1 package fudge brownie mix (13x9-inch pan size)
1-1/2 cups chunky peanut butter
2 cups semisweet chocolate chips
1 cup creamy peanut butter
3 cups Rice Krispies

Steps:

  • Line a 13x9-in. baking pan with parchment, letting ends extend up sides. Prepare and bake brownie mix according to package directions, using prepared pan. Cool in pan on a wire rack 30 minutes. Refrigerate until cold., Spread chunky peanut butter over brownies. Place chocolate chips and creamy peanut butter in a large microwave-safe bowl. Microwave in 30-second intervals until melted; stir until smooth. Stir in Rice Krispies; spread over chunky peanut butter layer. Refrigerate, covered, at least 30 minutes or until set., Lifting with parchment, remove brownies from pan. Cut into bars. Store in an airtight container in the refrigerator.

8 tablespoons (1 stick) unsalted butter, cut into small pieces, plus more for pan
2 ounces good-quality unsweetened chocolate, coarsely chopped
4 ounces good-quality semisweet chocolate, coarsely chopped
2/3 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
3/4 cup granulated sugar
3 large eggs
2 teaspoons pure vanilla extract
4 tablespoons unsalted butter, melted
1/2 cup confectioners' sugar
3/4 cup smooth peanut butter
1/4 teaspoon salt
1/2 teaspoon pure vanilla extract

Steps:

  • Preheat oven to 325 degrees. Line a buttered 8-inch square baking pan with foil or parchment paper, allowing 2 inches to hang over sides. Butter lining (excluding overhang); set pan aside.
  • Make batter: Put butter and chocolates in a heatproof medium bowl set over a pan of simmering water; stir until melted. Let cool slightly.
  • Whisk together flour, baking powder, and salt in a separate bowl, and set aside.
  • Whisk granulated sugar into chocolate mixture. Add eggs, and whisk until mixture is smooth. Stir in vanilla. Add flour mixture; stir until well incorporated.
  • Make filling: Stir together butter, confectioners' sugar, peanut butter, salt, and vanilla in a bowl until smooth.
  • Pour one-third of batter into prepared pan, and spread evenly with a rubber spatula. Place dollops of filling (about 1 tablespoon each) about 1 inch apart on top of batter. Drizzle remaining batter on top, and gently spread to fill pan. Place dollops of remaining filling on top.
  • With a butter knife, gently swirl filling into batter, running knife lengthwise and crosswise through layers. Bake until a cake tester inserted into brownies (avoid center and edges) comes out with a few crumbs but is not wet, about 45 minutes. Let cool slightly in pan, about 15 minutes. Lift out brownies; let cool completely on a wire rack before cutting into squares.

These bars are seriously ridiculous because the are easy and SO rich. When I bring them for co-workers, they go biserk. Kids love them and grown men have been reduced to nothing but silence and eye rolling. Starts with a plain boxed brownie mix.

1 (20 ounce) box brownie mix
1 (10 3/4 ounce) bag mini marshmallows
1 1/2 cups semi-sweet chocolate chips
1 cup peanut butter
1 tablespoon butter
2 cups crisp rice cereal

Steps:

  • Preheat oven to 350 degrees F.
  • Grease the bottom of a 9" x 13" baking dish.
  • Prepare and bake the brownies according to box directions.
  • Remove from oven and immediately sprinkle with the mini marshmallows. Return to oven for another 3 minutes or until marshmallows just start to puff up.
  • Remove from oven and set aside, allow to cool off a little bit.
  • Place chocolate chips, peanut butter and butter in medium saucepan. Melt over low heat, stirring constantly to avoid burning.
  • Remove from heat and add the crispie cereal, mix well.
  • Drop spoonfulls of chocolate crispie mix over the marshmallows and spread across to cover the top.
  • Allow to cool completely before cutting into bars.
  • Might want to refrigerate if it's warm in the house.

This is an adaptation of a "Brownie Goody Bar" recipe I found on the back of a Better Crocker brownie box a few years ago. We also call them Scotcharoo Brownies, because they have a butterscotch, peanut butter, rice crispy layer on top of a fuggy brownie. This is my family's favorite sweet treat! They are sooo good. I usually wrap them individually in suran wrap and store in the refrigerator so that they do not all get eaten at once. This slows the guys down a little.

1 (22 1/2 ounce) box brownie mix, prepared (I like Betty Crocker Original Supreme)
1 (12 ounce) bag butterscotch chips
1 cup creamy peanut butter
3 1/2 cups crisp rice cereal (use 4 cups for a thicker rice crispy layer)

Steps:

  • Heat oven to 350. Make brownies as directed for a 9 x 13-inch pan. Cool completely.
  • Melt butterscotch chips and peanut butter in a 1-quart saucepan or in a glass bowl in microwave (1 1/2 minutes on high) stirring frequently.
  • Stir cereal into peanut putter butterscotch mixture.
  • Pour cereal mixture over brownies. Spread evenly.
  • Refrigerate about 30 minutes or until set before cutting.

I saw this recipe on the Betty Crocker Website. These look so delicious! In the original recipe, it has 3/4 cup chopped peanuts that you add to the top of the frosting layer, but I despise nuts and so these are optional if you like them! I am not including the chill times, just in preparing in each step.

24 ounces betty crocker Original Supreme brownie mix
1/2 cup oil
1/3 cup water
3 eggs
1 lb vanilla frosting
3 cups crisp rice cereal
1 cup creamy peanut butter
1 (12 ounce) bag semi-sweet chocolate chips (2)

Steps:

  • Make the brownies by combining the brownie mix, oil, water, and eggs. Stir well. Pour the batter into a large baking dish and bake at 375 degrees for about 18-20 minutes and they are cooked through.
  • Cool completely for about an hour. Frost the brownies and refrigerate for about 20 minutes.
  • While the brownies are chilling again, melt the peanut butter and the chocolate chips in a large pan on the stove. Add the crispy rice cereal and stir well. Remove the brownies from the refrigerator and pour the cereal mixture on top of the frosting, smoothing out the top. Allow to cool completely until set, for about 25 minutes or until ready to serve.

1 (18 1/4 ounce) package chocolate cake mix
1/3 cup vegetable oil
1 egg
1 (14 ounce) can sweetened condensed milk
2 cups semi-sweet chocolate chips, melted
1/2 cup peanut butter
1 teaspoon vanilla

Steps:

  • In a bowl, combine the cake mix, oil and egg until crumbly. Set aside 1 cup for topping.
  • Firmly press remaining mixture into a greased 13" x 9" baking pan; set aside.
  • In a bowl, combine the milk, chocolate, peanut butter and vanilla until smooth. Spread over crust.
  • Sprinkle with reserved crumb mixture.
  • Bake at 350 for 25-30 minutes or until brownies pull away from the pan.
  • Cool on a wire rack. Cut into 24 bars.
  • Note: You can use 3/4 cup of peanut butter for more peanut butter flavor or try adding peanut butter chips to the batter.
  • For a finer topping I put the 1 cup of reserved cake mix toping in my food processer for a few seconds before sprinkling on the top of the batter.
