This Creamy Tater Soup with Turkey is just the thing for a Thanksgiving left over lunch. Served with a hot ham and cheese sandwich.

4 c chicken stock de fated
1 can(s) onion chopped
3 can(s) celery chopped with tops
2 small potatoes peeled & cubed
2 small sweet potatoes peeled & cubed
1/2 tsp salt
1/8 tsp cayenne pepper
1 c milk
1 c cooked turkey cut into medium pieces

Steps:

  • 1. Ina large saucepan combine chicken stock and all the vegetables. Don't add milk or turkey yet.
  • 2. Cook until vegetables are very tender . About 10 t0 20 minutes.
  • 3. Cool slightly. Transfer to blender and blend until smooth. Stir in milk and add turkey.
  • 4. At this point soup may be stored in refrigerator for up to a week.
  • 5. Heat before serving. Garnish with mint or parsley.

1/3 cup butter, cubed
1 medium carrot, shredded
1 celery rib, finely chopped
1/3 cup all-purpose flour
1 carton (32 ounces) chicken broth
1/2 cup half-and-half cream
1/2 cup 2% milk
1 cup uncooked kluski or other egg noodles
2 cups cubed cooked turkey
1-1/2 cups shredded cheddar cheese
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a large saucepan, heat butter over medium-high heat; saute carrot and celery until tender, 3-5 minutes. Stir in flour until blended; gradually add broth, cream and milk. Bring to a boil, stirring constantly; cook and stir until thickened, 1-2 minutes., Stir in noodles. Reduce heat; simmer, uncovered, until noodles are al dente, 7-10 minutes, stirring occasionally. Add remaining ingredients; cook and stir until turkey is heated through and cheese is melted.

1 turkey carcass
1 cup butter, cubed
1 large onion, chopped
2 large carrots, diced
2 stalks celery, diced
1 cup all-purpose flour
2 cups half-and-half
4 ounces fettuccine, broken into 2-inch pieces
¼ cup prepared stuffing, or more to taste
2 teaspoons salt
1 teaspoon chicken bouillon granules
¾ teaspoon ground black pepper
1 pinch poultry seasoning, or to taste

Steps:

  • Place turkey carcass in a large pot or Dutch oven and cover with water. Bring to a boil. Reduce heat to medium, cover, and simmer for 1 hour. Remove carcass and allow to cool. Separate turkey meat from the bones. Cut meat into bite-size pieces; discard bones. Reserve about 12 cups turkey broth in a large bowl. Save remaining broth for another use.
  • Melt butter in another large pot or Dutch oven over medium heat; cook and stir onion, carrots, and celery in melted butter until tender, about 5 minutes. Stir flour into vegetable mixture; cook and stir until smooth, about 5 minutes. Gradually stir in about 1/3 the reserved turkey broth. Bring to a boil; cook and stir until thickened, about 2 minutes.
  • Stir remaining turkey broth, turkey meat, half-and-half, fettuccine, stuffing, salt, chicken bouillon, pepper, and poultry seasoning into half-and-half mixture. Reduce heat to medium-low, cover, and simmer until noodles are tender, about 10 minutes more.

3 celery ribs with leaves, cut into 1/4-inch pieces
6 tablespoons butter
6 tablespoons all-purpose flour

1/4 teaspoon garlic powder
1/2 teaspoon each dried thyme, savory and parsley flakes
1-1/2 cups milk
4 cups cubed cooked turkey
5 medium carrots, cut into 1/4-inch pieces
1 to 2 cups turkey or chicken broth
1 package (10 ounces) frozen peas

Steps:

  • In a large kettle, saute onion and celery in butter until tender, about 10 minutes. Stir in flour and seasonings; gradually add milk. 1 cup chopped green onion
2 cups frozen sliced carrots, thawed and drained
1/4 cup flour
5 cups turkey broth, divided (or chicken bouillon)

1 teaspoon dried parsley

2 cups chopped cooked turkey

1 1/2 cups frozen peas and carrots, thawed
1/2 cup milk

Steps:

  • Layer onion, mushrooms and turkey in a crock pot.
