Fried Minced Ham, Mark's image

Mark's Polish family recipes were translated so I could share them. This was one he must have had at home with his mom in PA.

Number Of Ingredients 6

1 lb thick sliced bologna, cut 1/4" thick
1 medium white onion, sliced into rings
1 medium red pepper, sliced 1/8" thick
1 Tbsp crushed black pepper
1/4 tsp salt
1/2 stick butter, or equivalent bacon grease

Steps:

  • 1. Take a large frying pan and bring to medium heat Heat the butter (or better yet, bacon grease) and sautee the onion and peppers Remove and put aside when finished (about 12-15 minutes), leaving the drippings in the pan. Put the bologna slices into the pan and fry in the drippings until the centers brown and the edges of the slices curl. Sprinkle with salt and pepper. Add the pepper and onion mix, stir and serve.
  • 2. Notes: Green peppers can be substituted - the reds give a slightly sweeter flavor overall. Why is bologna referred to as "minced ham" here? It appears to be a regionalism from Pennsylvania, and occurs even in supermarket labelling.
