1 medium onion, chopped
3/4 cup butter
1/2 cup all-purpose flour
3 cans (10-1/2 ounces each) condensed chicken broth, undiluted, or 4 cups chicken broth
2 cups milk
2 cups half-and-half cream
1 teaspoon dried basil
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon garlic powder
5 cups chopped leftover cooked mixed vegetables (such as broccoli, carrots and cauliflower)

Steps:

  • In a Dutch oven, saute onion in butter until tender. Add flour; stir until blended. Gradually add broth. Bring to a boil. Cook and stir for 2 minutes or until thickened. , Stir in the milk, cream, basil, salt, pepper and garlic powder. Add the vegetables; cook gently until heated through.

2 cups chopped sweet onions
1-1/2 cups chopped carrots
1 cup chopped celery
2 tablespoons canola oil
4 cups cubed peeled potatoes
1 large head cauliflower, broken into florets
3 cans (14-1/2 ounces each) reduced-sodium chicken broth or vegetable broth
2 teaspoons salt
2 teaspoons white pepper
1/2 cup half-and-half cream
Fresh basil

Steps:

  • In Dutch oven, saute the onions, carrots and celery in oil until onions are tender. Add potatoes and cauliflower; saute 5-6 minutes longer. Add the broth, salt and pepper. Bring to a boil. Reduce heat; cover and simmer for 10-12 minutes or until vegetables are tender. Let stand until cool., Puree vegetable mixture in a blender or food processor in batches. Return all to the pan. Stir in cream; heat through. (Do not boil.) Garnish with fresh basil.

This recipe is a lot tastier than it sounds! You can't tell it contains tofu, and it can be made low-carb and/or vegan by your choice of ingredients (some good low-carb vegetables to try are mushrooms, cauliflower, and spinach). It's also infinitely variable by changing the spices and veggies. Delicious and high-protein, it's a light meal in itself.

1 (16 ounce) package silken tofu
2 -4 cups chicken broth or 2 -4 cups vegetable broth
2 cups chopped cooked vegetables, of your choice (broccoli, mushroom, squash, etc)
1/3 cup grated parmesan cheese or 1/3 cup nutritional yeast flakes
1/2 medium onion, chopped
3 stalks celery & leaves, chopped
2 tablespoons butter or 2 tablespoons olive oil
2 garlic cloves, minced
2 dried bay leaves
2 teaspoons curry powder
1 teaspoon ground coriander
1 teaspooon salt, plus additional to taste
1/4 teaspoon dried thyme, crushed
1/4 teaspoon dried tarragon (optional)

Steps:

  • Saute celery & onion in butter or oil over medium-low heat, until tender.
  • Meanwhile, discard liquid from tofu package and place tofu in blender along with cooked vegetables, 2 cups of broth, and cheese or yeast flakes.
  • Blend tofu mixture until smooth.
  • Add garlic to pan with celery and saute another 2 minutes. Remove from heat and let cool a minute or two.
  • Stir in tofu mixture and return pan to heat. Add all spices. Stir well, and add more broth if too thick for your liking.
  • Cover and simmer on low heat, stirring occasionally, 20-30 minutes. Taste and correct seasonings, adding more salt or broth if needed. Enjoy! (Even better the next day).

Basic Cream of Vegetable Soup image

3 tablespoons unsalted butter
1 cup chopped onion
1 potato, peeled and diced
2 cups water or chicken stock
1 1/2 cups steamed vegetables, i.e. carrots, broccoli, spinach, or peas
Salt and pepper
1/2 cup heavy cream
Serving suggestions: French bread and a salad

Steps:

  • In a large saucepan, melt butter over medium heat. Add the chopped onion and cook until tender without browning. Stir in diced potato and liquid. Bring to a boil and simmer until potato is tender. Stir in your steamed vegetable of choice and return to a simmer. Puree the soup in batches in a blender and return to saucepan. Leave 1 cup of vegetables not pureed if a chunkier soup is preferred. Season soup with salt and pepper and finish with heavy cream. Serve warm with French bread and a salad.

3 vegetarian bouillon cubes
5 cups Soy Milk
5 Tbs Cornstarch dissolved in 4 Tbs cold water & 4 Tbs Soy Sauce
Vegetable Bowl 1:
1 block tofu, cut in cubes (silken firm is best)
8oz. mushrooms - any type is fine
1 can baby corn
Vegetable Bowl 2:
6 cups chopped bok choy
1 zucchini, sliced
2 cups snow peas
2 tomatoes, cut in large chunks
1 - 2 Tbs. Sesame Oil

Steps:

  • 1. Heat the soy milk and bouillon cubes over medium heat until just simmering. 2. Whisk in cornstarch mixture 3. Allow to simmer for 3 minutes. Reduce heat to low. 4. Add Vegetables from bowl 1 5. Heat for 3 minutes. 6. Add Vegetables from bowl 2. 7. Stir through and drizzle with 1-2 Tbs. Sesame Oil (to taste). 8. Serve Immediately

Creamy soup that's still vegan! It can be a cream of broccoli, cream of asparagus, or peas depending on the vegetable you choose. Will try this later this week, but it sounds terrific and I'm sure I'll love it. One of my favorite meals is soup with bread and our yummy hummus. 1 1/2 cups fresh broccoli (Choose ONE) or 1 1/2 cups fresh asparagus (Choose ONE)
2/3 cup fresh broccoli (same vegetable as selected above) or 2/3 cup fresh asparagus (same vegetable as selected above)
1 tablespoon olive oil
1/2 cup onion, diced
1/4 cup celery, diced
1/8 cup carrot, shredded
4 cups water
2/3 cup raw cashews
2 tablespoons vegan chicken seasoning (I use McKay's vegan chicken seasoning) or 2 tablespoons vegetable stock powder
1 teaspoon salt
1/2 teaspoon onion powder
1/4 teaspoon celery salt

Steps:

  • Steam 1 1/2 cups vegetables in a small amount of water until cooked.
  • Place steamed vegetables in blender and blend until smooth. Place blended vegetables in a small bowl.
  • Pour olive oil in the bottom of a 2-quart saucepan and saute onion, celery, and carrot.
  • Add 3 cups of water to saucepan and bring to a slow boil. Add blended vegetables and 2/3 cup of chopped fresh vegetables. Simmer for 5 minutes.
  • Place cashews, 1 cup of water and seasonings in blender and blend until smooth and creamy.
  • Slowly add to soup and bring to a boil. Serve.
