CHOCOLATE CARAMEL RASPBERRY FONDUE (FOR MINI CROCK POT)
I first tasted this fondue at a friend's Christmas party about 8-9 years ago. I think just about everyone left that party with a copy of the recipe! I have served this at my own parties many times with great success. I enjoy serving this with strawberries, fresh pineapple chunks, cantaloupe, bananas, and sponge cake as the dippers. This makes enough fondue to partly fill a medium-sized crockpot.

Steps:
- Take out that crock pot.
- It is important to use either a saucer or a little bowl like I did - so the can does not leave a rust ring on the bottom of your crockpot.
- Once the can is in place fill up the crock pot with water till it covers the top of the can.
- Put the crock pot on low for 8 hours :)
- With tongs take the can out of the water and let sit for 30 minutes ( it is going to be plenty hot).
- Slice apples into wedges.
- Open the can - stir and enjoy by dipping the apples into the caramel.

CROCK-POT CARAMEL APPLE-PEAR BUTTER-OR JUST APPLE
I usually make a lot of apple sauce and apple butter. Last couple years have not yielded a very good apple crop for us. My daughter has 2 pear trees in her backyard and has had bumper pear crops, so I've combined the 2 fruits for this ap'pear butter! I just got canned a batch that had been in the crockpot for 24 hours! NOTE: Alternate method with fewer ingredients: Processed cooked apples through food mill to make approx. 2 1/2 quarts applesauce. Combined that with 1 cup brown sugar, 1 TB cider vinegar, 1 tsp. cinnamon in slow-cooker. Very caramel-y flavor. Made 11 half-pints.

Steps:
- Rinse fruit. Cut in fourths, cutting out any bad spots. Put half of the fruit in a pot with half of the apple juice, half of the lemon juice and half of vinegar. Simmer until fruit is easily pierced with fork. (If it's too mushy, that's ok).
- Let cool a bit, run through food mill. Repeat with other half of fruit and juices.
- Put into crockpot. Add spices and sugar. Cook on low overnight or until a spoonful put onto a cool plate mounds without a lot of liquid running out of the sides. Stir every once in a while -especially right before you go to bed and as soon as you get up! If you don't sleep well, give a stir during the night, too!
- NOTE: amount of fruit is approximate. Go easy on sugar, vinegar and spices if you don't have quite enough. My last batch was closer to 8 pounds before cooking.

Steps:
- 1. Turn crockpot on high. brush bottom & sides of crockpot with butter & line with foil( this will help remove it when its done), brush the foil with butter as well slice butter into pats & place in the bottom of foil liner, sprinkle brown sugar over & then place bananas cut side down. Mix cake mix according to pkg directions & add the ginger, cinnamon & nutmeg. pour over bananas. Place a dbl length of dry paper towels (**)over the TOP of crockpot rim & a sheet of foil to seal it in , place lid on tight & cook for 2- 2 1/2 hrs...check after 2...the sides should be brown & when you touch the center of the cake it should spring back. turn crockpot off & using the foil remove the cake & set aside to cool for 30 min. after cooling take a plate & place over the cake & invert it , remove foil serve & enjoy ** since a crockpot cooks with moist heat the paper towels will help absorb excess moisture & keep it from making the top of the cake soggy
CARAMEL DIP IN THE CROCK POT
This is a wonderful little dip for whatever you want to dip in it. We like Granny Smith apples, and once in a while I add a banana to dip in, while the kids aren't watching.
