favorite way to cook!

1 -1 1/2 lb boneless skinless chicken breast
2 (1 3/8 ounce) packages chicken gravy mix
1 (8 ounce) envelope Lipton Onion Soup Mix
1 (11 1/2 ounce) can Campbell's Cream of Chicken Soup
2 cups water
salt and pepper, as needed

Steps:

  • Mix together chicken gravy mix, Cream of Chicken Soup, onion soup, and water.
  • Add Chicken Breasts to crock-pot.
  • Pour Gravy/Soup liquid over chicken breasts.
  • Cover and cook on low for 5 hours.
  • Shred chicken with a fork.
  • Serve over rice, potatoes, or even noodles.

I kinda just fudged this one together one night by combining a few recipes that I had made before. My fiance loved it but I thought it might be lacking on salt or that little extra something (but my taste buds have been odd since I quit smoking so it might be perfectly okay). Any suggestions would be great. This can be cooked on High in the crock pot, but I would suggest doing it on Low so it gives the flavors time to cook into the chicken!

4 boneless skinless chicken breasts
garlic powder, to taste
season salt, to taste
1 green pepper, cut into strips
1 red pepper, cut into strips
1 yellow pepper, cut into strips
1 (1 1/4 ounce) envelope dry onion soup mix
1 (10 1/2 ounce) can 98% fat-free condensed mushroom soup
1/4 cup light ranch salad dressing
1 -2 cup diet cola
2 tablespoons flour
1/4 cup water
3 cups whole grain rice

Steps:

  • Place chicken in slow cooker. Sprinkle with garlic powder and season salt, to taste.
  • Cut tops off of peppers and scoop out insides. Discard. Cut peppers into lengthwise. Put in crock pot on top of chicken.
  • Mix the rest of the ingredients in a separate bowl; pour over chicken and peppers.
  • Cover and cook on low for 6 hours or high 3 hours.
  • Mix flour and water in a small bowl. Turn crock pot to High and add flour mixture. Cover and cook for another half hour. This will help the "gravy" thicken up.
  • While "gravy" is cooking, prepare rice according to package directions (I use Success Boil in the Bag and it comes out perfect every time).
  • Serve chicken, peppers and gravy over rice.
