32oz bag(s) bag tater tots
3 oz crumbled bacon pieces
4 boneless skinless chicken breasts
1 1/2 c grated colby cheese
1 1/2 c grated monterey jack pepper cheese
3/4 c milk (i used 2%)
salt and pepper
1 box mixed vegetables, frozen

Steps:

  • 1. Spray the bottom of the crock pot. Put frozen vegetables in the crock. Layer ½ the tater tots on the bottom of the pot. Sprinkle ½ of the bacon pieces on top of the tator tots. Combine the two cheeses and sprinkle ⅓ of it over the bacon,vegetables and tots. Top cheese with the chicken breasts.
  • 2. Sprinkle chicken with salt and pepper to taste. Top chicken with another ⅓ of cheese. Sprinkle with other ½ of the bacon pieces. Add remainder of the tater tots. Top with final ⅓ of the cheese. Pour milk over the top. Set crock pot to high and cook 3-4 hours (3 was perfect for me).

0.5 (3 ounce) jars bacon bits

This is a simple throw-together dish I came up with that is great for a Sunday after-church meal. Note: You can fry your own bacon for this recipe. I like the taste of bacon but cannot handle the lingering smell it leaves in the house when you fry it, so I just buy the jarred bacon for the few times a year I use it.

1/2 cup chopped onion
1 can (10.5 oz) condensed cream of chicken soup
1 cup sour cream
1/2 cup milk
2 cups shredded Colby-Monterey Jack cheese blend (8 oz)
1 package (1 oz) ranch dressing & seasoning mix
1/4 teaspoon black pepper
3 cups shredded cooked chicken
1 bag (32 oz) Ore-Ida™ Tater Tots™ frozen potatoes
1/2 cup chopped cooked bacon
1/2 cup chopped tomatoes
1/4 cup sliced green onions

Steps:

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
  • In 8- or 10-inch nonstick skillet, heat oil over medium heat. Cook onion in oil 3 to 5 minutes, stirring occasionally, until tender.
  • In medium bowl, stir onion, condensed soup, sour cream, milk, 1 cup of the cheese, 2 tablespoons of the dressing mix and the black pepper until mixed well; stir in chicken.
  • Place half of the frozen potatoes in single layer on bottom of baking dish. Spoon and spread chicken mixture on top of potatoes; sprinkle 1/4 cup of the bacon on top.
  • In large resealable food-storage plastic bag, add remaining potatoes with remaining dressing mix; seal and shake bag to coat. Arrange on top of casserole.
  • Bake 40 minutes; top casserole with remaining 1 cup cheese and 1/4 cup bacon.
  • Bake 10 to 15 minutes or until cheese is melted and potatoes are lightly browned. Top with tomatoes and green onions.

I found this AMAZING recipe from the "crockpot lady" on her crockpot365 blogspot - also amazing. Anyway, this chicken is ridiculously easy and so versatile. It makes a mean sandwich, delicious wrap,is great served with french fries, or just straight up. You could also place it on a bed of lettuce for a great salad. The recipe helps keep they kitchen tidy and uses less energy by using a slow cooker! My whole family was "humming" when I made this and served it - it's a keeper!

2 tablespoons olive oil
4 -6 boneless skinless chicken breasts
1/4 cup bottled ranch salad dressing
1/4 cup teriyaki sauce
10 -12 slices bacon, cooked and crumbled
1 cup shredded cheddar cheese

Steps:

  • Place olive oil in the bottom of a slow cooker. Put chicken on top.
  • Whisk together dressing and teriyaki sauce; pour over and around chicken.
  • Crumble the bacon over the chicken.
  • Sprinkle with cheese, cover and cook on low 6-8 hours, depending on how thick your chicken is.
