CREAMY SCRAMBLED EGGS W/BACON & IRISH CHEESE
Steps:
- After the bacon has drained crumble the strips into little pieces.
- Whisk the eggs together with the crumbled bacon/rashers, cream, salt and pepper, cheese and 1/2 the chives.
- Heat up a non-stick pan on medium heat. Add the butter and melt.
- Gently scramble the egg mixture. Plate and garnish with the remaining fresh chives.
SUNNY'S PERFECT SCRAMBLED CHEESY EGGS

- In a large nonstick pan with sloped sides (even a wok shape works), melt the butter over medium-low heat, being careful to not brown the butter. If it begins to bubble, the heat is too high, so lower the heat to cook the eggs properly. (Slow and low like BBQ is the way to go with eggs.)
- Meanwhile, in a large bowl, add the eggs and 1 teaspoon cold water. Vigorously whisk until frothy and smooth. Swirl the pan around to coat the butter on the bottom and up the sides. Pour the eggs into the pan and let sit for a few seconds. When the eggs begin to lightly set on the bottom, use the whisk to gently beat the eggs, then allow them to sit for just a few seconds between beating them again. Curds will begin to form and increase throughout the cooking time. Repeat this process of whisking then resting the eggs for a few seconds until about 50 percent of the eggs are set and the rest are still wet. At this point, sprinkle the eggs with a pinch of salt and pepper and continue to whisk and rest alternately. Once the eggs are 75 percent done, add the cheese and from this moment, continue to whisk the eggs until done. This entire process from pouring in the eggs to them being finished should take 8 to 12 minutes; this isn't a race, only a journey to the best scrambled eggs ever. Remove from the heat and continue to scramble in the last seconds. Serve warm.

- Cook bacon pieces in skillet until crisp.
- Remove from pan and drain on paper towels.
- Remove bacon grease from skillet, wash and dry pan and return to heat.
- Scramble eggs and add half and half and mix well.
- Add butter to heated pan and add egg mixture.
- Let the eggs set a bit and then sprinkle bacon over.
- Stir eggs until soft set or until they are done to your liking.
- Note: I sometimes also add small diced cubes of cheese when I add the eggs to the pan. Then proceed with recipe.

BACON & CREAM CHEESE SCRAMBLED EGGS
I had these a looong time ago at a restaurant in Eugene, Oregon and loved them. The cream cheese makes them rich and delicious. You can easily alter the amounts to suit the number of people you are trying to feed. This recipe quantity made 2 large portions (could have easily been 3 appropriately sized servings).

Steps:
- Dice raw bacon. Place in large skillet over medium heat and brown.
- Remove bacon from skillet to a paper napkin to drain. Reduce heat to low-medium. Remove all but about 1 Tbsp of the bacon grease.
- In large bowl, crack eggs. Add heavy cream and combine with whisk.
- Add eggs to skillet. Season with thyme, salt and pepper. Cook slowly, stirring occasionally. When eggs are about 1/2 cooked, add bacon back into skillet and combine to distribute throughout.
- When eggs are mostly done, add the cubed cream cheese, tossing to combine just until cream cheese is mostly melted.
