Steps:
- Heat a medium nonstick pan with butter over medium low heat.
- Whisk eggs with cream and salt and pepper. Scramble eggs soft only, stir in cheese and chives and continue to cook a minute more then serve.
CREAMY SCRAMBLED EGGS W/BACON & IRISH CHEESE
Steps:
- After the bacon has drained crumble the strips into little pieces.
- Whisk the eggs together with the crumbled bacon/rashers, cream, salt and pepper, cheese and 1/2 the chives.
- Heat up a non-stick pan on medium heat. Add the butter and melt.
- Gently scramble the egg mixture. Plate and garnish with the remaining fresh chives.
BACON & CREAM CHEESE SCRAMBLED EGGS
I had these a looong time ago at a restaurant in Eugene, Oregon and loved them. The cream cheese makes them rich and delicious. You can easily alter the amounts to suit the number of people you are trying to feed. This recipe quantity made 2 large portions (could have easily been 3 appropriately sized servings).

- Dice raw bacon. Place in large skillet over medium heat and brown.
- Remove bacon from skillet to a paper napkin to drain. Reduce heat to low-medium. Remove all but about 1 Tbsp of the bacon grease.
- In large bowl, crack eggs. Add heavy cream and combine with whisk.
- Add eggs to skillet. Season with thyme, salt and pepper. Cook slowly, stirring occasionally. When eggs are about 1/2 cooked, add bacon back into skillet and combine to distribute throughout.
- When eggs are mostly done, add the cubed cream cheese, tossing to combine just until cream cheese is mostly melted.

- Whisk eggs, salt and pepper in large bowl to blend. Melt butter in large nonstick skillet over medium-high heat. Add eggs. Using wooden spoon, stir until eggs are almost set, about 5 minutes. Gently fold in cheese and salmon and stir just until eggs are set, about 1 minute.
- Transfer eggs to platter. Sprinkle with chives, if desired, and serve.

EXTRA-CREAMY SCRAMBLED EGGS
Adding a small amount of a starchy slurry to scrambled eggs - a technique learned from Mandy Lee of the food blog Lady & Pups - prevents them from setting up too firmly, resulting in eggs that stay tender and moist, whether you like them soft-, medium- or hard-scrambled. Potato or tapioca starch is active at slightly lower temperatures than cornstarch and will produce a slightly more tender scramble, but cornstarch works just fine if it's what you've got on hand. Make sure your skillet is at just the right temperature by heating a tablespoon of water in the skillet and waiting for it to evaporate. For creamier eggs, you can replace the water with milk or half-and-half.

- In a medium bowl, whisk together starch with 1 1/2 tablespoons water until no lumps remain. Add half the butter cubes to starch mixture. Add eggs and salt, and whisk, breaking up any cubes of butter that have stuck together, until the eggs are frothy and homogenous. (There will still be solid chunks of butter in the eggs.)
- Set your serving plate near the stovetop. Heat 1 tablespoon water in a 10-inch nonstick skillet over medium-high, swirling gently until the water evaporates, leaving behind only a few small droplets. Immediately add the remaining 2 tablespoons butter and swirl vigorously until the butter is mostly melted and foamy but not brown, about 10 seconds.
- Immediately add the egg mixture and cook, pushing and folding the eggs with a spatula, until they are slightly less cooked than you'd like them, about 1 to 2 minutes, depending on doneness. More vigorous stirring will result in finer, softer curds, while more leisurely stirring will result in larger, fluffier curds. Immediately transfer to the serving plate, and serve.

- Heat oven to 400ºF.
- Place wire cooling rack in foil-lined shallow pan; spray with cooking spray. Mix first 2 ingredients in shallow dish. Add bacon, 1 slice at a time, turning to evenly coat both sides of each slice. Place on wire rack. Bake 20 min. or until crisp and golden brown.
- Meanwhile, beat cream cheese spread and eggs with whisk until blended. After bacon has baked 15 min., add egg mixture to medium skillet sprayed with cooking spray; cook on medium heat 4 to 5 min. or until set, stirring occasionally.
- Serve eggs with bacon.

- Cook bacon pieces in skillet until crisp.
- Remove from pan and drain on paper towels.
- Remove bacon grease from skillet, wash and dry pan and return to heat.
- Scramble eggs and add half and half and mix well.
- Add butter to heated pan and add egg mixture.
- Let the eggs set a bit and then sprinkle bacon over.
- Stir eggs until soft set or until they are done to your liking.
- Note: I sometimes also add small diced cubes of cheese when I add the eggs to the pan. Then proceed with recipe.
