CHEESY RANCH BROCCOLI BAKE
Fresh broccoli meets a cheesy ranch sauce in this colorful side dish that'll have everyone going for seconds.

Steps:
- Heat oven to 350°F. Spray 12x8-inch (2-quart) baking dish with cooking spray.
- In large (at least 4-quart) microwavable glass bowl, mix broccoli, bell pepper and water; cover with plastic wrap. Microwave on High 4 to 5 minutes, stirring after 2 minutes, until broccoli is bright in color and hot; drain. Return broccoli and bell pepper to bowl.
- Place cream cheese spread and milk in medium microwavable glass bowl. Microwave uncovered on High 1 minute; use whisk to blend (mixture will have a few small lumps).
- Stir dressing mix into cream cheese mixture; mix well. Add cheese; stir to combine. Pour cheese mixture over broccoli and bell pepper; toss to coat. Spread in baking dish.
- In small bowl, toss crackers with melted butter. Sprinkle over broccoli.
- Bake 25 to 30 minutes or until hot and bubbly.

- Preheat oven to 350°F.
- Place cream cheese, milk and Ranch dressing mix in a food processor or blender and process until smooth.
- Place broccoli in a 9 inch baking dish, add cream cheese mixture and stir.
- Top with Cheddar cheese and bake 25 minutes or until cheese has melted.

- Heat bacon in a large Dutch oven over medium heat. Cook, flipping occasionally until browned and crisp, about 10 minutes. Drain on paper towels.
- Sprinkle chicken evenly with salt and pepper; cook in hot bacon drippings over medium-high heat, stirring often, until chicken is golden brown on all sides, about 4 minutes. Transfer chicken to a plate and set aside. Chicken will not be fully cooked at this point.
- Add shallot and garlic to drippings and cook, stirring often, until fragrant, 2 minutes. Stir in water and milk; use a wooden spoon to scrape any browned bits from bottom of the Dutch oven. Stir in pasta and ranch dressing mix. Bring to a boil and simmer for 6 minutes.
- Return chicken to the Dutch oven and add broccoli. Cook until pasta is tender and chicken is cooked through, 3 to 4 minutes. Stir in Cheddar cheese and sour cream to combine. Crumble cooked bacon over the top and serve hot.

This broccoli and cheese recipe came from my mother. When I was young I would eat it as a side dish, now I like to top my baked potatoes with them.

- Melt butter in saucepan.
- Add 1/2 of Milk.
- Add Velveeta.
- Stir frequently until thouroughly melted.
- Add more milk if you would like a creamier sauce. To equal out flavor you may need additional butter or cheese, judge to taste.
- Add steamed broccoli and stir lightly together.
- Serve alone or over potatoes.
