This recipe is from www.crock-pot.com. It is basically for a 3 or 4 qt slow-cooker. There are directions for using a larger slow-cooker at the site.

Number Of Ingredients 10

1/3 cup butter or 1/3 cup margarine
2/3 cup granulated sugar
2 eggs, well beaten
2 tablespoons dark corn syrup
3 ripe bananas, well mashed
1 3/4 cups all-purpose flour, sifted
2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1/2 cup walnuts, chopped

Steps:

  • Grease and flour the inside of the stoneware or the Crock-Pot(R) Bread 'N Cake Bake Pan (available through Rival(R)).
  • In a large bowl, cream the butter until fluffy, and slowly add the sugar, eggs, corn syrup and mashed bananas.
  • Beat until smooth.
  • In a small bowl, sift together the flour, baking powder, baking soda and salt.
  • Slowly beat the flour mixture into the creamed mixture.
  • Add the walnuts and mix thoroughly.
  • Pour into the bake pan and place in the slow cooker.
  • Cover; cook on High for 2 to 3 hours.
  • When the bread is done, remove the Bread 'N Cake Pan from the stoneware.
  • Let cool, and turn bread onto a serving platter.

This is an easy quick bread and yeast free. I made some changes to lower the sugar and fat in the recipe. It is delicious! You would never know it was cooked in a crock pot. I am really happy with the way it came out. It is so simple to make as well. Enjoy!!!

1/3 c softened butter or coconut oil
1/3 c apple sauce
1/2 c granulated sugar
1/4 c honey
2 eggs
1 c all purpose flour
1 c wheat flour
1 tsp vanilla
1 tsp baking soda
1/2 tsp salt
1/2 c chopped walnuts if desired
1 c mashed bananas
1/2 c chopped dark chocolate optional

Steps:

  • 1. Spray a bread pan or 1 quart casserole with oil cooking spray. Crumple up aluminum foil and place on bottom of crock pot.
  • 2. Beat coconut oil, sugar,apple sauce and honey together until well blended.
  • 3. Add the eggs and beat until blended. Add bananas, and vanilla. Beat until smooth.
  • 4. Stir in flours. Baking soda, and salt. Add nuts and chocolate if desired and blend.
  • 5. Place batter in prepared baking dish or pan, and place in crock pot. Cover and cook on high 2-3 hours. Check on it with tooth pick inserted in to bread. You can also cook on low from 4-6 hours. Note: It took 2 hours and 20 minutes for my bread to cook in a bread pan,and in an oval crock pot

1 3/4 cups flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1/3 cup shortening
2/3 cup sugar
2 eggs, well beaten
1 1/2 cups bananas, well mashed, overripe
1/2 cup walnuts, coarsely chopped

Steps:

  • Sift together flour, baking powder, baking soda and salt.
  • With electric beater on low, fluff shortening in a small bowl, until soft and creamy.
  • Add sugar gradually.
  • Beat in eggs in a slow stream.
  • With a fork, beat in 1/3 of the flour mixture, 1/2 the bananas another 1/3 of the flour mixture, the rest of the bananas then the last of the flour mixture.
  • Fold in walnuts.
  • Turn into a greased and floured baking unit or a 2 1/2 quart mold and cover.
  • Place on a rack in crock pot.
  • Cover crock pot, but prop the lid open with a toothpick or a twist of foil to let the excess steam escape.
  • Cook on HIGH for 4 to 6 hours.
  • Cool on a rack for 10 minutes.
  • Serve Warm.

1 cup of quinoa
½ cup of warm cinnamon sugar cookie creamer (Note: You can also use light cream and 1½ tablespoons of cinnamon.)
½ cup low-fat milk
1 cup water
1½ bananas (past ripe)
2 tablespoons chopped walnuts
3 tablespoons brown sugar (Note: If you'd prefer to avoid sugar, you can also use molasses or buckwheat honey.)
1½ tablespoons butter, melted
½ teaspoon vanilla extract

Steps:

  • Mash banana. In separate bowl, combine sugar and walnuts. Pour quinoa and all liquid ingredients into the crockpot. Stir in the mashed banana. Sprinkle with the sugar and nut mixture. Cook on low for 4 - 6 hours. Serve warm and garnish with banana.

How to make Crock Pot Banana Bread Quinoa

1 cup of quinoa (I used Bob's Red Mill)
1/2 cup of Seasonal Coffee-mate Warm Cinnamon Sugar Cookie *
1/2 cup low-fat milk
1 cup water
1 1/2 banana (past ripe)
2 tablespoons chopped walnuts
3 tablespoons brown sugar
1 1/2 tablespoons butter, melted
1/2 teaspoon vanilla extract
*NOTE! If you can't find that kind of creamer or you'd prefer to use something else, substitute light cream and add about 1 - 1/2 tablespoons cinnamon.

Steps:

  • Mash the banana in a bowl and set aside. In another bowl, mix the brown sugar and walnuts together.
  • Pour quinoa, creamer (or light cream), milk, water, butter and vanilla into the crock pot. Add the mashed banana and stir to evenly distribute. Sprinkle the sugar and walnut mixture into the quinoa and stir to mix.
  • Cook on low for 4 - 6 hours, or until the quinoa is fully cooked. If you need to, add additional liquid or sugar to the mixture for taste.
  • Serve warm and garish with slices of banana!

If your crock pot didn't come with a rack you can use an aluminum pie plate that is vented w/ holes, and cut the sides to fit the pot. For the "unit" I just used a non-stick bread pan.

1/4 teaspoon baking soda
1/2 teaspoon salt

1 1/2 cups well mashed overripe bananas (2 or 3 bananas)
1 cup coarsely chopped walnuts (optional)

Steps:
