These are so good, you will want them often! Can be breakfast or dessert! Serve warm with a big scoop of vanilla ice cream for comfort food heaven! Adapted from The Pampered Chef All The Best Cookbook.

4 small granny smith apples
1/2 cup walnut halves, chopped
1/2 cup raisins
3 tablespoons all-purpose flour
3/4 cup sugar, divided
1 tablespoon ground cinnamon, divided
1 (17 1/3 ounce) package Pillsbury Grands refrigerated buttermilk biscuits (or butter milk-8 biscuits)
1 (10 1/4 ounce) package Pillsbury Grands refrigerated buttermilk biscuits (or buttermilk-5 biscuits)
1 tablespoon margarine, melted or 1 tablespoon butter
ice cream (optional)

Steps:

  • Preheat oven to 350*F.
  • Peel, core and slice apples. Cut apple slices into wedges. Chop walnuts.
  • Place apples, walnuts, raisins, flour, 1/4 cup of the sugar and 1 teaspoons of the cinnamon in a bowl. Mix well.
  • Microwave apple mixture on high 3 minutes or until hot; mix well.
  • Separate 12 biscuits. You may discard the remaining or set aside for another use. Using a rolling pin(or round glass jar), roll each biscuit into a 5" circle.
  • Combine remaining sugar and remaining cinnamon in a bowl. Sprinkle the sugar/cinnamon mix evenly over the biscuits. Divide apple mixture evenly onto center of each biscuit.
  • Gather up the edges over the filling, pinching lightly to seal.
  • Melt butter in microwave on high 20 seconds, or until melted.
  • Holding filled biscuits at the sealed end, dip each biscuit into butter, then into remaining cinnamon/sugar mixute in bowl.
  • Place the biscuits, seam side down, into a muffin pan. Cut an X pattern (crisscross)through the top of each biscuit.
  • Bake 25-30 minutes or until golden brown.
  • Remove from pan. Serve with icre cream if you would like! Enjoy!

Pampered Chef Style Apple Crisp (For Microwave or Oven) image

This is one of the recipes that was served at the very first Pampered Chef party I attended, back in 1994. It is a very easy recipe (the hardest part is prepping the apple slices) and can be made in either microwave or the oven. I have made it both ways and prefer the oven version, but it is awfully nice that this can also be tossed into the microwave for a last minute dessert on busy nights. The demonstrator had a handy tip for the apples: After she ran them through the apple peeler/slicer gizmo they sell, she dropped them into a bowl filled with a can of lemon-lime soda (like Sprite) - and then drained them and patted them dry before using in this recipe. This way the apples didn't turn all sludgy brown before she was ready to demonstrate the recipe itself. I am allowing a large amount of prep time for those of you who don't own one of the PC apple gizmos - once your apples are ready, it only takes about 5 minutes to prepare the crisp for baking.

4 -6 large tart baking apples, peeled, cored, and sliced thinly (such as Granny Smith)
8 graham cracker squares (2 1/2 inches each)
3/4 cup brown sugar, packed
1/2 cup rolled oats (such as Quaker old fashioned or quick oats, not instant)
1/2 cup all-purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 cup sweet unsalted butter or 1/2 cup margarine, melted
whipped cream (optional) or ice cream, garnish (optional)

Steps:

  • You will need a 12" round stoneware baking pan for this recipe (such as the Pampered Chef deep dish baker).
  • Use enough apple slices to fill the stoneware pan 3/4s full (amount will vary depending upon your apples).
  • Finely chop the graham cracker squares and mix with oats,brown sugar,flour, and spices.
  • Add melted butter and mix well.
  • Spoon this mixture over the apple slices.
  • MICROWAVE method: Microwave on high 12-15 minutes or until apple are tender, turning dish after 6 minutes.
  • OVEN method: Preheat oven to 350°F and bake 30-35 minutes or until apples are tender.
  • Serve with a dollop of whipped cream or ice cream, as desired.
  • Cool slightly and serve while still warm.

1 1/3 c chopped peeled tart apples
1/3 c chopped walnuts
1/3 c raisins
1/2 c sugar, divided
2 Tbsp ground cinnamon, divided
dash(es) salt
1 pkg 17.3 oz large refridgerated flaky biscuits
2 tsp butter, melted

Steps:

  • 1. In a large microwave-safe bowl, combine the apples, walnuts, raisins, 3 Tbs sugar, flour, 3/4 tsp cinnamon, and salt. Microwave 2-3 minutes or until almost tender.
  • 2. Flatten each biscuit into a 5 inch circle.Combine remaining sugar and cinnamon; sprinkle a rounded tsp of sugar mixture over each. Top each with 1/4 cup apple mixture. Bring up edges to enclose mixture; pinch edges to seal.
  • 3. Place seam side down in ungreased muffin cups. Brush tops with butter; sprinkle with remaining sugarmixture. With a sharp knife, cut an "X" in the top of each.
  • 4. Bake at 350 degrees for 18-22 minutes or until golden brown. Cool for 5 minutes before removing from pan to wire racks.
