2 pounds chicken wings, separated into drumettes and flats
1 tablespoon baking powder
1/2 cup light brown sugar
2 tablespoons kosher salt
1 tablespoon butcher's grind cracked black pepper
2 tablespoons granulated sugar
1 tablespoon Hungarian paprika
1 tablespoon chili powder
1 1/2 teaspoons garlic powder
1 1/2 teaspoons onion powder
1 1/2 teaspoons ground cumin
1/2 teaspoon cayenne pepper
Pinch of celery seeds

Steps:

  • For the wings: Preheat your oven to 450 degrees F. Line a rimmed baking sheet with foil and brush the foil with the oil.
  • Pat the wings dry with paper towels, then sprinkle with the baking powder and toss to evenly coat in a large mixing bowl. Spread the wings evenly on the prepared baking sheet. Bake until golden brown, crispy and cooked through, 25 to 30 minutes, flipping halfway through.
  • For the dry rub: Combine the brown sugar, salt, black pepper, granulated sugar, paprika, chili powder, garlic powder, onion powder, cumin, cayenne and celery seeds in a small bowl.
  • Remove the wings from the oven and add to another large mixing bowl. Season well with some of the rub, and then toss to coat. (Reserve the remaining rub for another use.) Serve immediately.

2 cloves garlic, minced
1 cup grated Parmesan cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a shallow baking dish with aluminum foil and grease lightly.
  • Cut tips from chicken wings and discard. Cut between the joint to separate each wing into 2 pieces.
  • Combine butter and garlic in a small saucepan over low heat; heat until butter is melted and garlic is fragrant, 3 to 5 minutes.

Steps:

  • Preheat oven to 450F.
  • Dry chicken with a paper towel really well.
  • Place the wings in a large bowl.
  • Sprinkle baking powder over the wings. Toss until all wings are evenly covered in baking powder. Better yet, mix by hand to ensure even coverage.
  • Line a large baking sheet with aluminum foil.
  • Lay parchment on top. Lay the chicken wings on paper leaving space between the wings. Place the baking sheet in the oven. Turn the heat down to 425F and set the mode to convection. 1 tsp salt
1/2 tsp pepper
1/2 tsp garlic powder

Steps:

  • 1. Heat the oven to 425 degrees. Line a large baking sheet with foil and spray with non-stick spray, or simply spray a large baking sheet with non-stick spray for easy cleanup.
  • 2. Trim the wings by cutting off and discarding the tips. Cut the wings in half at the joint. Place all on baking sheet and season. (You can add any seasonings you'd like. I change it up every time.) Bake for 45 minutes.

3 tablespoon(s) salt, kosher variety
1 quart(s) water
6 - chicken wings, separated, with the tips frozen and reserved for making stock

- black pepper, freshly ground, to taste
THE SAUCE
1/4 cup(s) water
1/4 cup(s) fresh clover honey
2 tablespoon(s) tamari sauce, or liquid aminos

1 ounce(s) fresh ginger, peeled, and thinly sliced

Steps:

  • PREP/PREPARE
  • Gather your Ingredients (mise en place).
  • Add the salt to the water, and brine the chicken wings for 3 - 4 hours.
  • Remove from the brine rinse, and place on a wire rack, fitted into a baking sheet.
  • Place in the refrigerator overnight to air dry.
  • Place a rack in the middle position, and preheat the oven to 400f (205c).
  • Toss the air-dried wings in a bowl with the grapeseed oil, salt and pepper.
  • Place the wings on a parchment-lined baking sheet, fitted with a wire rack.
  • Place the wings in the preheated oven, and bake until beginning to brown, about 35 - 40 minutes.
  • While the wings are baking, add all the sauce ingredients to a small saucepan, over medium-low heat.
  • Cover and allow to simmer for 20 minutes.
  • Remove from heat, and strain, to separate the solids from the sauce.
  • Return the strained liquid to the pan, and place over medium heat.
  • Allow to simmer until it begins to thicken, about 5 - 8 minutes.
  • Chef's Note: The consistency of the sauce should be like maple syrup.
  • Remove the wings, and toss with the sauce.
  • Place the wings back on the baking sheet, and return to the oven for 5 - 7 minutes.
  • Chef's Note: Halfway through the baking process open the oven, and brush with the remaining sauce.
  • Bake until the wings are a golden brown.
  • PLATE/PRESENT
  • Serve while still nice and warm. Enjoy.

I had some chicken wings left over from a barbecue and fancied them done in crispy breadcrumbs. I didn't want to fry them, though, so thought I'd try a pure baked method. They came out really well and I'll definitely do them again. Use brown or wholemeal if you want extra texture and flavour. Serves 2 as a meal or 4 as a snack. Serve with potato wedges and salad if you wish.

3 garlic cloves, peeled and roughly chopped
1 1/2 teaspoons dried basil
1 teaspoon sweet paprika
1 1/2 teaspoons hot cayenne pepper
salt and pepper, to taste

Steps:

  • Pre-heat your oven to 200°C.
  • Prepare your baking tray with a sheet of lightly oiled foil to prevent sticking.
  • Cut the wings at the joint and trim the tips if you wish.
  • Put the bread, garlic, basil, paprika, cayenne and seasoning in a food processor and blitz to make breadcrumbs.
  • Dip the wings into the egg and then cover with the crumbs.
  • Place on your prepared tray and place in the oven.
  • Bake for 30-35 minutes, turning once. To check they are done, take the chunkiest wing and cut into it to the bone; make sure the juice is clear and there is no redness left.
